Before you start

Before starting, make sure the butter is softened to room temperature for easy creaming. Measure out all ingredients and have them ready. Line a baking sheet with parchment paper.

If using a stand mixer, fit it with the paddle attachment; otherwise, a hand mixer or a sturdy spoon will work. Preheat the oven to 350°F (175°C) just before baking. Have a cooling rack ready for the finished fries, and warm the fudge dip just before serving.

Ingredients at a glance (10)
  • 1/2 cup unsalted butter, softened
  • 1/4 cup dark brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup hot chocolate fudge sauce

Instructions

Dough and Shaping

  1. Make the Cookie Dough
In a large bowl, beat the softened butter, dark brown sugar, and granulated sugar together until pale and creamy. Add the egg and vanilla extract, and beat until smooth and well combined. In a separate bowl, whisk the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring just until no streaks of flour remain. Fold in the chocolate chips gently.
Look for The dough should be thick, slightly sticky, and hold together when pressed.
Tip Do not overmix once the flour is added; overworking develops gluten and makes the fries tough.
  2. Shape the Fries
Turn the dough out onto a lightly floured surface. Pat it into a rectangle about 1/2 inch thick. Using a sharp knife or pizza cutter, slice the dough into strips about 1/2 inch wide and 3 inches long, resembling French fries. Gently transfer the strips to a parchment-lined baking sheet, spacing them about 1 inch apart.
Look for The strips should be uniform in size so they bake evenly.
Tip If the dough is too soft to handle, chill it in the refrigerator for 15 minutes before slicing.

At the end of this phase, the dough should be smooth, slightly sticky, and hold together when pressed. The strips should be uniform in size, about 1/2 inch wide and 3 inches long, and placed on the baking sheet with space between them. If the dough becomes too soft, chill it for 10-15 minutes before continuing.

Baking

  1. Bake the Cookie Fries
Preheat the oven to 350°F (175°C). Bake the cookie fries for 10 minutes, or until the edges are crisp and golden brown. The centers will still look slightly moist but will set as they cool. Remove from the oven and let them cool completely on the baking sheet for about 10 minutes before serving.
Look for The edges should be deep golden and the tops lightly browned; they will firm up as they cool.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip For extra crispiness, bake for an additional 1-2 minutes, but watch closely to avoid burning.

After baking, the fries should be golden brown at the edges and lightly browned on top. They will look slightly puffed and may have a few cracks on the surface. The aroma of butter and chocolate will fill the kitchen. Let them cool completely on the baking sheet—they will crisp up as they cool.

Serving

  1. Warm the Fudge Dip
While the cookie fries cool, warm the chocolate fudge sauce in a small saucepan over low heat, stirring occasionally, until smooth and hot. Alternatively, microwave in 20-second intervals, stirring between each, until warm.
Look for The fudge should be smooth, glossy, and pourable.
Tip If the fudge is too thick, stir in a teaspoon of milk or cream to thin it slightly.
  2. Serve and Enjoy
Serve the cookie fries in a red fast-food fry carton or a small serving dish. Place the warm fudge dip alongside. Dunk and enjoy while the fries are crisp and the fudge is warm.
Look for The fries should be crisp on the outside and tender inside, perfect for dipping.
Tip For a fun presentation, sprinkle a little powdered sugar over the fries before serving (optional).

The fudge dip should be warm, smooth, and pourable. The cookie fries should be completely cool and crisp. When you snap one in half, it should break with a clean crunch. Serve them immediately in a fry carton or on a platter with the fudge dip alongside.

Common mistakes

One common mistake is overmixing the dough once the flour is added, which develops gluten and results in tough, dense fries. Another is making the strips too thick—they won't crisp up properly. Conversely, making them too thin can cause them to burn quickly.

Keep the strips about 1/2 inch wide and 3 inches long. Also, do not overcrowd the baking sheet; leave at least 1 inch between each fry to allow for even browning. Finally, resist the urge to underbake; the fries should be fully baked to achieve that crunchy exterior.

How to tell it’s done

The cookie fries are done when the edges are deep golden brown and the tops are lightly browned. They will still feel slightly soft in the center, but they will firm up as they cool.

To ensure they are baked through, you can insert a toothpick into the center of a fry—it should come out with just a few moist crumbs, not wet batter.

For food safety, the internal temperature of the fries should reach at least 160°F (71°C) to ensure the egg is fully cooked. Let them cool for at least 10 minutes before serving to achieve the perfect crisp texture.
