Before you start

Before starting, ensure all ingredients are measured and ready to go. Chop any extra toppings if desired and have your cheese shredded. Since the cooking process moves quickly, having your spatula and skillet ready is essential.

Ensure your workspace is clean, and wash your hands thoroughly after handling the raw ground beef. Keep the workspace organized so you can transition smoothly from browning the meat to assembling the tortillas and finally to the crisping phase in the hot pan.

Ingredients at a glance (4)
  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 4 large flour tortillas
  • 2 cups shredded white cheese, such as Monterey Jack or Mozzarella

Instructions

Browning the beef

  1. Cook the beef filling
Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until fully browned. Drain excess fat if necessary. Stir in the taco seasoning and a splash of water if needed to coat the meat evenly. Continue cooking until the internal temperature reaches 160°F (71°C) to ensure food safety.
Look for The beef is browned and fragrant.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Ensure the beef is cooked through to 160°F for the best texture.

The ground beef should be fully browned with no pink remaining. The aroma of the taco seasoning should be fragrant and well-distributed throughout the meat. It should look dry enough to be placed inside a tortilla without making it soggy. Once the beef reaches 160°F, it is ready to be set aside for assembly.

Assembling the quesadillas

  1. Assemble the quesadillas
Lay out the flour tortillas on a clean work surface. Distribute the cooked ground beef and shredded cheese onto one half of each tortilla. Fold the empty half over the filling to create a half-moon shape. Press down gently to ensure the filling stays contained within the tortilla.
Look for The tortillas are neatly folded with filling inside.
Tip Do not overfill, or the cheese may leak out during cooking.

The tortillas should be laid flat and filled with an even layer of beef and cheese. Ensure the filling is concentrated on one half, leaving a small border so the edges can seal properly when folded.

The assembled quesadillas should look uniform, with the filling contained securely inside the folded tortilla, ready for the skillet.

Crisping and serving

  1. Crisp and serve
Wipe the skillet clean and return it to medium heat. Place the folded quesadillas in the pan. Cook for 2 to 3 minutes per side until the tortilla is golden brown and crisp, and the cheese is fully melted and gooey. Remove from the pan, let sit for a moment, then cut into wedges and serve immediately.
Look for The tortilla is golden and crispy, and the cheese is melted.
Tip Keep the heat at medium to prevent burning the tortilla before the cheese melts.

The quesadillas should sound crisp when tapped with a spatula. The cheese should be bubbling and fully melted. The exterior should have an even golden-brown color without any burnt spots. Once removed from the skillet, allow them to rest for one minute before cutting, which helps the cheese set slightly for cleaner wedges.

Common mistakes

A common mistake is using too much heat, which burns the tortilla before the cheese has a chance to melt. Keep the flame at a steady medium to maintain control.

Another error is overstuffing the tortillas, which makes them difficult to flip and causes the filling to spill out into the pan. Use a moderate amount of filling per tortilla to keep them neat. Finally, avoid using cheeses that do not melt well, as they can result in a rubbery texture.

How to tell it’s done

The quesadillas are ready when the exterior of the tortilla is a deep golden brown and feels firm to the touch. The cheese should be completely melted and visible along the edges, indicating that the filling is hot throughout.

Use a spatula to peek underneath; if it is not brown enough, give it another 30 seconds. The ground beef must reach an internal temperature of 160°F (71°C) during the initial cooking phase for safety.

  • Ground meat: 160°F (71°C) in the thickest part
