Tips for success
For the crispiest results, use coarse breadcrumbs or panko, and don't skip the olive oil drizzle before baking. The oil helps the crust brown and become shatteringly crisp.
If you prefer a deeper color, you can brush the rolls with a little beaten egg instead of oil before baking, but oil gives a lighter, crunchier texture.
When rolling the yufka, be gentle but firm. The dough is delicate, so avoid overworking it. If the dough tears, simply overlap the edges and continue rolling—the egg wash and breadcrumbs will hide any imperfections.
For a spicier filling, add a pinch of red pepper flakes or a dash of hot sauce to the beef mixture.
Variations
- Spicy Beef Börek: Add 1/2 teaspoon of red pepper flakes or a chopped fresh chili to the beef filling for a kick of heat. You can also mix in a tablespoon of tomato paste for a deeper flavor.
- Vegetarian Börek: Replace the beef with sautéed mushrooms and spinach, or use a plant-based ground meat alternative. Season with the same spices and proceed as directed. Ensure the filling is well-drained to avoid sogginess.
- Cheese and Herb Börek: Omit the beef and double the cheese, adding a handful of chopped fresh parsley or dill to the cheese mixture. This makes a lighter, herbaceous version that’s perfect for spring.
- Chicken Börek: Use ground chicken instead of beef. Cook the chicken thoroughly, reaching an internal temperature of 165°F (74°C). Season with the same salt and pepper, and consider adding a pinch of paprika.
Storage and make-ahead
- Fridge
- Store leftover rolls in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven for 5-7 minutes to restore crispness.
- Freezer
- Freeze unbaked coated rolls on a baking sheet until firm, then transfer to a freezer bag for up to 2 months.
- Reheat
- Reheat leftover baked rolls in a 350°F oven for 5-7 minutes until hot and crisp. Avoid microwaving, as it makes the crust soggy.
Store leftover börek rolls in an airtight container in the refrigerator for up to 3 days. To maintain crispness, reheat them in a toaster oven or regular oven at 350°F (175°C) for 5-7 minutes, rather than using a microwave. They can be served cold, but the texture is best when reheated.
The rolls can be assembled up to a day in advance and kept refrigerated, coated but unbaked. Cover them tightly with plastic wrap. When ready to bake, add a few extra minutes to the baking time. Alternatively, you can bake them fully and reheat as needed.
Serving ideas
Serve these börek rolls warm, either whole or sliced on the diagonal. They pair beautifully with a dollop of plain yogurt or a squeeze of lemon juice, which cuts through the richness of the cheese and beef.
For a complete meal, serve alongside a fresh green salad or a bowl of tomato soup.
These rolls are also fantastic as part of a meze spread, alongside olives, pickles, and other small plates.
For a party, cut them into bite-sized pieces and serve with a dipping sauce, such as a garlic-yogurt sauce or a simple marinara. They are best enjoyed immediately, while the crust is still crackling.

Crispy Ground Beef and Kaşar Börek Rolls

Ingredients
- 4 sheets Turkish yufka dough (or thin flatbread)
- 1/2 lb ground beef
- 1/4 cup finely chopped onion
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded kaşar cheese (or mozzarella)
- 2 large eggs, beaten
- 1 tbsp milk
- 1 cup coarse breadcrumbs (galeta unu)
- 1 tbsp olive oil
Instructions
- Heat a skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Season with salt and pepper. Remove from heat and let cool slightly. Stir in the finely chopped onion.
- Lay a sheet of yufka on a clean work surface. Place about 2 tablespoons of the seasoned beef along the wide end, leaving a border. Top with a handful of shredded kaşar cheese. Fold the sides inward, then roll tightly into a cigar shape. Seal the pointed tip with a drop of water.
- In a shallow bowl, beat the eggs with the milk. Place the breadcrumbs in another shallow dish. Dip each roll into the egg mixture, turning to coat evenly, then roll in the breadcrumbs, pressing gently to adhere.
- Preheat the oven to 375°F (190°C). Arrange the coated rolls on a parchment-lined baking sheet. Drizzle lightly with olive oil. Bake for 20 minutes, until deeply golden and blistered.
- Remove the börek from the oven and let rest for 2-3 minutes. Serve warm, whole or sliced diagonally, so the cheese stretches and the filling is visible.
