Before you start

Before you begin, gather all necessary ingredients and preheat your oven to 425°F (218°C). Ensure your baking sheet is lined with parchment paper or foil for easy cleanup, and have your wire rack ready.

Prepare a workspace with separate bowls for marinating and breading to keep your kitchen organized. Remember to keep the raw chicken in the refrigerator until the very moment you are ready to start the marinating step to maintain food safety.

Ingredients at a glance (8)
  • 1 1/2 lb chicken tenderloins
  • 1 cup buttermilk
  • 2 tbsp hot sauce
  • 3 cups crushed cornflakes
  • 1 tbsp smoked paprika
  • 1/2 cup red-chili infused honey
  • 2 tbsp melted butter
  • herb ranch dressing, for serving

Instructions

Marinating

  1. Marinating the Chicken
Combine the buttermilk and hot sauce in a large bowl. Add the chicken tenderloins, ensuring they are well coated. Refrigerate for at least 30 minutes to allow the flavors to penetrate the meat.
Look for The chicken should be fully submerged in the buttermilk mixture.
Tip Do not leave the chicken out at room temperature for more than 30 minutes; keep it chilled in the refrigerator until ready to bread.

After 30 minutes in the refrigerator, the chicken should look slightly opaque from the buttermilk bath.

It will have absorbed the tangy flavor and spicy heat, and it will be ready to be coated in the crunchy cornflake mixture. Ensure the chicken is chilled before moving to the next phase.

Baking

  1. Breading and Baking
Preheat your oven to 425°F (218°C). In a shallow dish, combine the crushed cornflakes and smoked paprika. Press each marinated chicken tender firmly into the cornflake mixture until evenly coated. Place on an oiled wire rack set over a baking sheet and bake for 16 minutes until golden brown and the internal temperature reaches 165°F (74°C).
Look for The crust should look deep golden-brown and feel firm to the touch.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Using a wire rack ensures air circulation all around the chicken, keeping the bottom side just as crispy as the top.

The kitchen will smell savory and slightly toasted as the cornflakes turn golden brown. The chicken should look craggy and crisp. Check that the tenders are firm and the internal temperature has safely hit 165°F (74°C) to ensure they are fully cooked through and safe to consume.

Glazing

  1. Glazing and Serving
While the chicken bakes, gently warm the red-chili infused honey and melted butter in a small saucepan until combined. Once the chicken is done, remove it from the oven and drizzle the warm honey mixture generously over the tenders. Serve immediately with a side of herb ranch dressing for dipping.
Look for The glaze should be thin and pourable, coating the tenders in a glossy finish.
Tip Drizzle the glaze just before serving to maintain the maximum crunch of the cornflake crust.

The hot honey butter sauce should look glossy and smell aromatic with a hint of chili spice. Once drizzled, the tenders will have a beautiful amber sheen. The dish should be served immediately while the crust is at its peak crunchiness and the sauce is warm and flavorful.

Common mistakes

A common mistake is overcrowding the baking sheet, which prevents air from circulating and leads to soggy patches on the chicken. Ensure each tender has enough space around it.

Another error is using a fine breadcrumb texture instead of coarse cornflakes, which will significantly reduce the desired crunch. Finally, do not add the hot honey glaze too early, as the moisture can soften the crust if it sits for too long before serving.

How to tell it’s done

The chicken is perfectly cooked when the crust is deep golden-brown and crispy. Use a meat thermometer to ensure the thickest part of the tender reaches an internal temperature of 165°F (74°C).

The meat should be opaque throughout and juices should run clear. Because chicken tenders are relatively small, they cook quickly, so monitor them closely around the 15-minute mark to avoid overcooking and drying out the meat.

  • Poultry: 165°F (74°C) in the thickest part
