Tips for success

For the crispiest results, do not move the potatoes too soon after placing them in the oven. Let them roast undisturbed for the first 30 minutes, then flip them once.

This allows the bottoms to develop a golden crust without sticking. If you have time, let the potatoes sit in the marinade for 15–30 minutes before roasting to deepen the flavor, though this is optional.

The size of the wedges matters: too thin and they will dry out, too thick and they may not cook through. Aim for about 4cm thick wedges, and cut them uniformly.

If you prefer extra heat, add a pinch of red pepper flakes along with the oregano. For a more intense lemon flavor, add a few strips of lemon zest to the marinade—just remove them before serving.

Variations

  • Add Red Onion: Toss thinly sliced red onion wedges with the potatoes before roasting. The onions will caramelize and add a sweet, savory depth that complements the lemon and oregano.
  • Spicy Kick: Add 1/2 teaspoon of red pepper flakes or a minced fresh chili to the marinade for a subtle heat that pairs well with the bright lemon and creamy feta.
  • Herb Swap: Substitute fresh thyme or rosemary for the fresh oregano garnish, or use a mix of fresh herbs for a different aromatic profile.
  • Vegan Version: Use vegetable stock and omit the feta, or replace with a dairy-free feta alternative. The potatoes will still be delicious and flavorful.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven to restore crispness.
Freezer
These potatoes are not ideal for freezing, as the texture will become mushy upon thawing. For best quality, enjoy fresh.
Reheat
Reheat in a 375°F (190°C) oven for 10 minutes, or until hot and edges are crispy again. Avoid microwave, which makes them soggy.

Leftover potatoes can be stored in an airtight container in the refrigerator for up to 4 days. The texture will soften upon reheating, but the flavor will remain delicious.

To reheat, spread them on a baking sheet and warm in a 375°F (190°C) oven for about 10 minutes, or until heated through and edges re-crisp. Avoid microwaving, as that will make them soggy.

The potatoes can be prepped up to a day in advance: cut the wedges, make the marinade, and combine them in a covered container. Refrigerate until ready to roast.

You may need to add a few extra minutes to the roasting time if starting from cold. The feta and fresh oregano should be added only after roasting, so they stay fresh.

Serving ideas

Serve these potatoes as a side dish alongside roasted chicken, grilled lamb, or fish. They also work beautifully as part of a mezze spread, with tzatziki or a simple Greek salad. The crispy edges and creamy centers make them a crowd-pleaser at any gathering, from casual weeknight dinners to holiday feasts.

For an extra touch, drizzle a little olive oil over the top just before serving, and add a few lemon wedges for squeezing. The potatoes are best enjoyed hot and fresh out of the oven, when the contrast between the crispy crust and tender interior is at its peak. Pair with a crisp white wine like Assyrtiko or a light rosé.

Frequently asked questions

Why are the potatoes not crispy?
Crispiness depends on a hot oven and a single layer of potatoes. If the pan is overcrowded, the potatoes steam instead of fry. Also, make sure to toss only once and allow the liquid to evaporate completely so the oil can crisp the edges. If needed, roast a few extra minutes until the desired crispness is reached.
Can this recipe be made ahead of time?
The potatoes can be prepped and marinated a day ahead, but for the best texture, roast them just before serving. Leftovers can be reheated in the oven to restore some crispness. The feta and fresh oregano should be added after reheating to keep them bright and fresh.
Can you use other potatoes?
Yukon Golds are recommended for their creamy texture, but yellow potatoes or red potatoes also work well. Russets will produce a fluffier interior and may not be as creamy. Avoid waxy new potatoes, as they do not become as tender and may not absorb the marinade as well.
Is the Dijon mustard necessary?
Dijon mustard adds a subtle sharpness and helps emulsify the marinade, but it is not strictly necessary. If omitted, the potatoes will still be flavorful, but the taste will be slightly less complex. A teaspoon of whole grain mustard can be used as a substitute.
What can be used instead of chicken stock?
Vegetable stock is a great substitute for a vegetarian version. Water can also be used, but the flavor will be less rich. For a deeper flavor, use a low-sodium chicken stock to control the salt level.

Crispy Greek Lemon-Oregano Roasted Potato Wedges

Prep 15 minCook 55 minTotal 1 h 10 minServes 6
A rustic roasting pan filled with golden-brown Greek lemon potato wedges

Ingredients

  • 2 lb Yukon Gold potatoes, scrubbed and cut into 4cm wedges
  • 1/2 cup extra-virgin olive oil
  • 1/3 cup fresh lemon juice
  • 1 cup chicken stock
  • 5 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 1/2 tbsp dried Greek oregano
  • Crumbled Greek barrel-aged feta, for serving
  • Fresh oregano leaves, for serving

Instructions

  1. Heat the oven to 400°F (200°C). Scrub the potatoes and cut them into thick 4cm wedges. In a large bowl, whisk together the olive oil, lemon juice, chicken stock, minced garlic, Dijon mustard, and dried oregano. Add the potato wedges and toss well to coat every piece thoroughly.
  2. Pour the coated potato wedges and all the marinade into a large roasting pan. Spread them into a single, even layer. The marinade should come about halfway up the potatoes; this is what creates the crispy-tender contrast.
  3. Place the pan in the oven and roast for 30 minutes. Remove the pan, carefully toss the potatoes with a spatula to redistribute the marinade and ensure even browning. Return to the oven and continue roasting for another 25 minutes, until the stock is absorbed and the edges are deeply golden and crispy.
  4. Remove the potatoes from the oven. While still hot, crumble the Greek barrel-aged feta over the top and scatter fresh oregano leaves. Serve immediately, making sure each portion gets some crispy edges and a bit of feta.
