Tips for success
For the crispiest wraps, make sure the skillet is hot before adding the assembled wraps. Press down gently with a spatula to ensure even browning. Don't rush the toasting; let each side develop a deep golden color before flipping.
If you're making multiple wraps, keep the finished ones warm in a low oven while you toast the rest. This prevents them from becoming soggy while waiting.
The garlic yogurt sauce can be as simple as Greek yogurt mixed with minced garlic, lemon juice, and salt. For extra flavor, add a drizzle of olive oil and a pinch of sumac. If the sauce is too thick, thin it with a little water or milk. Taste and adjust the seasoning—it should be tangy and garlicky, but not overpowering. Serve extra sauce on the side for dipping, as the video suggests.
Variations
- Spicy Harissa Version: Replace the red pepper paste with harissa paste and add a pinch of cayenne to the marinade. The extra heat pairs well with the cool garlic sauce. For the salad, add a few slices of fresh chili for an extra kick.
- Grilled Chicken Option: Instead of searing in a skillet, grill the marinated chicken cubes on skewers over medium-high heat for 8-10 minutes, turning occasionally, until charred and cooked through. This adds a smoky flavor that complements the spices.
- Vegetarian Chickpea Wrap: Swap the chicken for 2 cups of cooked chickpeas. Toss the chickpeas with the same marinade and roast in a 400°F oven for 20-25 minutes until crispy. Assemble the wraps as directed, using the roasted chickpeas in place of the chicken.
- Creamy Avocado Twist: Add sliced avocado to the assembled wrap along with the salad. The creamy avocado enhances the garlic sauce and adds extra richness. You can also mash some avocado into the sauce for a greener, more luxurious spread.
Storage and make-ahead
- Fridge
- Store leftover wraps in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet to restore crispness.
- Freezer
- Assembled wraps can be frozen for up to 1 month. Wrap tightly in plastic wrap and foil. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat frozen or refrigerated wraps in a skillet over medium heat for 3-4 minutes per side, or until heated through and crisp. Avoid microwaving.
Store leftover wraps in an airtight container in the refrigerator for up to 2 days. The pita will soften, but the flavors will remain. To reheat, place the wraps in a dry skillet over medium heat for 2 to 3 minutes per side, or until heated through and crisp again.
Avoid microwaving, as it makes the pita rubbery. If storing components separately, keep the salad, chicken, and sauce in separate containers and assemble fresh when ready to eat.
The chicken can be marinated up to 24 hours ahead, making this a great option for meal prep. The chopped salad can be prepared a few hours in advance and kept in the refrigerator, but add the dressing just before serving to keep it crisp.
The garlic yogurt sauce can be made up to 3 days ahead. Assemble and toast the wraps just before serving for the best texture. If you need to prepare fully cooked wraps ahead, reheat them in a skillet to restore crispness.
Serving ideas
Serve the wraps whole or sliced diagonally, with extra garlic yogurt sauce on the side for dipping. A side of pickled vegetables or a simple green salad would round out the meal. These wraps are also great for lunchboxes—just keep the sauce separate and add it right before eating. For a heartier dinner, serve with a bowl of lentil soup or a plate of roasted potatoes.
For a party, cut the wraps into smaller pieces and serve as appetizers. Offer extra sauce and a sprinkle of fresh parsley on top. The wraps are best enjoyed warm, when the pita is crisp and the filling is hot.
If you have leftovers, reheat them in a skillet to bring back some of the crunch. The combination of charred chicken, fresh vegetables, and creamy garlic sauce is satisfying on its own or with a side of rice.

Crispy Chicken Shish Wrap with Garlic Whip

Ingredients
- 2 lb boneless skinless chicken breasts, cut into 1-inch cubes
- 2 tbsp Greek yogurt
- 2 tbsp lemon juice
- 1 tbsp red pepper paste
- 1 tsp sumac
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 cup diced cucumber
- 1 cup diced tomatoes
- 1/2 cup finely chopped red onion
- 1/2 cup diced bell pepper
- 1/4 cup chopped fresh parsley
- 1 tsp sumac
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 4 large pita breads
- 1 cup garlic yogurt sauce (store-bought or homemade)
- 2 tbsp olive oil, for brushing
Instructions
- In a large bowl, combine the Greek yogurt, lemon juice, red pepper paste, sumac, ground coriander, ground cumin, smoked paprika, garlic powder, and dried oregano. Add the chicken cubes and toss until every piece is well coated. Cover the bowl and refrigerate for at least 2 hours, or up to overnight.
- In a medium bowl, combine the diced cucumber, diced tomatoes, chopped red onion, diced bell pepper, and chopped parsley. Add the sumac, olive oil, and lemon juice. Toss well to coat. Set aside at room temperature while you cook the chicken.
- Heat a large skillet over high heat until smoking hot. Add the marinated chicken cubes in a single layer (work in batches if needed). Sear for 8 to 10 minutes, turning occasionally, until deeply charred on all sides and cooked through. The internal temperature should reach 165°F (74°C). Transfer to a plate and let rest.
- Warm the pita breads in a dry skillet over medium heat for about 30 seconds per side, or until pliable. Stack them on a plate and cover with a clean kitchen towel to keep them soft.
- Lay a warm pita on a work surface. Spread about 1/4 cup of garlic yogurt sauce down the center. Top with a quarter of the charred chicken and a generous spoonful of the chopped salad. Fold in the sides and roll tightly to enclose the filling.
- Brush the outside of each wrap with olive oil. Heat a clean skillet over medium-high heat. Place the wraps seam-side down and toast for 2 to 3 minutes per side, until golden brown and crispy. Press gently with a spatula to ensure even browning.
- Remove the wraps from the skillet and let them cool for 2 minutes. Slice each wrap diagonally in half. Serve immediately with extra garlic yogurt sauce on the side for dunking.
