Tips for success
For the crispiest results, serve the chicken immediately after the second fry. If you need to keep it warm, place it on a wire rack in a low oven (200°F) for up to 20 minutes, but note that the crust may soften slightly.
To reheat leftovers, use an air fryer or a toaster oven to revive the crunch—avoid the microwave, which will make the coating soggy.
The spicy slaw can be prepared a few hours ahead and kept in the refrigerator, but toss it with the dressing just before serving to keep it crisp.
If you prefer a milder slaw, reduce the sriracha or serve it on the side. For a gluten-free version, use tamari instead of soy sauce and ensure your mirin and sake are gluten-free—most are, but check labels.
Variations
- Spicy Miso Glaze: Brush the fried chicken with a glaze made from 2 tablespoons miso, 1 tablespoon honey, and 1 teaspoon rice vinegar. Toss the hot chicken in the glaze before serving for a sweet-savory twist.
- Lemon Pepper Karaage: Add 1 teaspoon freshly ground black pepper and 1 tablespoon lemon zest to the marinade. Serve with extra lemon wedges for a bright, citrusy flavor.
- Garlic Sesame: Increase the garlic to 4 cloves and add 1 tablespoon toasted sesame seeds to the coating. Garnish with sliced green onions and a drizzle of sesame oil.
- Curry Karaage: Add 1 tablespoon curry powder to the potato starch coating and 1 teaspoon to the marinade. Serve with a side of Japanese curry sauce for dipping.
Storage and make-ahead
- Fridge
- Store leftover chicken in an airtight container in the refrigerator for up to 3 days. The slaw can be refrigerated for up to 2 days, but it may become watery.
- Freezer
- Freeze the fried chicken in a single layer on a baking sheet, then transfer to a freezer-safe bag for up to 2 months.
- Reheat
- Reheat the chicken in an air fryer at 375°F for 3-4 minutes or in a 400°F oven for 5-7 minutes until hot and crispy. Avoid the microwave to preserve crunch.
Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days. To maintain crispness, reheat in an air fryer at 375°F for 3-4 minutes or in a 400°F oven for 5-7 minutes. The slaw is best eaten fresh, but it can be stored separately for up to 2 days; drain any excess liquid before serving.
The chicken can be marinated up to 24 hours in advance, and the coating can be applied just before frying. The slaw can be assembled a few hours ahead, but add the dressing right before serving. The rice can be cooked ahead and reheated in the microwave or on the stovetop with a splash of water.
Serving ideas
Serve the karaage rice bowl hot, with the chicken piled high over steamed rice and the spicy slaw on the side. A squeeze of fresh lemon over the chicken just before eating brightens the flavors and cuts through the richness.
This dish is satisfying enough to be a main course on its own, but it also pairs well with a simple cucumber salad or miso soup.
For a more casual presentation, serve the components separately so everyone can build their own bowl. The chicken can also be served as an appetizer or party snack, with the spicy mayo as a dipping sauce and the slaw on the side.
If you have leftover slaw, it's great on sandwiches or tacos. Adjust the spiciness to your liking by adding more or less sriracha.

Crispy Japanese Chicken Karaage Rice Bowl with Spicy Kewpie Slaw

Ingredients
- 1 1/4 lb boneless skinless chicken thighs, cut into bite-sized pieces
- 2 tbsp soy sauce
- 1 tbsp mirin
- 1 tbsp sake
- 1 tbsp fresh ginger, grated
- 2 cloves garlic, grated
- 1 tsp sesame oil
- 2/3 cup potato starch (katakuriko)
- Neutral oil, for frying, to taste
- 2 cups steamed short-grain rice
- 1/2 cup Kewpie mayonnaise
- 2 tbsp sriracha
- 2 cups shredded green cabbage
- 1 lemon, cut into wedges
Instructions
- In a large bowl, combine the soy sauce, mirin, sake, grated ginger, grated garlic, and sesame oil. Add the chicken pieces and toss well to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
- Place the potato starch in a shallow dish. Working in batches, dredge the marinated chicken pieces in the starch, pressing lightly to adhere, then shake off any excess. The coating should be thin and powdery, not thick.
- Heat 2 inches of neutral oil in a deep skillet or heavy pot to 330°F (165°C). Fry the chicken in batches, without crowding, for 4 minutes, turning occasionally, until pale golden and cooked through. Transfer to a wire rack set over a baking sheet.
- Let the first-fried chicken rest on the rack for 5 minutes. Meanwhile, increase the oil temperature to 375°F (190°C). Fry the chicken again, in batches, for 60 to 90 seconds, until deep golden brown and very crispy. Drain on fresh paper towels or a clean rack.
- In a small bowl, stir together the Kewpie mayonnaise and sriracha until smooth. Add the shredded cabbage and toss to coat. Set aside.
- Divide the steamed rice between two or four bowls. Top with the hot crispy chicken, add a generous spoonful of the spicy slaw, and serve with lemon wedges on the side.
