Before you start

Before starting, ensure the fillo dough is fully thawed and at room temperature. Set out all ingredients: finely chop the pistachios and walnuts, grate the white chocolate, and melt the butter.

Have your ceramic baking dish and pastry brush ready. Preheat the oven to 350°F (175°C) when you are ready to bake.

Ingredients at a glance (7)
  • 1 1/2 cups shelled pistachios, finely chopped
  • 1/2 cup walnuts, finely chopped
  • 1 tsp ground cinnamon
  • 12 sheets fillo dough, thawed
  • 1/2 cup unsalted butter, melted
  • 3/4 cup honey
  • 4 oz spiced honey white chocolate, grated

Instructions

Prep the Filling and Pastry

  1. Prepare the Nut Filling
Finely chop the pistachios and walnuts until they are uniform in size, about the texture of coarse sand. In a small bowl, combine the chopped nuts with the ground cinnamon and stir to distribute the spice evenly. Set the nut mixture aside.
Look for The nuts are finely chopped and evenly coated with cinnamon.
Tip Chop the nuts by hand for a more varied texture, or pulse briefly in a food processor for a finer crumb.
  2. Grate the White Chocolate
Using a box grater, grate the spiced honey white chocolate into a separate bowl. The grated chocolate should be light and fluffy, similar to shredded cheese. Keep it separate from the nut mixture until ready to assemble.
Look for The white chocolate is finely grated and resembles coarse crumbs.
Tip Chill the chocolate for 10 minutes before grating to prevent it from melting and sticking to the grater.
  3. Trim the Fillo Sheets
Unroll the fillo dough and lay it flat on a clean surface. Using a sharp knife or kitchen scissors, trim the stack of fillo sheets to fit the length of your baking dish. Each sheet should be about 9 inches long and 13 inches wide, or adjust to your dish.
Look for The fillo sheets are trimmed to the size of your baking dish.
Tip Keep the fillo covered with a damp towel while working to prevent it from drying out and cracking.

At the end of this phase, the nuts are finely chopped and mixed with cinnamon, the white chocolate is grated into fluffy shreds, and the fillo sheets are trimmed to fit your dish. Everything is ready to assemble, and the oven can be preheated.

Fold and Assemble

  1. Accordion-Fold the Fillo
Take one sheet of fillo and brush it lightly with melted butter. Fold the sheet accordion-style, making pleats about 1 inch wide. Continue folding the entire sheet. Repeat with the remaining sheets, brushing each with butter before folding.
Look for The fillo is folded into neat, even accordion pleats.
Tip Work quickly but gently; fillo is delicate. If a sheet tears, it can still be used.
  2. Pack Rolls in Baking Dish
Place the accordion-folded fillo rolls upright in the ceramic baking dish, packing them tightly side by side. Between the folds, sprinkle the chopped cinnamon pistachios, pressing them gently into the pleats. The nut mixture should be nestled within the folds.
Look for The rolls are tightly packed with nuts nestled in the pleats.
Tip Packing the rolls snugly helps them hold their shape and creates a beautiful crinkle pattern.
  3. Top with Grated Chocolate
Sprinkle the grated spiced honey white chocolate over the top of the packed rolls, ensuring it falls into the crevices. The chocolate will melt and infuse the pastry as it bakes.
Look for The grated chocolate is evenly distributed over the rolls.
Tip Don't overdo the chocolate; it should complement, not overpower, the nuts.

The fillo sheets are folded into neat accordion pleats, brushed with butter, and packed tightly into the baking dish.

The nut mixture is pressed between the folds, and the grated chocolate is sprinkled over the top. The dish looks full and inviting, with the nuts and chocolate nestled into every crevice.

Bake and Glaze

  1. Bake Until Golden
Preheat the oven to 350°F (175°C). Bake the baklava rolls for 25 to 30 minutes, or until the fillo is deeply golden and crisp. The honey and chocolate will bubble and caramelize around the edges.
Look for The rolls are golden brown and the filling is bubbling.
Tip Rotate the dish halfway through baking for even browning.
  2. Finish with Warm Honey
While the rolls bake, warm the honey in a small saucepan over low heat until it is thin and pourable. As soon as the rolls come out of the oven, drizzle the warm honey evenly over the top. The honey will soak into the crisp layers and create a glossy finish.
Look for The honey is warm and pourable, and the rolls are coated in a glossy glaze.
Tip Warm the honey gently; overheating can make it too thin and lose its flavor.

The rolls are baked until golden and crisp, with the honey and chocolate bubbling around the edges. After drizzling with warm honey, the rolls are glossy and fragrant. They should be served warm, when the pastry is at its most flaky and the honey is still slightly runny.

Common mistakes

One common mistake is over-buttering the fillo, which can make it greasy instead of crisp. Use a light hand and brush each sheet just enough to coat it. Another pitfall is under-baking—the rolls may look golden but still be soft inside.

Bake until they are deeply colored and feel firm. Finally, don't skip the honey drizzle; it adds essential moisture and sweetness that balances the nuts.

How to tell it’s done

The baklava rolls are done when the fillo is deeply golden brown and crisp to the touch. The honey and chocolate will be bubbling around the edges, and the nuts will smell toasted.

If you tap the top of a roll, it should sound hollow and feel dry, not soft. The internal temperature of the pastry should be hot throughout; if you have a thermometer, it should read at least 165°F (74°C) in the center of a roll.
