Tips for success
For the absolute crispiest skin, dry the drumsticks and leave them uncovered on a wire rack in the refrigerator for a few hours before cooking.
This air-drying process dehydrates the surface of the skin, allowing it to crisp up much faster once it hits the hot oven. If you are short on time, even a quick pat-down with paper towels makes a substantial difference.
Do not be afraid to let the drumsticks cook slightly past the safe minimum temperature.
Unlike chicken breasts, dark meat drumsticks contain a high amount of connective tissue that breaks down and becomes incredibly tender and juicy when cooked to around 175°F to 185°F (79°C to 85°C). This extra cooking time yields a melt-in-your-mouth texture.
Variations
- Spicy Lemon Herb: Add a teaspoon of red pepper flakes and the zest of one lemon to the paprika oil rub for a spicy, citrusy kick.
- Sweet and Smoky: Mix a tablespoon of brown sugar or honey into the seasoned oil to create a sweet, caramelized glaze on the roasted skin.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze in a single layer on a tray, then transfer to a freezer-safe bag for up to 3 months.
- Reheat
- Reheat in a preheated oven at 375°F (190°C) for 10 to 12 minutes until the skin crisps up again and the meat is hot.
Allow any leftover chicken drumsticks to cool completely at room temperature for no more than 2 hours. Once cooled, transfer the drumsticks to an airtight container. Store them in the refrigerator for up to 3 to 4 days, or freeze them for longer storage.
You can toss the drumsticks in the seasoned paprika oil up to 24 hours in advance. Keep the seasoned chicken covered in the refrigerator until you are ready to roast.
When ready to cook, arrange them on the roasting tray and bake as directed, adding a couple of minutes to the roasting time if the chicken is cold from the fridge.
Serving ideas
Serve these crispy roasted chicken drumsticks hot, directly from the roasting tray or arranged beautifully on a warm serving platter.
The fresh thyme sprigs add a lovely pop of color and a rustic, herbal aroma that pairs wonderfully with the smoky paprika. They make a fantastic centerpiece for a casual family dinner.
These drumsticks pair beautifully with classic side dishes such as roasted potatoes, grilled vegetables, a crisp green salad, or creamy mashed potatoes. For a fun, hands-on meal, serve them alongside your favorite dipping sauces, like a tangy barbecue sauce, a creamy garlic aioli, or a spicy herb chimichurri.

Crispy Oven-Roasted Chicken Drumsticks

Ingredients
- 8 chicken drumsticks
- 2 tbsp olive oil
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 4 sprigs fresh thyme
Instructions
- In a large mixing bowl, combine the olive oil, smoked paprika, garlic powder, kosher salt, and black pepper. Stir the mixture until a smooth, seasoned oil forms. Add the dried chicken drumsticks to the bowl and toss thoroughly using tongs, ensuring each piece is completely coated in the red paprika oil.
- Transfer the seasoned chicken drumsticks to a metal roasting tray. Arrange them in a single layer, ensuring there is empty space between each drumstick so the hot air can circulate freely during baking. Do not crowd the tray, as this will cause the chicken to steam instead of roast.
- Place the roasting tray in the preheated oven and roast for 35 to 40 minutes. The chicken skin should blister and turn golden-brown. Check the internal temperature of the thickest part of the drumstick using a meat thermometer; it must reach a safe internal temperature of 165°F (74°C) before removing from the oven.
- Remove the roasting tray from the oven and let the chicken drumsticks rest on the hot tray for 5 minutes. This resting period allows the juices to redistribute throughout the meat, keeping it tender. Garnish the tray with fresh thyme sprigs, scattering them over the glossy drumsticks before serving.
