Tips for success
For extra heat, add more cayenne to the glaze or brush on an additional layer after coating. If you prefer a milder version, reduce the cayenne in the glaze and use a milder paprika. You can also serve extra sauce on the side for those who want to dial it up.
To keep the crust extra crispy, let the fried chicken rest on a wire rack for a minute before glazing. This allows excess oil to drip off.
When toasting the buns, use a little butter or oil for a golden, crispy edge. And don't skip the coleslaw—it's the cool, creamy counterpoint that makes the sandwich truly balanced.
Variations
- Milder Heat: Reduce the cayenne in the glaze to 1 teaspoon and use sweet paprika instead of hot. You can also serve the sauce on the side so everyone can control the spice level.
- Grilled Version: Instead of frying, grill the brined chicken over medium-high heat for 6-8 minutes per side, basting with the spicy glaze during the last few minutes. This is a lighter option that still delivers great flavor.
- Extra Crunchy: Add 1/2 cup of crushed potato chips or panko breadcrumbs to the flour dredge for an even crunchier crust. This adds a fun texture and a hint of saltiness.
- BBQ Twist: Mix 2 tablespoons of your favorite barbecue sauce into the spicy glaze for a smoky-sweet flavor. This works especially well with the brown sugar and paprika.
Storage and make-ahead
- Fridge
- Store leftover chicken, sauce, and slaw separately in airtight containers in the fridge for up to 3 days. Reheat the chicken in the oven to restore crispiness.
- Freezer
- Fried chicken can be frozen for up to 2 months. Cool completely, then wrap individually in plastic and foil. Reheat in a 375°F oven until hot and crispy.
- Reheat
- Reheat leftover chicken in a 350°F oven for about 10 minutes, or until hot and crispy. Avoid microwaving, as it will make the crust soggy.
Leftover fried chicken can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place on a wire rack in a 350°F oven for about 10 minutes, or until heated through and crispy.
The glaze may cause the crust to soften slightly, but it will still be delicious. Store any leftover comeback sauce and coleslaw separately.
The buttermilk brine can be prepared a day in advance and kept refrigerated. The comeback sauce and coleslaw can also be made ahead and stored in the fridge.
You can even bread the chicken a few hours before frying and keep it on a baking sheet in the refrigerator. This makes the final cooking and assembly quick and easy.
Serving ideas
Serve the Nashville hot chicken sandwiches immediately after assembling, while the chicken is still hot and crispy.
The combination of warm, spicy chicken with cool, creamy coleslaw and tangy pickles is best enjoyed fresh. Pair with extra pickles on the side and a cold beverage to cool the heat.
These sandwiches are perfect for a casual dinner, game-day gathering, or any time you're craving something bold and satisfying. You can also serve the hot chicken on its own with white bread and pickles, Nashville-style. Adjust the spice level to your preference and enjoy the crunch.

Crispy Nashville Hot Chicken Sandwich with Comeback Sauce

Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups buttermilk
- 1/2 cup pickle juice
- 1 tbsp cayenne pepper
- 2 cups all-purpose flour
- 1/2 cup cornstarch
- 2 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp kosher salt
- 1 tbsp black pepper
- 4 cups vegetable oil, for frying
- 2 tbsp cayenne pepper
- 2 tbsp brown sugar
- 1 tbsp paprika
- 1 tsp garlic powder
- 4 brioche buns, split and toasted
- 1/2 cup comeback sauce
- 1 cup dill pickle chips
- 2 cups creamy coleslaw
Instructions
- Place the chicken breasts between two sheets of plastic wrap and pound to an even 1/2-inch thickness. In a large bowl, whisk together the buttermilk, pickle juice, and cayenne pepper. Add the chicken, turning to coat, then cover and refrigerate for at least 30 minutes or up to 4 hours.
- In a shallow dish, whisk together the flour, cornstarch, paprika, garlic powder, salt, and black pepper. Set aside.
- Remove the chicken from the brine, letting any excess drip off. Dredge each piece thoroughly in the flour mixture, pressing firmly to adhere. For an extra-thick crust, dip back into the buttermilk mixture and dredge again.
- In a large skillet or Dutch oven, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to monitor the temperature.
- Carefully place the chicken in the hot oil, working in batches to avoid overcrowding. Fry for about 6 minutes, flipping halfway, until deep golden brown and cooked through. The internal temperature should reach 165°F (74°C).
- In a small bowl, whisk together the cayenne pepper, brown sugar, paprika, and garlic powder. Carefully ladle about 1/2 cup of the hot frying oil into the spice mixture and whisk until smooth and fragrant.
- Immediately brush or spoon the spicy glaze all over the fried chicken cutlets while they are still hot.
- Split the brioche buns and toast them cut-side down in a dry skillet over medium heat until golden and lightly crisp.
- Spread a generous amount of comeback sauce on the bottom half of each bun. Top with dill pickle chips, the glazed chicken cutlet, and a pile of creamy coleslaw. Finish with the top bun.
