Tips for success
For the crispiest crust, make sure the chicken is dry before dredging. Pat it with paper towels to remove excess moisture. When coating, press the panko mixture firmly onto the chicken so it adheres well.
Let the breaded cutlets rest for a few minutes before frying—this helps the coating set and reduces the chance of it falling off in the oil.
To keep the oil at the right temperature, use a deep-fry thermometer. If the oil gets too hot, turn the heat down slightly; if it drops too low, wait for it to come back up before adding more chicken.
After frying, let the chicken rest on a wire rack instead of paper towels to keep the bottom crust crispy. Serve the sandwiches immediately for the best texture.
Variations
- Spicy Buffalo: Toss the fried chicken in buffalo sauce after frying. Replace the spicy mayo with blue cheese dressing and add extra pickles for a tangy kick.
- BBQ Bacon: Add crispy bacon and a drizzle of barbecue sauce to the sandwich. Use cheddar cheese instead of American for a smoky flavor.
- Avocado Ranch: Replace the spicy mayo with ranch dressing and add sliced avocado. Use pepper jack cheese for a mild heat.
- Slaw-Topped: Top the sandwich with a crunchy coleslaw instead of lettuce. Use a creamy coleslaw dressing to add extra moisture and flavor.

Serving ideas
Serve these sandwiches hot, right after assembling, so the crust stays crispy and the cheese is melted. Pair them with classic sides like french fries, coleslaw, or a simple green salad. The spicy mayo can be served on the side for extra dipping. For a heartier meal, add a side of pickles or potato chips.
These sandwiches are best eaten with both hands, but you can also serve them open-faced with a knife and fork for a more elegant presentation.
If you’re serving a crowd, cut the sandwiches in half and arrange on a platter. The combination of crunchy, juicy, creamy, and tangy elements makes this a crowd-pleasing dish that’s sure to satisfy.

Crispy Fried Chicken Sandwich with Spicy Mayo

Ingredients
- 4 boneless, skinless chicken cutlets (about 4 oz each)
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp onion powder
- 1 cup all-purpose flour
- 2 large eggs
- 2 cups panko breadcrumbs
- 2 tbsp fresh parsley, finely chopped
- 1/2 cup mayonnaise
- 2 tbsp hot sauce
- 8 slices thick-cut bread (such as brioche or sourdough)
- 2 tbsp unsalted butter, softened
- 4 slices American cheese
- 1/2 cup dill pickle slices
- 4 leaves crisp lettuce
- 2 cups vegetable oil, for frying
Instructions
- Pound the chicken cutlets to an even 1/2-inch thickness. In a small bowl, mix the garlic powder, paprika, and onion powder. Rub the spice mixture all over the cutlets. Set up a dredging station: one bowl with the flour, one with the eggs beaten with a splash of water, and one with the panko breadcrumbs mixed with the parsley. Dredge each cutlet in the flour, shaking off excess, then dip in the egg wash, and finally press into the panko mixture until well coated.
- Pour the vegetable oil into a large skillet to a depth of about 1/2 inch. Heat over medium-high until the oil shimmers and a pinch of flour sizzles immediately when dropped in. If using a thermometer, the oil should reach 350°F (175°C).
- Carefully place the breaded cutlets into the hot oil, working in batches to avoid crowding. Fry for 3–4 minutes per side, until golden brown and cooked through. The internal temperature should reach 165°F (74°C). Transfer to a paper towel-lined plate to drain.
- In a small bowl, whisk together the mayonnaise and hot sauce until smooth and well combined. Set aside.
- Spread the softened butter on one side of each bread slice. Heat a separate skillet or griddle over medium heat. Place the bread buttered-side down and toast until golden and crisp, about 2 minutes per side. Remove from the skillet.
- Spread a generous amount of the spicy mayo on the toasted side of each bread slice. On four slices, layer a fried chicken cutlet, a slice of American cheese, a few pickle slices, and a lettuce leaf. Top with the remaining bread slices, mayo-side down. Press gently.
