Tips for success

For the crispiest results, use a deep-fry thermometer and maintain the oil temperature between 350°F and 375°F (175°C to 190°C) throughout frying. If the oil gets too hot, the coating will brown too quickly and the seafood may be undercooked.

If it's too cool, the coating will absorb oil and become greasy. Fry in small batches – about a handful at a time – and let the oil come back to temperature between batches.

Seasoning the fritto misto immediately after frying is crucial: the flaky salt adheres to the hot, slightly oily surface, enhancing every bite. For an extra layer of flavor, add a pinch of lemon zest to the salt before sprinkling.

Serve the aioli in a small bowl on the side, so guests can dip generously. If you have leftovers, reheat them in a 400°F (200°C) oven for a few minutes to restore crispness.

Variations

  • Gluten-Free: Replace the all-purpose flour with a gluten-free all-purpose blend and use fine cornmeal or rice flour instead of semolina. Ensure all other ingredients are gluten-free. The coating will be slightly different but still crisp.
  • Vegetable Only: Omit the squid and shrimp and increase the zucchini to 400g, or add other vegetables like bell pepper strips, eggplant, or mushrooms. Use the same coating and frying method; adjust cooking time as needed.
  • Spicy Aioli: Add a pinch of cayenne pepper or a few drops of hot sauce to the lemon aioli for a spicy kick. This variation adds heat without overpowering the delicate seafood.
  • Herb Crust: Mix 1 tablespoon of finely chopped fresh parsley or basil into the flour mixture before dredging. This adds a subtle herbaceous note that complements the seafood and zucchini.

Storage and make-ahead

Fridge
Store leftover fritto misto in an airtight container in the refrigerator for up to 2 days. Reheat in a 400°F oven to restore crispness.
Freezer
Freeze unfried coated pieces on a baking sheet, then transfer to a freezer bag for up to 1 month. Fry directly from frozen, adding 1-2 minutes.
Reheat
To reheat fried fritto misto, place on a baking sheet in a 400°F (200°C) oven for 5-7 minutes until hot and crisp. Avoid microwave.

Leftover fritto misto is best eaten immediately, but if you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. To reheat, place on a baking sheet in a 400°F (200°C) oven for 5 to 7 minutes, until hot and crisp. Avoid microwaving, as it will make the coating soggy. The lemon aioli can be refrigerated separately for up to 3 days.

You can prepare the lemon aioli up to 2 days ahead and keep it refrigerated. The seafood and zucchini can be cleaned and cut a few hours in advance, but do not dredge them until just before frying, as the coating will become gummy if left to sit.

If you want to prep further, you can coat the pieces and freeze them on a baking sheet; fry directly from frozen, adding 1 to 2 minutes to the cooking time.

Serving ideas

Serve the fritto misto piping hot, piled onto a rustic wooden platter or a large serving plate. Garnish with lemon wedges and, if you like, a sprinkle of fresh parsley (though the video doesn't include it, it's a common addition – but stick to the video's ingredients for authenticity).

The lemon aioli should be served alongside in a small bowl for dipping. This dish is perfect as an appetizer for a dinner party or as a main course with a side salad.

For a casual meal, set out the fritto misto with the aioli and let everyone help themselves. The contrast of the crispy, salty coating with the cool, garlicky aioli is irresistible. Pair with a crisp white wine or a sparkling water with lemon. The dish is best enjoyed immediately, so have everything ready before you start frying.

Frequently asked questions

Can this recipe be made ahead of time?
The lemon aioli can be made up to 2 days ahead and stored in the refrigerator. The seafood and zucchini can be prepped a few hours in advance, but the coating should be applied just before frying to keep the crust crisp. Fried fritto misto is best served immediately, but leftovers can be reheated in the oven.
Why does the coating fall off during frying?
The coating may fall off if the seafood or zucchini is too wet before dredging. Pat them thoroughly dry with paper towels. Also, make sure to shake off excess flour after dredging – a thick, clumpy coating can detach in the hot oil. Finally, avoid overcrowding the pot, which can cause pieces to stick together and lose their coating.
What oil is best for deep frying?
Use a neutral oil with a high smoke point, such as vegetable, canola, or peanut oil. These oils can withstand the high heat without burning, which would impart an off flavor. Avoid olive oil, as it has a lower smoke point and a strong flavor that can overpower the dish.
Can this be made gluten-free?
Yes, substitute the all-purpose flour with a gluten-free all-purpose blend and use fine cornmeal or rice flour instead of semolina. Make sure the baking powder, if used, is gluten-free. The texture will be slightly different, but the result will still be crispy and delicious.
How do you know when the seafood is cooked through?
The seafood is cooked when it turns opaque and firm to the touch. For shrimp, they will curl and turn pink. For squid, the rings will become tender and white. To be safe, use an instant-read thermometer to check that the internal temperature reaches 145°F (63°C). The coating should be pale golden and crisp.

Crispy Italian Fritto Misto with Lemon Aioli

Prep 20 minCook 10 minTotal 30 minServes 4
A pile of golden fried calamari, shrimp, and zucchini on a rustic wooden platter with lemon wedges and a bowl of lemon aioli.

Ingredients

  • 200 g cleaned squid rings and tentacles
  • 200 g peeled shrimp
  • 1 medium zucchini cut into matchsticks
  • 150 g fine semolina flour
  • 100 g all-purpose flour
  • 1 tsp salt
  • Oil for deep frying, to taste
  • Lemon wedges, for serving
  • 100 g mayonnaise
  • 1 clove garlic, grated
  • 1 tbsp lemon juice

Instructions

  1. Rinse the squid rings and tentacles and the peeled shrimp under cold water. Pat them very dry with paper towels. Cut the zucchini into matchsticks about 1/4 inch thick and 3 inches long. In a shallow bowl, whisk together the fine semolina flour, all-purpose flour, and salt. Set up a wire rack over a baking sheet and place a sieve nearby.
  2. Working in batches, toss the squid, shrimp, and zucchini matchsticks in the flour mixture until each piece is lightly coated. Shake off any excess flour using the sieve. Place the coated pieces on the wire rack while you continue with the rest.
  3. Pour enough oil into a large pot or deep fryer to reach a depth of about 2 inches. Heat over medium-high until a deep-fry thermometer registers 375°F (190°C). Line a large plate with brown butcher paper or paper towels.
  4. Carefully add a few pieces at a time to the hot oil, making sure not to overcrowd the pot. Fry for 2 to 3 minutes, until pale golden and crisp. Use a slotted spoon or fry basket to transfer the fritto misto to the prepared plate. Repeat with the remaining batches, allowing the oil to come back to temperature between batches.
  5. While the fritto misto is still hot, sprinkle with flaky sea salt and a little fresh lemon zest if desired. The salt will cling to the crisp coating.
  6. In a small bowl, stir together the mayonnaise, grated garlic, and lemon juice until smooth. Season with a pinch of salt if you like. Cover and refrigerate until serving.
  7. Pile the crispy fritto misto onto a warm platter. Serve immediately with lemon wedges and the lemon aioli on the side for dipping.
