Before you start

Before beginning, ensure the chicken is removed from the refrigerator at least 20 minutes prior to cooking to take the chill off. This helps the chicken cook more evenly. Preheat the oven fully to 425°F (220°C) and prepare a clean workspace.

Have the roasting pan and herbs ready to go. Properly wash hands after handling raw poultry and ensure all surfaces that come into contact with the raw bird are thoroughly cleaned and sanitized immediately afterward.

Ingredients at a glance (3)
  • 1 whole roasting chicken, about 4 pounds
  • 2 whole lemons, sliced into rounds
  • 3 sprigs fresh rosemary

Instructions

Preparation and Seasoning

  1. Prepare the chicken
Preheat the oven to 425°F (220°C). Pat the chicken dry with paper towels to ensure crispy skin. Place the chicken in a metal baking pan, tucking the rosemary sprigs and lemon slices around and under the bird.
Look for The chicken should be positioned in the center of the pan.
Tip Ensure the chicken is completely dry before roasting for the best crispiness.

At the end of this phase, the chicken is fully dried and sitting in the roasting pan with the aromatics tucked around it. The skin should look clean and dry, and the oven should be fully preheated and ready to receive the pan.

Roasting Process

  1. Roast until golden
Place the baking pan in the oven and roast for approximately 75 minutes. The skin should turn a deep golden-brown and the juices should run clear. Monitor the color periodically to ensure the lemon slices char without burning excessively.
Look for The skin is golden-brown and crispy to the touch.
Tip If the skin browns too quickly, tent the chicken lightly with aluminum foil.

During this phase, the chicken transforms from pale to a deep, appetizing golden-brown. The kitchen will fill with the scent of roasted rosemary and citrus. The lemon slices should be slightly charred at the edges, and the skin should appear firm and crispy to the touch.

Resting and Carving

  1. Rest and carve
Remove the chicken from the oven and verify the internal temperature reaches 165°F (74°C) at the thickest part of the breast. Let the chicken rest in the pan for at least 15 minutes before carving to ensure maximum juiciness. Use a sharp knife to carve the breast meat and serve with the warm, roasted lemon slices.
Look for The meat is tender and releases juices when sliced.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not skip the resting period as it allows the juices to redistribute.

After resting, the chicken should be firm to the touch but yield slightly under pressure.

Upon carving, the meat should appear white and moist, with juices pooling slightly on the cutting board. The skin should remain crispy even after the bird has been sliced for serving.

Common mistakes

A common mistake is failing to pat the chicken skin completely dry, which prevents it from becoming crispy. Another error is overcrowding the pan, which prevents hot air from circulating and leads to uneven cooking.

Additionally, failing to let the chicken rest for at least 15 minutes after removing it from the oven causes the juices to spill out immediately upon carving, resulting in dry meat. Avoid opening the oven door too frequently, as this causes significant temperature drops.

How to tell it’s done

The chicken is perfectly done when the skin is deeply golden and crispy, and the internal temperature at the thickest part of the breast reaches 165°F (74°C). When pierced with a knife, the juices should run clear.

Always use a meat thermometer inserted into the thickest part of the breast, ensuring it does not touch the bone, to confirm the chicken has reached this safe internal temperature before serving.
