Tips for success
For the crispiest chicken, make sure the oil is hot enough before adding the cutlets—test with a pinch of breadcrumbs; they should sizzle immediately.
Use a meat thermometer to ensure the chicken reaches 165°F (74°C) without overcooking. Let the breaded cutlets rest for 5 minutes before frying to help the coating adhere better.
When broiling the cheese, keep a close eye on it—broilers vary in intensity, and the cheese can go from perfectly bubbly to burnt in seconds. If you like extra sauce, warm the marinara separately and serve it alongside for dipping.
For a more indulgent burger, add a few slices of prosciutto or a drizzle of balsamic glaze, though the classic version is already outstanding.
Variations
- Spicy Chicken Parm Burger: Add 1/2 teaspoon of red pepper flakes to the breadcrumb mixture and a drizzle of hot honey over the finished burger for a sweet-heat twist that complements the savory chicken and marinara.
- Eggplant Parm Burger: Replace the chicken with thick slices of eggplant, salted and patted dry, then bread and fry the same way. The eggplant becomes tender and creamy, pairing beautifully with the marinara and mozzarella.
- Mushroom and Swiss Burger: Sauté sliced mushrooms with garlic and thyme, then pile them onto the fried chicken cutlet before adding the marinara and mozzarella. The earthy mushrooms add depth and a meaty texture.
- BBQ Chicken Parm Burger: Swap the marinara for a smoky barbecue sauce and top with smoked gouda or cheddar instead of mozzarella. Add crispy fried onions for extra crunch and a tangy, sweet flavor profile.
Storage and make-ahead
- Fridge
- Store leftover chicken cutlets and sauce separately in the refrigerator for up to 3 days. Reheat the cutlets in a 350°F oven to maintain crispness.
- Freezer
- Freeze breaded, uncooked chicken cutlets in a single layer for up to 2 months. Fry from frozen, adding 2-3 minutes to the cooking time.
- Reheat
- Reheat leftover assembled burgers in a 350°F oven for 10 minutes, or until hot and the cheese is melted. Avoid microwaving to keep the coating crisp.
Leftover chicken cutlets can be stored in an airtight container in the refrigerator for up to 3 days. Reheat them in a 350°F (175°C) oven for 10 minutes to restore crispiness.
The assembled burgers are best eaten fresh, as the buns will become soggy. Store the components separately if you plan to have leftovers.
You can bread the chicken cutlets up to 24 hours in advance and keep them covered in the refrigerator. Let them sit at room temperature for 15 minutes before frying. The marinara sauce can be made ahead and reheated. Assemble and broil the burgers just before serving for the best texture.
Serving ideas
Serve these chicken Parmigiana burgers hot, straight from the broiler, with the cheese still bubbling. Pair them with a crisp green salad or a side of garlicky roasted potatoes. The juicy burger and crunchy coating are satisfying on their own, but a side of marinara for dipping is always a welcome addition.
For a complete meal, serve with a side of spaghetti tossed in extra marinara or a simple arugula salad with lemon vinaigrette. The bright, peppery arugula cuts through the richness of the cheese and fried chicken.
These burgers are also great for game-day gatherings or casual dinners with friends—just be prepared for everyone to want seconds.

Crispy Chicken Parmigiana Burger with Melty Mozzarella

Ingredients
- 2 chicken breast cutlets (6 oz each)
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup Italian seasoned breadcrumbs
- 1/2 cup grated parmesan cheese
- 2/3 cup San Marzano marinara sauce
- 6 oz fresh mozzarella, sliced
- 2 brioche burger buns, split
- 2 tbsp garlic butter, softened
- 1/4 cup fresh basil leaves
- 1/2 cup vegetable oil, for frying
Instructions
- Place each chicken cutlet between two sheets of plastic wrap and pound to an even 1/2-inch thickness. Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with parmesan. Dredge each cutlet in flour, shake off excess, dip in egg, then press firmly into the breadcrumb mixture until fully coated.
- Heat the vegetable oil in a large skillet over medium-high heat until shimmering. Carefully lay the breaded cutlets in the hot oil and fry for 3 minutes per side, until golden brown and crispy. Transfer to a paper-towel-lined plate to drain.
- Preheat the broiler. Place the fried cutlets on a baking sheet. Spoon the marinara sauce over each cutlet, spreading to cover. Arrange the mozzarella slices on top, overlapping slightly.
- Place the baking sheet under the broiler and cook for 2-3 minutes, until the mozzarella is melted, bubbly, and lightly browned in spots. Keep a close eye to prevent burning.
- Spread the cut sides of the brioche buns with garlic butter. Toast them in a dry skillet over medium heat until golden and fragrant, about 1-2 minutes.
- Place a cheesy chicken cutlet on each bottom bun. Top with fresh basil leaves, then cover with the top bun. Slice in half if desired and serve immediately.
