Tips for success
For the crispiest wraps, use a heavy skillet or griddle and make sure it's hot before adding the wraps. Press down gently with a spatula to ensure even browning.
Don't rush this step—the difference between a soft wrap and a crispy one is those extra minutes on the heat. If making multiple wraps, keep the finished ones warm in a low oven while toasting the rest.
The sumac onions are a key flavor component. Toss thinly sliced red onions with sumac and a pinch of salt, then let them sit for a few minutes to soften slightly.
This mellows the onion's sharpness and infuses it with tangy, citrusy notes. For extra brightness, add a squeeze of lemon juice to the onions just before serving.
Variations
- Spicy Harissa: Add 1-2 tablespoons of harissa paste to the marinade for a smoky, spicy kick. Drizzle extra harissa over the filling before rolling for a fiery finish.
- Crispy Chickpea: Swap the chicken for crispy roasted chickpeas. Toss chickpeas with the same spices and roast until crunchy. Use vegan garlic sauce and omit pickles for a plant-based version.
- Cheesy Melt: Add a handful of shredded mozzarella or cheddar to the wrap before toasting. The cheese melts and binds the filling, creating a gooey, indulgent center.
- Herb Yogurt: Replace the garlic sauce with a mixture of Greek yogurt, minced garlic, lemon juice, and chopped fresh herbs like parsley or mint. This adds a cool, tangy contrast.
Storage and make-ahead
- Fridge
- Store leftover wraps in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet to restore crispness.
- Freezer
- Freeze assembled but untoasted wraps for up to 2 months. Thaw overnight, then toast in a skillet until hot and crispy.
- Reheat
- Reheat refrigerated wraps in a dry skillet over medium heat for 2-3 minutes per side until hot and crispy. Alternatively, bake at 350°F (175°C) for 10 minutes.
Leftover wraps can be stored in an airtight container in the refrigerator for up to 3 days. To keep the exterior crisp, reheat in a skillet over medium heat rather than microwaving.
The filling may soften the tortilla over time, so for best texture, reheat the wraps whole and then slice just before serving.
The chicken can be marinated up to 24 hours in advance, which deepens the flavor. The sumac onions can also be prepared a day ahead and stored in the refrigerator. The garlic sauce can be made ahead and kept chilled. Cook the fries and chicken just before assembling, as reheated fries lose their crispness.
Serving ideas
Serve the wraps warm, cut in half on a diagonal, with extra garlic sauce on the side for dipping. The contrast of the crunchy tortilla, juicy chicken, and creamy sauce is the highlight.
Pair with a simple salad or pickled vegetables for a complete meal. The wraps are substantial enough to stand alone as a satisfying dinner.
For a casual gathering, slice the wraps into smaller pieces and serve as appetizers. Provide extra sauce and perhaps additional sumac onions for guests to add. The wraps are best enjoyed immediately after toasting, but they can be held in a warm oven for up to 30 minutes without losing too much crispness.

Crispy Chicken Shawarma Wrap with Seasoned Fries

Ingredients
- 2 lb boneless skinless chicken thighs
- 4 cloves garlic, minced
- 1/2 cup mayonnaise
- 2 tbsp olive oil
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/2 tsp chili powder
- 2 tbsp lemon juice
- 4 cups frozen seasoned french fries
- 4 large flour tortillas or flatbreads
- 1 cup garlic sauce (toum or store-bought)
- 1 cup thinly sliced red onions tossed with 1 tbsp sumac
- 1/2 cup sliced dill pickles
- 1 cup diced tomatoes
Instructions
- In a large bowl, combine the chicken thighs, minced garlic, mayonnaise, olive oil, smoked paprika, garlic powder, ground cumin, ground coriander, ground turmeric, chili powder, and lemon juice. Mix well until every piece is coated. Cover and refrigerate for at least 1 hour.
- While the chicken marinates, cook the frozen seasoned fries according to package directions, typically in a 425°F (220°C) oven for 20 to 25 minutes until golden and crispy. Keep warm.
- Heat a large skillet or griddle over medium-high heat. Add the marinated chicken in a single layer. Cook without moving for 4 to 5 minutes until deeply browned, then flip and cook another 4 to 5 minutes until the internal temperature reaches 165°F (74°C). Transfer to a cutting board and let rest for 5 minutes before slicing into strips.
- Wipe the skillet clean and place over medium heat. Warm each tortilla or flatbread for 20 to 30 seconds per side until pliable and lightly toasted. Stack and cover with a clean kitchen towel to keep soft.
- Lay a warm flatbread on a work surface. Spread a generous layer of garlic sauce down the center. Top with sliced chicken, a handful of seasoned fries, sumac onions, pickles, and diced tomatoes. Fold in the sides and roll tightly, tucking the filling as you go.
- Heat the same skillet over medium heat. Place the wraps seam-side down and toast for 2 to 3 minutes per side, pressing gently with a spatula, until golden brown and crispy all over. The filling should be hot and the exterior crackly.
- Transfer the toasted wraps to a cutting board and let rest for 2 minutes. This helps the filling settle and makes slicing cleaner. Slice each wrap in half on a diagonal, if desired.
- Serve the wraps warm with extra garlic sauce on the side for dipping. The contrast of crunchy exterior, juicy chicken, and creamy sauce is the finishing touch.
