Tips for success
For the crispiest wraps, make sure the tortillas are not too thick and that the griddle is hot enough to toast quickly without burning. If you have a cast-iron skillet, it works beautifully for toasting—it holds heat evenly and gives a nice crust.
Press down gently with a spatula while toasting to ensure even browning. To keep the wraps warm while you toast the rest, place them on a baking sheet in a low oven.
The garlic sauce can be made ahead and stored in the refrigerator for up to a week. If you want a thinner sauce, whisk in a little water or lemon juice. For extra flavor, add a pinch of cayenne or a dash of hot sauce.
When assembling, spread the sauce generously on the tortilla—it acts as a glue to hold the fillings together. Serve any extra sauce on the side for dipping; it’s also great with fries or roasted vegetables.
Variations
- Spicy Harissa Version: Add 1-2 tablespoons of harissa paste to the marinade for a smoky, spicy kick. Swap the garlic sauce for a harissa-yogurt sauce by mixing 1/2 cup Greek yogurt with 1 tablespoon harissa and a squeeze of lemon.
- Vegetarian Falafel Wrap: Replace the chicken with crispy falafel balls. Use the same garlic sauce and toppings, and toast the wraps as directed. The falafel adds a hearty texture and pairs well with the sumac onions.
- Chicken Shawarma Bowl: Skip the tortillas and serve the chicken, fries, and toppings over a bed of rice or lettuce. Drizzle with garlic sauce and enjoy as a bowl meal. This is a great option for meal prep.
- Extra Crunchy Wrap: Add a layer of crushed potato chips or extra crispy fried onions inside the wrap before toasting. This adds an extra layer of crunch that contrasts beautifully with the tender chicken and creamy sauce.
Storage and make-ahead
- Fridge
- Store leftover wraps in an airtight container in the refrigerator for up to 3 days. Keep the garlic sauce separate and add after reheating.
- Freezer
- Freeze assembled but untoasted wraps in plastic wrap and a freezer bag for up to 2 months. Thaw overnight in the refrigerator before toasting.
- Reheat
- Reheat frozen or refrigerated wraps in a dry skillet over medium heat, turning often, until hot and crispy.
Store leftover wraps in an airtight container in the refrigerator for up to 3 days. To reheat, place them in a dry skillet over medium heat, turning occasionally, until warmed through and crisp again. Alternatively, use an air fryer at 350°F (175°C) for 5-7 minutes. Avoid microwaving, as it will make the tortilla soggy. Keep the garlic sauce separate if possible, and add it after reheating.
The chicken can be marinated up to 24 hours in advance, which deepens the flavor. The garlic sauce can be made up to a week ahead. Sumac onions can be prepared a few hours ahead and kept in the refrigerator.
You can also cook the chicken and fries ahead of time, but the wraps are best assembled and toasted just before serving to maintain crispness. If you have leftover components, they can be stored separately and assembled later.
Serving ideas
Serve these wraps hot off the griddle, cut in half to show off the colorful filling. A side of extra garlic sauce for dipping is essential—the creamy, tangy sauce complements the spicy chicken and crispy fries perfectly.
For a complete meal, add a simple green salad or a bowl of hummus and pita chips. The wraps are hearty enough to stand alone, but they also pair well with a cold beer or a sparkling lemonade.
These wraps are perfect for casual dinners, game-day gatherings, or any time you crave something satisfying and handheld. They’re also great for meal prep—assemble the wraps without toasting, then toast them individually when ready to eat. Let the wraps rest for a minute after toasting so the filling sets slightly, making them easier to handle. Garnish with extra sumac onions or fresh herbs if desired.

- 2 medium tomatoes, sliced
- 1 cup garlic sauce (recipe below)
- 1/2 cup mayonnaise
- 3 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1/2 tsp smoked paprika
Instructions
- In a large bowl, combine the sliced chicken thighs with garlic, mayonnaise, olive oil, smoked paprika, cumin, coriander, turmeric, red chili flakes, lemon juice, and salt. Mix well until every piece is coated. Cover and refrigerate for at least 1 hour.
- Preheat the oven to 425°F (220°C). Spread the frozen fries on a baking sheet in a single layer. Bake according to package directions until golden and crispy, about 20-25 minutes. Keep warm.
- In a small bowl, stir together the mayonnaise, minced garlic, lemon juice, and smoked paprika. Set aside. This sauce will be used for spreading on the tortillas and for dipping.
- Heat a large skillet over medium-high heat. Add the marinated chicken in a single layer (work in batches if needed). Cook, stirring occasionally, until the chicken is browned and cooked through, about 6-8 minutes. The internal temperature should reach 165°F (74°C).
- Warm the tortillas in a dry skillet or microwave. Spread a generous layer of garlic sauce over each tortilla. Top with sumac onions, cooked chicken, crispy fries, pickles, and tomato slices.
- Fold in the sides of each tortilla, then roll tightly from the bottom up. Place the wraps seam-side down on a hot griddle or skillet over medium heat. Toast for 2-3 minutes per side, until golden brown and crispy.
