Before you start

Before you start, gather all ingredients and equipment. Line a baking sheet with parchment paper for shaping the nuggets, and set up a wire rack over another baking sheet for draining the fried nuggets.

Fill a deep skillet or Dutch oven with about 2 inches of oil and attach a deep-fry thermometer. Measure out all spices and batter ingredients. Chill the sparkling water until icy cold. Keep the ground chicken refrigerated until ready to mix.

Ingredients at a glance (16)
  • 1 lb ground chicken
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 cup all-purpose flour
  • 2 tbsp cornstarch
  • 1 tsp baking powder
  • 1 cup sparkling water, cold
  • 2 cups vegetable oil, for frying
  • 1/2 cup mayonnaise
  • 3 tbsp ketchup
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/4 tsp coarse black pepper

Instructions

Season, Shape, and Sauce

  1. Season and Shape the Nuggets
In a large bowl, combine the ground chicken, salt, black pepper, garlic powder, and onion powder. Mix gently with your hands or a fork until just combined — overmixing makes the nuggets dense. Shape the mixture into 1 1/2-inch nugget patties, about 1/2 inch thick. Place them on a parchment-lined baking sheet. Refrigerate for at least 15 minutes to help them hold together during coating and frying.
Look for The patties should be uniform in size and feel firm after chilling.
Tip Keep the nuggets small so they cook through evenly and stay juicy inside.
  2. Whisk the Cane Sauce
While the nuggets chill, make the Cane sauce. In a small bowl, whisk together the mayonnaise, ketchup, Worcestershire sauce, Dijon mustard, garlic powder, and coarse black pepper until smooth and evenly pink-orange. Cover and refrigerate until serving. The sauce can be made up to 2 days ahead.
Look for The sauce should be creamy and well combined, with a tangy aroma.
Tip For a spicier sauce, add a pinch of cayenne or a few drops of hot sauce.

The seasoned ground chicken should be gently mixed and shaped into uniform nuggets. After chilling, they should be firm to the touch. The Cane sauce should be smooth, creamy, and a uniform pink-orange color. Smell the sauce—it should be tangy and slightly sweet.

Batter, Fry, and Crisp

  1. Prepare the Crispy Batter
In a shallow dish, whisk together the all-purpose flour, cornstarch, and baking powder. Gradually whisk in the cold sparkling water until the batter is smooth and about the consistency of thin pancake batter. Keep the batter cold — this helps create a lighter, crispier crust. If it thickens while sitting, add a splash more sparkling water.
Look for The batter should be lump-free and coat the back of a spoon evenly.
Tip Use ice-cold sparkling water for the best crunch; the bubbles create airy pockets in the crust.
  2. Heat the Frying Oil
Pour the vegetable oil into a deep skillet or Dutch oven, about 2 inches deep. Heat over medium-high until the oil reaches 350°F (175°C) on a deep-fry thermometer. While the oil heats, set a wire rack over a baking sheet. Line a plate with paper towels for draining.
Look for The oil should shimmer and a tiny bit of batter dropped in sizzles immediately.
Tip Maintain the oil temperature between 325°F and 350°F (163–175°C) for even cooking.
  3. Coat the Chilled Nuggets
Working with a few nuggets at a time, dip each chilled nugget into the batter, letting the excess drip off. Use a fork or tongs to transfer them to the hot oil. Do not crowd the pan — fry in batches of about 6 nuggets at a time to keep the oil temperature steady.
Look for The batter should cling evenly to each nugget, with no bare spots.
Tip Keep the remaining nuggets in the fridge while frying so they stay cold.
  4. Fry Until Golden and Cooked Through
Fry the nuggets for 3 to 4 minutes per side, turning occasionally with tongs, until the crust is deep golden brown and crisp. The internal temperature of the chicken must reach 165°F (74°C) on an instant-read thermometer. Transfer the cooked nuggets to the prepared wire rack or paper towel-lined plate. Repeat with the remaining nuggets, letting the oil return to 350°F between batches.
Look for The crust should be deeply golden and crackle when touched; the center should be steaming hot.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Check the temperature of the thickest nugget to be sure it has reached 165°F (74°C).

The batter should be smooth and cold, with the consistency of thin pancake batter. When the nuggets hit the oil, they should sizzle immediately and the batter should puff up and turn golden.

The oil temperature stays between 325°F and 350°F. The cooked nuggets should be deeply golden and crisp.

Rest and Serve

  1. Drain and Rest the Nuggets
Let the fried nuggets rest on the wire rack for 2 to 3 minutes. This allows the crust to set and any excess oil to drip off, keeping the nuggets crisp. While they rest, give the Cane sauce a quick stir and spoon it into a small serving bowl.
Look for The nuggets should feel firm and crisp, with no greasy residue.
Tip Resting on a wire rack, not paper towels, keeps the underside crisp.
  2. Serve with Cane Sauce
Arrange the warm nuggets on a serving platter with the bowl of Cane sauce alongside. Serve immediately while the crust is at its crispiest. To eat, dip each nugget deep into the sauce and pull apart to reveal the juicy, steaming chicken inside.
Look for The sauce should be creamy and tangy, the nuggets golden and inviting.
Tip For a pretty presentation, sprinkle with chopped parsley or chives if desired (not in the video).

After frying, the nuggets rest on a wire rack to keep the underside crisp. The sauce is brought to room temperature or served chilled. The final dish should look irresistible: golden nuggets with a craggy crust, a bowl of tangy sauce for dipping, and steam rising from the first cut.

Common mistakes

One common mistake is overcrowding the pan, which drops the oil temperature and leads to soggy, greasy nuggets. Another is overmixing the chicken mixture, which makes the nuggets dense and tough.

Also, be sure to chill the shaped nuggets—if they are too warm, they may fall apart in the oil. Finally, don't skip the thermometer; guessing the oil temperature can result in burnt or undercooked nuggets.

How to tell it’s done

The nuggets are done when they are deep golden brown on all sides and the internal temperature reaches 165°F (74°C) on an instant-read thermometer. The crust should feel firm and crisp, and the chicken inside should be steaming hot and no longer pink.

If you don't have a thermometer, cut one open—the center should be opaque and juicy, not translucent. Let them rest for 2-3 minutes before serving to allow the crust to set.

  • Poultry: 165°F (74°C) in the thickest part
