Before you start

Before starting, gather all ingredients. Slice the chicken thighs into thin strips. Mince the garlic, juice the lemon, and measure the spices. Combine the marinade ingredients in a bowl and add the chicken, stirring to coat.

Cover and refrigerate for at least 30 minutes. Meanwhile, prepare the flatbreads, toum sauce, pickled cucumbers, and shredded mozzarella. Have the butter softened for easy spreading. Preheat the panini press when you are ready to cook.

Ingredients at a glance (16)
  • 2 lb boneless, skinless chicken thighs, sliced
  • 1/2 cup plain yogurt
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 1/2 tsp smoked paprika
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground turmeric
  • 1 1/2 tsp salt
  • 2 tbsp lemon juice
  • 1 cup garlic toum sauce
  • 4 large flatbreads or pita
  • 1 cup pickled cucumbers, sliced
  • 2 cups shredded mozzarella
  • 2 tbsp butter, softened

Instructions

Marinate and Sear

  1. Marinate the Chicken
In a large bowl, combine the yogurt, olive oil, minced garlic, cumin, coriander, smoked paprika, cardamom, turmeric, salt, and lemon juice. Whisk until smooth. Add the sliced chicken thighs and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes or up to overnight.
Look for The marinade is thick and fragrant, coating every piece of chicken.
Tip For deeper flavor, marinate overnight. Let the chicken sit at room temperature for no more than 30 minutes before cooking.
  2. Cook the Chicken
Heat a large skillet or griddle over medium-high heat. Add the marinated chicken in a single layer, working in batches if needed. Cook for 4-5 minutes per side until deeply browned and cooked through. The internal temperature should reach 165°F (74°C). Transfer to a cutting board and let rest for 5 minutes.
Look for The chicken is golden brown with charred edges and juicy inside.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not overcrowd the pan; otherwise the chicken steams instead of searing.

After marinating, the chicken is coated in a thick, aromatic paste. When seared, it develops a deep golden-brown crust with charred edges, and the kitchen fills with the warm scent of cumin and paprika.

The chicken should be cooked through, juicy, and register 165°F (74°C) on an instant-read thermometer. Let it rest before assembling.

Assemble and Butter

  1. Assemble the Wraps
Lay a flatbread on a clean surface. Spread a generous layer of garlic toum sauce over the entire surface, leaving a small border. Arrange a portion of the cooked chicken down the center, then top with pickled cucumbers and a handful of shredded mozzarella. Fold in the sides and roll tightly into a snug wrap.
Look for The wrap is tight and full, with no gaps at the ends.
Tip Use a thin layer of sauce to avoid a soggy wrap; keep the filling centered.
  2. Butter the Wraps
Brush the outside of each wrap with softened butter, covering the top and bottom surfaces. This will help achieve a golden, crispy crust when pressed.
Look for The wrap is lightly coated with butter, shiny but not dripping.
Tip If using a panini press, you can also butter the press plates lightly.

The flatbreads are spread with a thin layer of garlic toum, then topped with chicken, pickles, and mozzarella. The wraps are rolled tightly, with the filling snugly enclosed. The butter is brushed evenly over the outside, giving the wraps a glossy sheen. They should feel firm and secure, with no loose ends.

Press and Serve

  1. Press and Crisp
Preheat a panini press to medium-high. Place the buttered wraps on the press, close the lid, and cook for 3-4 minutes until the flatbread is deeply golden and crispy, and the cheese is melted. If using a skillet, press with a heavy pan and flip halfway.
Look for The wrap is golden brown with crisp ridges and melted cheese oozing at the seams.
Tip Do not overfill; the press needs to close easily to create even crispness.
  2. Rest and Slice
Remove the wraps from the press and let them rest for 2-3 minutes. This allows the cheese to set slightly and makes slicing cleaner. Use a sharp knife to cut each wrap diagonally in half.
Look for The cut halves show a cross-section of chicken, pickles, and melted cheese.
Tip A serrated knife works best for cutting through the crispy crust without tearing.
  3. Serve with Extra Sauce
Serve the wraps warm with additional garlic toum sauce on the side for dipping. The cut end can be dunked directly into the sauce for extra flavor.
Look for The sauce is creamy and garlicky, ready for dipping.
Tip Warm the sauce slightly if desired, but cold toum contrasts nicely with the hot wrap.

The wraps emerge from the press with a golden, crackly crust, and the mozzarella has melted into a gooey layer. When sliced, the cross-section shows distinct layers of chicken, pickles, and cheese. The aroma is intensely garlicky and buttery. Serve immediately with extra toum for dipping.

Common mistakes

Avoid overfilling the wraps, as this makes them difficult to roll and press, leading to gaps and uneven crisping. Do not skip the resting time after marinating—this allows the flavors to meld.

When searing the chicken, avoid crowding the pan; cook in batches to ensure a proper sear instead of steaming. Finally, do not press the wraps for too long, as the flatbread can become overly hard and brittle; 3-4 minutes is usually sufficient.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) and is no longer pink in the center. The wraps are done when the flatbread is deeply golden brown and crispy all over, and the cheese is fully melted and oozing slightly at the seams.

Let the wraps rest for 2-3 minutes before slicing to allow the cheese to set, which makes cutting cleaner and prevents filling from spilling out.
