Tips for success
To achieve the best cheese pull, serve the corn dogs immediately after they have drained for a minute. The cheese is most elastic when it is hot; as it cools, it will firm up and lose its signature stretch.
If you are making a large batch, keep the finished corn dogs in a low-temperature oven to maintain their heat.
Experiment with different sauces to customize your corn dogs. While ketchup and spicy mayo are traditional, a light dusting of mustard or even a sprinkle of dried parsley can add extra visual appeal and flavor.
The key is to keep the sauce applications thin to avoid making the crispy exterior soggy before the first bite.
Variations
- Sweet Potato Coating: Substitute the regular potato cubes with small, parboiled sweet potato cubes for a hint of natural sweetness that pairs beautifully with the savory mozzarella and spicy mayo drizzle.
- Spicy Kick: Add a teaspoon of chili powder or cayenne pepper directly into the batter mix before dipping to give the entire corn dog a spicy, flavorful punch in every bite.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 2 days. Note that the crispy exterior will soften significantly in the refrigerator.
- Freezer
- Freeze assembled, un-fried skewers on a tray before transferring to a freezer bag for up to 2 weeks. Fry directly from frozen, adding extra cooking time.
- Reheat
- Reheat in an air fryer or oven at 375°F (190°C) for 5-8 minutes until hot and crispy. Avoid the microwave, which will make the coating soggy.
If you have leftovers, allow them to cool completely at room temperature for no more than two hours. Once cool, place them in an airtight container to prevent them from absorbing moisture from the air, which will ruin the crispiness of the potato and panko coating.
You can prepare the skewers and the batter up to a day in advance. Keep the skewers in the freezer and the batter in the refrigerator.
However, for the best texture, coat the corn dogs in the potatoes and panko just before you are ready to fry them, as the moisture from the batter will soften the coating if left to sit.
Serving ideas
Serve these corn dogs as a fun appetizer or a standalone snack. They are best enjoyed hot, straight out of the fryer, which makes them a great option for casual gatherings or parties where you can fry small batches to order. Provide plenty of napkins, as they are meant to be eaten with your hands.
Arrange the corn dogs on a wooden board or a serving platter with small bowls of extra sauce on the side.
Because of their size and the crispy coating, they pair well with a simple side dish like a light cucumber salad or pickled vegetables to cut through the richness of the fried cheese and batter.

Crispy Potato Korean Corn Dogs with Stretchy Mozzarella

Ingredients
- 4 blocks low-moisture mozzarella cheese, cut into thick sticks
- 4 beef frankfurters
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp yeast
- 1 egg
- 1/2 cup warm water
- 1 cup tiny parboiled potato cubes
- 1 cup panko breadcrumbs
- 4 cups vegetable oil, for deep-frying
- Granulated sugar for serving
- Ketchup and spicy mayo for serving
Instructions
- Thread the blocks of mozzarella cheese and beef frankfurters onto wooden skewers. Ensure they are secured firmly on the sticks, then place them in the freezer to chill until they are cold and firm to the touch.
- In a tall glass, combine the flour, sugar, yeast, egg, and warm water. Whisk the ingredients together thoroughly until the mixture forms a thick, stretchy, and smooth batter consistency.
- Dip each prepared skewer into the batter, ensuring the cheese and frankfurter are coated completely. Immediately roll the sticky battered skewers in the tray of tiny parboiled potato cubes, then dredge in panko breadcrumbs until every gap is fully covered.
- Heat the oil in a deep pot to 350°F (180°C). Carefully lower the skewers into the hot oil. Deep-fry for five minutes until the potato cubes turn golden-brown, blistered, and shatteringly crispy. Ensure the internal temperature of the frankfurter reaches 145°F (63°C), and let rest for 3 minutes.
- Remove the fried corn dogs from the oil and let them drain briefly on a wire rack or paper towel. While still hot, roll each corn dog in granulated sugar, then drizzle with ketchup and spicy mayo before serving.
