Tips for success

For an extra touch of flavor and a beautiful glossy finish, brush the exposed borders of the puff pastry with a simple egg wash before baking. This step, while optional, helps the edges brown deeply and adds an appetizing sheen.

Additionally, you can customize the flavor profile by spreading a thin layer of Dijon mustard or honey mustard directly onto the pastry before adding the ham and cheese, which adds a lovely tangy contrast to the rich fillings.

Ensure the baking sheet is placed on the middle rack of the oven to guarantee even heat distribution. If your oven has hot spots, rotate the baking sheet halfway through the baking time. Always use parchment paper or a silicone baking mat; this not only prevents the melted cheese from sticking to the pan but also makes it incredibly easy to slide the finished pastries onto a serving platter without tearing the delicate, flaky crust.

Variations

  • Mustard Glazed: Spread a thin layer of Dijon mustard onto the pastry before adding the ham and cheese for a sharp, tangy kick.
  • Spicy Pepper: Add a pinch of red pepper flakes or sliced jalapeños under the cheese for a warm, spicy variation.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Freezer
Freeze unbaked or baked pastries on a tray, then transfer to a freezer-safe bag for up to 1 month.
Reheat
Reheat in a 350°F (175°C) oven or toaster oven for 5-8 minutes until hot and crispy. Do not microwave.

Store any leftover pastries in an airtight container in the refrigerator for up to three days. To maintain the crispy texture, avoid wrapping them tightly in plastic wrap while they are still warm, as this traps steam and makes the pastry soggy.

It is best to let them cool completely on a wire rack before transferring them to storage. Avoid storing them at room temperature, as the meat and cheese require refrigeration to remain safe.

These pastries can be assembled ahead of time and kept in the refrigerator for up to twenty-four hours before baking. Arrange the assembled, unbaked pastries on the parchment-lined sheet, cover them loosely with plastic wrap, and refrigerate.

When ready to serve, bake them directly from the refrigerator, adding two to three minutes to the baking time if necessary. This makes them an incredibly convenient option for stress-free morning brunches or dinner parties.

Serving ideas

Serve these warm pastries immediately after cooling for a few minutes, while the cheese is still wonderfully stretchy and the crust is at its crispiest. They make an outstanding appetizer for cocktail parties, paired with a crisp white wine or a light beer.

For a more substantial meal, serve them alongside a simple green salad dressed with a bright vinaigrette, which cuts through the rich, buttery flavors of the pastry and cheese beautifully.

For a festive brunch display, arrange the pastries on a rustic wooden board garnished with fresh herbs and a small bowl of cornichons or mustard for dipping. They can be served whole for individual portions or cut into smaller, bite-sized squares using a sharp serrated knife to prevent crushing the delicate layers, making them perfect for passing around as finger food at casual gatherings.

Frequently asked questions

Can puff pastry be baked ahead of time?
These are best enjoyed fresh and warm from the oven for the crispiest texture. However, they can be reheated in a hot oven to restore their crunch.
What is the best substitute for Gruyère cheese?
Swiss cheese, Emmental, or a sharp white cheddar are excellent alternatives that melt beautifully and complement the savory ham.
Why did the puff pastry not rise?
The pastry was likely too warm before baking, causing the butter layers to melt into the dough, or the oven was not fully preheated to the correct temperature.

Crispy Ham and Cheese Puff Pastry Squares

Four golden, flaky ham and cheese puff pastries arranged on a piece of parchment paper.

Ingredients

  • 1 sheet puff pastry, store-bought or made ahead
  • 4 oz sliced ham
  • 1 cup shredded Gruyère cheese
  • 1 tbsp fresh parsley, finely chopped

Instructions

  1. Unfold the cold puff pastry sheet onto a lightly floured surface or a piece of parchment paper. Use a sharp knife to cut the sheet into four equal square portions. Gently transfer the pastry squares onto a baking sheet lined with parchment paper, leaving at least two inches of space between each square to allow room for the pastry to expand and rise evenly during baking.
  2. Divide the sliced ham evenly among the pastry squares, folding the slices to fit neatly in the center of each square while leaving a small border around the edges. Top the ham layer with a generous amount of the shredded Gruyère cheese, pressing it down lightly so it stays in place and does not spill over the edges of the pastry.
  3. Place the baking sheet in an oven preheated to 400°F (200°C). Bake for fifteen to twenty minutes, or until the pastry has puffed up beautifully and turned a deep golden-brown color. The cheese on top should be completely melted, bubbling, and slightly caramelized at the edges. Remove the baking sheet from the oven and let the pastries cool on the sheet for five minutes.
  4. Sprinkle the finely chopped fresh parsley evenly over the hot, melted cheese on each pastry. Use a sharp knife or a spatula to transfer the warm pastries to a serving platter or individual plates. Serve them warm while the pastry remains incredibly crispy and the melted cheese is still beautifully soft and stretchy.
