Tips for success
For extra crispiness, double-coat the wedges by dipping them in the egg wash and panko twice. This creates a thicker, crunchier crust.
Also, make sure the oil is hot enough before adding the chips; if it's not, they'll absorb oil and become greasy. Use a thermometer for accuracy.
When seasoning the chicken, don't be shy with the salt and pepper—they enhance the other flavors.
If you like a bit of heat, add a pinch of cayenne to the chicken mixture or the panko. The dip can be made a day ahead and stored in the fridge, allowing the flavors to meld.
Variations
- Spicy Buffalo: Toss the fried chips in a mixture of melted butter and hot sauce before adding the Parmesan. Serve with blue cheese or ranch dip instead of the paprika garlic dip.
- BBQ Chicken: Brush the seasoned chicken with barbecue sauce before coating in panko. Omit the smoked paprika dip and serve with extra BBQ sauce for dipping.
- Loaded Nacho Style: After frying, top the chips with jalapeños, black beans, and a drizzle of queso or melted cheddar. Bake briefly until the cheese melts, then garnish with cilantro.
- Herb and Lemon: Add lemon zest and fresh herbs like thyme or rosemary to the panko mixture. Serve with a lemon-herb yogurt dip instead of the paprika garlic dip.
Storage and make-ahead
- Fridge
- Store leftover chips in an airtight container for up to 3 days. The dip can be refrigerated for up to 5 days in a separate container.
- Freezer
- Freeze the fried chips in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months. Reheat in a 375°F (190°C) oven for 10 minutes.
- Reheat
- To reheat, place chips on a baking sheet and warm in a 350°F (175°C) oven for 5-7 minutes until hot and crispy. Avoid microwaving, as it makes them soggy.
Store leftover chips in an airtight container in the refrigerator for up to 3 days. Reheat in a toaster oven or air fryer at 350°F (175°C) for 5-7 minutes to restore crispiness. The dip can be refrigerated separately for up to 5 days.
You can prepare the seasoned chicken, cut the tortillas, and make the dip up to a day in advance. Keep the chicken and tortillas refrigerated separately.
When ready to serve, assemble the wedges, coat, and fry. The chips are best fried fresh, but you can also fry them a few hours ahead and reheat in a hot oven.
Serving ideas
Serve these chips as a fun appetizer at parties, game days, or movie nights. They pair wonderfully with a cold beer or a refreshing lemonade.
The creamy dip is essential—it balances the savory, crunchy chips with a cool, smoky flavor. Arrange the chips on a platter with the dip in the center for easy dipping.
For a more substantial meal, serve the chips alongside a simple green salad or coleslaw. They also work well as a topping for nachos or as a filling for tacos. If you have leftovers, chop them up and add to a wrap or salad for a quick lunch. The possibilities are endless!

Crispy Garlic Parmesan Chicken Tortilla Chips

Ingredients
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1 tbsp lemon juice
- 1 lb minced chicken
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp smoked paprika
- Black pepper to taste
- Salt to taste
- 6 mini flour tortillas
- 1 egg, beaten
- 1 cup panko breadcrumbs
- 1 tbsp dried parsley
- 2 cups vegetable oil, for frying
- 1 cup freshly grated Parmesan cheese
- 2 tbsp chopped fresh parsley
Instructions
- In a small bowl, whisk together the mayonnaise, sour cream, smoked paprika, garlic powder, and lemon juice until smooth. Cover and refrigerate until ready to serve.
- In a large bowl, combine the minced chicken, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix thoroughly until the seasonings are evenly distributed throughout the meat.
- Spread the seasoned chicken mixture evenly in a thin layer over the 6 mini flour tortillas. Use a spatula or the back of a spoon to press it down gently. Stack the tortillas if needed, but keep the layer thin. Then, using a sharp knife, slice each tortilla into 4 triangular wedges, like cutting a pizza.
- Prepare a shallow dish with the beaten egg and another with the panko breadcrumbs mixed with dried parsley. Dip each wedge into the egg wash, allowing any excess to drip off, then dredge in the panko mixture, pressing gently to adhere. Place the coated wedges on a plate.
- Heat the vegetable oil in a large skillet over medium-high heat until it shimmers (about 350°F / 175°C). Carefully add the coated wedges in batches, without overcrowding, and fry for 3 minutes per side, until golden brown and cooked through. The internal temperature of the chicken should reach 165°F (74°C).
- Using tongs, transfer the fried chips to a wire rack set over a baking sheet to drain any excess oil. While still hot, shower immediately with the freshly grated Parmesan cheese and chopped fresh parsley, so the cheese melts slightly.
- Arrange the cheesy chicken tortilla chips on a serving platter and serve immediately with the prepared smoked paprika garlic dip on the side for dipping.
