Tips for success
For an extra kick, add a dash of cayenne pepper or crushed red pepper flakes to the chicken seasoning. This introduces a subtle heat that cuts through the richness of the cream cheese and mozzarella.
If you prefer a more herbaceous flavor, add a teaspoon of dried Italian seasoning to the chicken while it is in the skillet, which complements the garlic and parmesan profile perfectly.
Experiment with different cheeses if you want to change the flavor profile. While mozzarella provides the best stretch, mixing in a little sharp cheddar or provolone can add depth to the cheese blend.
Always remember to use fresh parsley for the topping, as dried parsley will not provide the same bright, fresh color or flavor contrast against the rich, buttery crust of the finished roll-ups.
Variations
- Spicy Buffalo Chicken: Swap the garlic herb cream cheese for a blend of cream cheese and buffalo sauce. Add finely diced celery to the chicken mixture for crunch, and serve with a side of blue cheese dressing for an authentic buffalo wing flavor profile.
- Spinach and Artichoke: Stir chopped cooked spinach and finely diced artichoke hearts into the cream cheese mixture. This adds a sophisticated, earthy flavor that pairs perfectly with the mozzarella and the crispy parmesan crust on the outside of the tortillas.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freeze the unbaked roll-ups for up to 1 month. Thaw in the refrigerator overnight before applying the butter topping and baking as directed.
- Reheat
- Reheat in a 350°F (175°C) oven for 10-12 minutes until warmed through and the crust regains some of its original crunch.
Store any leftovers in an airtight container. Because of the cheese and cream cheese, it is essential to keep them refrigerated. Allow leftovers to cool at room temperature for no more than 2 hours before moving them to the refrigerator. While the crust will lose some of its crunch over time, the flavor will remain excellent for a few days.
You can prepare the chicken mixture up to 24 hours in advance and store it in the refrigerator. However, it is best to assemble the roll-ups right before baking to ensure the tortillas do not become soggy from the cream cheese.
If you must assemble them ahead of time, keep them on the baking sheet covered with plastic wrap, but wait to apply the butter and parmesan topping until just before they go into the oven.
Serving ideas
Serve these roll-ups warm as a main dish or a hearty appetizer. They pair beautifully with a side of marinara sauce or a garlic mayo dip, which enhances the savory notes of the chicken and cheese. For a complete meal, serve them alongside a crisp green salad with a light vinaigrette to provide a refreshing contrast to the richness of the cheesy chicken.
When serving for a group, place the roll-ups on a large platter and garnish with an extra sprinkle of fresh parsley. Because they are easy to hold, they work well for informal gatherings.
Encourage guests to pull them apart slowly to appreciate the cheese stretch, which is a signature element of this dish. Keep the dipping sauces in individual bowls to allow for easy customization.

Crispy Garlic Parmesan Chicken Roll-Ups

Ingredients
- 2 lb chicken breasts, small diced
- 1 tbsp olive oil
- 2 tbsp minced garlic
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 6 flour tortillas
- 6 oz garlic herb cream cheese
- 2 cups shredded mozzarella
- 3 tbsp melted butter
- 1 tsp minced garlic
- 1 tbsp fresh parsley, chopped
- 1/2 cup grated parmesan cheese
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the diced chicken breasts and cook until they begin to brown. Stir in the minced garlic, smoked paprika, onion powder, salt, and black pepper. Continue cooking, stirring occasionally, until the chicken is deeply golden brown and reaches an internal temperature of 165°F (74°C). Remove from heat.
- Preheat your oven to 400°F (200°C). Lay out the flour tortillas on a clean surface. Spread an even layer of garlic herb cream cheese across each tortilla. Divide the cooked chicken mixture among the tortillas and sprinkle generously with the shredded mozzarella. Roll each tortilla tightly into a cylinder and place them seam-side down on a baking sheet.
- In a small bowl, whisk together the melted butter, minced garlic, and fresh parsley. Brush this mixture over the top of the roll-ups. Sprinkle the grated parmesan cheese heavily over the buttered tops. Bake at 400°F (200°C) for 15 minutes, or until the exterior is blistered and crunchy. Remove from the oven and serve immediately.
