Tips for success
For the crispiest wraps, make sure the griddle is hot before adding the wraps. A medium-high heat gives you a deep golden crust without burning the tortilla.
Press down gently with a spatula to ensure even contact. If you're making multiple wraps, keep the toasted ones warm in a 200°F (93°C) oven while you finish the rest. This keeps them crisp without drying out.
The garlic sauce can be thinned with a little extra buttermilk or water if you prefer a drizzle-able consistency.
For a more intense garlic flavor, add a finely grated raw garlic clove to the sauce and let it sit for 10 minutes before using. The sauce also works as a dip for fries or a spread for other sandwiches, so make a double batch if you like.
Variations
- Spicy Harissa Version: Add 1 tablespoon of harissa paste to the marinade for a smoky, spicy kick. Replace the garlic sauce with a harissa-yogurt sauce by mixing 2 tablespoons harissa with 1/2 cup plain yogurt. This version is bold and fiery, perfect for heat lovers.
- Chicken Breast Option: Substitute chicken breasts for thighs, but reduce the cooking time to avoid dryness. Slice the breasts thinly and cook for 5-6 minutes total, until they reach 165°F (74°C). The marinade helps keep them moist, but be careful not to overcook.
- Vegetarian Falafel Wrap: Replace the chicken with crispy falafel balls, and skip the meat entirely. Add extra pickles and tomatoes, and use the same garlic sauce. This is a satisfying meatless version that still delivers on texture and flavor.
- Crispy Halloumi Wrap: Swap the chicken for slices of halloumi cheese, seared in a hot pan until golden and crispy. The salty, squeaky cheese pairs beautifully with the sumac onions and garlic sauce. This version is rich and indulgent, perfect for vegetarians.
Storage and make-ahead
- Fridge
- Store leftover wraps in an airtight container in the fridge for up to 2 days. Keep the garlic sauce in a separate jar.
- Freezer
- Assembled but untoasted wraps can be frozen for up to 1 month. Thaw overnight in the fridge, then toast as directed.
- Reheat
- Reheat toasted wraps in a dry skillet over medium heat for 2-3 minutes per side until hot and crisp. The sauce can be served cold or at room temperature.
Store leftover wraps in an airtight container in the refrigerator for up to 2 days. To reheat, place them in a dry skillet over medium heat for a few minutes per side until warmed through and crisp again.
The sauce can be stored separately in a jar in the fridge for up to 1 week. If the wraps become soggy after refrigeration, reheat them in the oven or toaster oven to restore some crunch.
The chicken can be marinated up to 24 hours in advance, and the garlic sauce can be made up to 3 days ahead. Sumac onions can also be prepared a day ahead and kept in the fridge.
To make the wraps ahead, assemble them but do not toast; wrap each in plastic wrap and refrigerate for up to 8 hours. When ready to serve, toast them on the griddle as directed. This makes them great for meal prep or packed lunches.
Serving ideas
Serve the wraps immediately after toasting, cut in half on a diagonal to show the colorful layers. The extra garlic sauce is essential for dipping—each bite should be dunked generously. For a complete meal, add a side of extra fries or a simple green salad with a lemony vinaigrette. These wraps are hearty enough to be a main course on their own.
For a casual gathering, set up a shawarma bar with the cooked chicken, warm tortillas, and all the toppings, letting guests build their own wraps. This is a fun, interactive way to serve a crowd. The wraps also travel well, making them a great option for picnics or game-day snacks. Just keep the sauce separate until serving to avoid sogginess.

Crispy Chicken Shawarma Wrap with Garlic Sauce

Ingredients
- 2 lb boneless, skinless chicken thighs, thinly sliced
- 4 cloves garlic, minced
- 1/4 cup mayonnaise
- 2 tbsp olive oil
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/2 tsp red chili flakes
- 2 tbsp fresh lemon juice
- 2 tbsp clarified butter
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tbsp buttermilk
- 1 tbsp hot sauce
- 1 tbsp ketchup
- 1 tsp garlic powder
- 4 large flour tortillas (10-inch)
- 1 cup sumac onions (see notes)
- 2 cups hot spiced french fries
- 1/2 cup sliced pickles
- 1 cup diced tomatoes
Instructions
- In a large bowl, combine the sliced chicken thighs with the minced garlic, mayonnaise, olive oil, smoked paprika, ground cumin, ground coriander, ground turmeric, red chili flakes, and fresh lemon juice. Stir until every piece is well coated. Cover the bowl and refrigerate for at least 1 hour, or up to 24 hours for deeper flavor.
- In a small bowl, whisk together the mayonnaise, sour cream, buttermilk, hot sauce, ketchup, and garlic powder until smooth and pink. Cover and refrigerate until ready to use.
- Heat the clarified butter in a large skillet over medium-high heat until shimmering. Add the marinated chicken in a single layer (work in batches if needed) and cook without stirring for 3 to 4 minutes until browned on one side. Flip and cook for another 4 to 5 minutes until the chicken is cooked through and caramelized at the edges. Remove from the heat.
- Warm the tortillas one at a time in a dry skillet over medium heat for about 20 seconds per side, until pliable and lightly toasted. Stack them on a plate and cover with a clean kitchen towel to keep warm.
- Lay a warm tortilla on a clean work surface. Spread a generous spoonful of the garlic sauce over the center, leaving a border around the edges. Top with a handful of sumac onions, a portion of the seared chicken, a handful of hot spiced fries, a few pickle slices, and some diced tomatoes. Fold in the sides and roll tightly into a snug wrap.
- Heat a griddle or large cast-iron skillet over medium-high heat. Place the wraps seam-side down on the hot surface and toast for 2 to 3 minutes per side, until golden brown and crispy all over. Press gently with a spatula to ensure even browning.
- Transfer the toasted wraps to a cutting board and let rest for 2 minutes. Using a sharp knife, slice each wrap in half on a diagonal. Serve immediately with the remaining garlic sauce on the side for dipping.
