Before you start

Ensure the chicken thighs are patted completely dry with paper towels before starting, as any surface moisture will cause the chicken to steam rather than sear.

Have the garlic minced and the parmesan cheese grated and ready to go before heating the skillet to keep the cooking process smooth and efficient.

Ingredients at a glance (4)
  • 4 pieces bone-in skin-on chicken thighs
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese, grated

Instructions

Searing the chicken

  1. Sear the chicken
Place the chicken thighs skin-side down into a cold cast-iron skillet. Turn the heat to medium-high and sear the chicken until the skin is deeply golden and crispy. Flip the chicken to cook the other side until browned and nearly cooked through.
Look for Skin should be golden brown and crispy
Tip Do not crowd the pan; use two skillets if necessary to ensure the skin crisps evenly.

The chicken skin should look deep golden brown and feel firm to the touch. The fat will have rendered out into the pan, creating a flavorful base for the subsequent sauce. Ensure the meat is browned on both sides to lock in the juices before moving to the sauce-making phase.

Creating the sauce

  1. Prepare the sauce
Remove the chicken from the skillet and set aside. Add the minced garlic to the remaining fat in the pan and sauté until fragrant. Pour in the heavy cream and bring to a gentle simmer, scraping up any browned bits from the bottom of the pan.
Look for Garlic is fragrant and sauce is simmering
Tip Keep the heat low to prevent the garlic from burning, which can turn the sauce bitter.

The garlic should be soft and aromatic without any signs of browning or burning. The cream should have started to bubble gently and thickened slightly. When the parmesan is added, the sauce should transform into a smooth, cohesive, and creamy consistency that coats the spoon evenly.

Final simmer and rest

  1. Finish and serve
Stir in the grated parmesan cheese until melted and smooth. Return the chicken to the skillet, skin-side up, and simmer until the internal temperature reaches 165°F (74°C). Remove from heat and let the chicken rest for 5 minutes before serving.
Look for Sauce is thickened and chicken is cooked through
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use a meat thermometer to ensure the chicken is cooked safely without overcooking the meat.

The chicken should be fully bathed in the sauce, with the skin remaining above the liquid to preserve its texture.

After cooking, the meat must rest for at least five minutes to allow the juices to redistribute, ensuring every bite is tender, succulent, and perfectly seasoned with the sauce.

Common mistakes

A common mistake is overcrowding the skillet, which lowers the pan temperature and prevents the skin from getting crispy.

Another error is adding the parmesan while the cream is boiling vigorously, which can cause the cheese to separate; always reduce the heat to a low simmer before incorporating the cheese to maintain a silky, emulsified sauce.

How to tell it’s done

The chicken is perfectly cooked when the skin is crispy and the meat is opaque throughout. Use a reliable digital meat thermometer inserted into the thickest part of the thigh, away from the bone, to confirm an internal temperature of 165°F (74°C).

The sauce should be glossy, thickened enough to coat the back of a spoon, and fragrant with garlic and parmesan.

  • Poultry: 165°F (74°C) in the thickest part
