Before you start

Before you begin cooking, organize your workspace to ensure a smooth, mess-free process. Start by preheating your oven to 400°F (200°C) so it is ready when the chicken is stuffed. Take the cream cheese out of the refrigerator ahead of time to allow it to soften.

Set up a breading station with your seasoned breadcrumbs in a shallow bowl or dish, ready for coating. Pat the chicken breasts dry with paper towels to ensure the filling stays secure.

Ingredients at a glance (4)
  • 4 boneless, skinless chicken breasts
  • 4 oz herb cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 cup seasoned herb breadcrumbs

Instructions

Prepping and Stuffing

  1. Slice Pockets in Chicken
Preheat the oven to 400°F (200°C). Place the boneless, skinless chicken breasts on a clean cutting board. Use a sharp chef knife to cut a horizontal pocket into the thickest part of each breast, being careful not to cut all the way through to the other side.
Look for A deep pocket is formed without piercing the back or sides.
Tip Keep one hand flat on top of the chicken breast to guide your knife safely.
  2. Stuff the Chicken
Fill each chicken pocket evenly with the softened herb cream cheese. Add the shredded mozzarella cheese inside the pocket, pressing it gently to pack the filling. Press the edges of the chicken breast together to seal the pocket as much as possible.
Look for The pockets are filled and pressed shut.
Tip Do not overfill the pockets, or the cheese will leak out excessively during baking.

At the end of this phase, each chicken breast should have a secure pocket filled with the cream cheese and mozzarella mixture. The edges of the pocket should be pressed firmly together to enclose the cheese completely.

The chicken should look plump, and there should be no visible tears in the meat where the filling could easily leak out during the baking process.

Breading the Chicken

  1. Coat with Breadcrumbs
Place the seasoned herb breadcrumbs in a shallow dish. Press each stuffed chicken breast firmly into the breadcrumbs, coating all sides to create a thick, even crust.
Look for The chicken is evenly coated in a dense layer of crumbs.
Tip Press firmly so the breadcrumbs stick well and form a crispy exterior.

By the end of this phase, the stuffed chicken breasts should be fully coated in a thick, even layer of seasoned breadcrumbs. The breadcrumbs should adhere firmly to the surface, covering the top, bottom, and sides, including the stuffed opening. There should be no bare patches of chicken visible, ensuring an even, crispy crust once baked.

Baking to Golden Perfection

  1. Bake the Chicken
Place the coated chicken breasts in a dark baking pan. Bake in the preheated oven for 25 to 30 minutes. The juices should run clear and the crust should be golden brown and crispy. Ensure the internal temperature of the poultry reaches 165°F (74°C) on an instant-read thermometer inserted into the thickest part of the meat.
Look for The crust is golden and crispy with bubbling juices around the chicken.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Insert the thermometer into the chicken meat, not the cheese filling, for an accurate temperature reading.

At the final checkpoint, the chicken breasts should be deeply golden brown and crispy on the outside. You will hear a light sizzling sound, and some cheese may have bubbled slightly near the opening. The juices in the pan should run clear, and the internal temperature must register 165°F (74°C) when checked with an instant-read thermometer.

Common mistakes

One of the most common mistakes when making stuffed chicken is cutting the pocket too deep or all the way through, which allows the cheese to escape completely during baking.

Another error is overstuffing the chicken; while it is tempting to add as much cheese as possible, a moderate amount ensures a perfect seal. Finally, skipping the step of drying the chicken before breading can result in a soggy, loose crust that slides off the meat rather than turning crispy.

How to tell it’s done

Determining the perfect doneness of stuffed chicken breasts requires a meat thermometer. Because the chicken is stuffed, visual cues alone can be misleading. Insert an instant-read thermometer into the thickest part of the chicken meat itself, being careful not to place it directly into the hot cheese filling.

The chicken is fully cooked and safe to eat when the thermometer registers an internal temperature of 165°F (74°C). At this point, the juices will run clear and the meat will feel firm to the touch.

  • Poultry: 165°F (74°C) in the thickest part
