Tips for success
For the crispiest fritters, make sure the oil is hot enough before adding the batter. A quick test: drop a small piece of batter into the oil; it should sizzle and bubble immediately.
If it sinks without sizzling, the oil is not hot enough. Adjust the heat as needed to maintain a steady sizzle without burning.
To keep fritters warm and crisp while frying in batches, place them on a wire rack set over a baking sheet in a 200°F (93°C) oven. This allows air to circulate, preventing sogginess. Serve within 30 minutes for the best texture.
Variations
- Spicy Cheddar Corn Fritters: Replace the feta with 1/2 cup shredded sharp cheddar cheese and add an extra chopped jalapeño to the batter. The cheddar melts into gooey pockets, making these even more indulgent.
- Herb and Parmesan Corn Fritters: Swap the feta for 1/4 cup grated Parmesan cheese and add 2 tablespoons chopped fresh basil or chives. The Parmesan adds a nutty, salty flavor that pairs well with the sweet corn.
- Bacon and Scallion Corn Fritters: Add 1/2 cup cooked, crumbled bacon to the batter along with an extra scallion. The smoky bacon complements the sweet corn and adds a savory depth.
- Vegan Corn Fritters: Omit the feta and use a flax egg (1 tbsp ground flaxseed mixed with 3 tbsp water) instead of beaten eggs. Use a non-dairy milk like almond or oat. The fritters will be slightly less rich but still crispy and delicious.

Store leftover fritters in an airtight container in the refrigerator for up to 3 days. To reheat, place them on a baking sheet and warm in a 350°F (175°C) oven for about 10 minutes, or until crisp and heated through. Avoid microwaving, as it will make them soggy.
The batter can be prepared up to 1 day ahead and stored in the refrigerator. Stir well before frying.
Cooked fritters can also be made ahead and reheated in the oven as described. The jalapeño jam can be made ahead and stored in the refrigerator for up to 2 weeks.
Serving ideas
Serve the fritters warm, topped with a generous spoonful of sweet jalapeño jam. For a cool contrast, add a dollop of sour cream or crème fraîche.
They also pair well with a fresh green salad or as a side to grilled meats. The fritters are best enjoyed immediately after frying, when they are at their crispiest.
For a party, arrange the fritters on a platter with the jam on the side for dipping. They can also be served as sliders with a small piece of lettuce and a slice of tomato.
The sweet-spicy jam complements the savory fritters beautifully, making them a versatile addition to any table.

Crispy Golden Corn Fritters with Sweet Spicy Jalapeño Jam

Ingredients
- 3 cups fresh sweet corn kernels (or canned, drained)
- 100 g all-purpose flour (about 3/4 cup)
- 40 g cornmeal (about 1/4 cup)
- 1 tsp baking powder
- 2 large eggs, beaten
- 50 ml milk (about 3 1/2 tbsp)
- 2 green onions, sliced
- 1 red chili, finely chopped
- 50 g crumbled feta cheese (about 1/3 cup)
- Neutral oil, for pan-frying, to taste
- Sweet jalapeño pepper jam, for serving
- Sea salt, for sprinkling, to taste
Instructions
- In a large bowl, whisk together the flour, cornmeal, and baking powder. Add the beaten eggs and milk, and stir until a thick batter forms. Fold in the corn kernels, sliced green onions, chopped red chili, and crumbled feta cheese until evenly distributed. The batter should be thick but spoonable.
- Pour about 1/4 inch of neutral oil into a large skillet and heat over medium-high heat until shimmering. To test, drop a tiny bit of batter into the oil; it should sizzle immediately.
- Using a spoon or cookie scoop, dollop mounds of batter into the hot oil, flattening gently with the back of the spoon. Fry for about 3 minutes per side, until the edges are crisp and golden brown. Flip carefully to reveal the lacy golden crust.
- Transfer the cooked fritters to a plate lined with paper towels to drain. Immediately sprinkle with sea salt while still hot.
- Stack the fritters on a serving plate and top each with a dollop of sweet jalapeño pepper jam. Serve immediately, with extra jam on the side if desired.
