Tips for success
To get the best char on the kebabs, make sure the oven is fully preheated and the baking sheet is placed on the top rack. If you want even more char, you can finish them under the broiler for a minute or two, but watch closely to avoid burning.
The key is to have a high heat that sears the outside while keeping the inside juicy. Also, letting the kebabs rest for a few minutes after roasting helps them retain their juices, making them even more succulent.
When rolling the wrap, don't overfill it. A good rule of thumb is to leave about an inch of pita on each side so you can fold it in securely. Toasting the wrap seam-side down first ensures that the seal is crisp and holds together.
Use a heavy skillet and press gently with a spatula to get an even golden crust. If you have a panini press, it works beautifully for this step, giving you crispy, grill-marked wraps in minutes.
Variations
- Spicy Harissa Version: Add 1-2 tablespoons of harissa paste to the chicken mixture for a spicy, smoky kick. Reduce the smoked paprika to 1/2 tablespoon and balance with a pinch of cinnamon. Serve with a dollop of harissa-spiked toum for extra heat.
- Lamb Kebab Wraps: Substitute ground lamb for the chicken thighs. Add 1 teaspoon of ground allspice and 1/2 teaspoon of ground cinnamon to the mixture. Cook to an internal temperature of 160°F (71°C) for ground meat. The rich lamb pairs beautifully with the garlic toum and pickles.
- Vegetarian Falafel-Style: Replace the chicken with a mixture of mashed chickpeas, grated onion, parsley, garlic, and spices. Form into patties and pan-fry until golden and crispy. Serve in pita with toum and pickles for a meatless version that's just as satisfying.
- Grilled Summer Version: Instead of roasting, grill the kebabs on a hot grill or grill pan for 4-5 minutes per side, until charred and cooked through. The smoky char from the grill adds an incredible depth of flavor that's perfect for summer cookouts.

- Freezer
- The cooked kebabs can be frozen for up to 2 months. Cool completely, then wrap in plastic wrap and place in a freezer bag.

Leftover kebabs can be stored in an airtight container in the refrigerator for up to 3 days. Keep the wraps assembled, but store them separately from the pitas if possible to prevent sogginess.
To reheat, place the wraps in a dry skillet over medium heat for 2-3 minutes per side, or until heated through and crispy. Alternatively, you can reheat the kebabs in the oven at 350°F (175°C) for 10 minutes, then assemble fresh wraps.
The chicken kebab mixture can be prepared up to 24 hours in advance and stored in the refrigerator. This allows the flavors to meld and makes weeknight dinners a breeze.
You can also shape the kebabs and keep them on the parchment-lined baking sheet, covered, in the fridge for up to 8 hours before roasting. The sumac onions and pickles can be made a day ahead as well. Just assemble and toast the wraps when ready to serve.
Serving ideas
These wraps are best served hot, right after toasting, when the pita is crispy and the filling is juicy. Slice them diagonally to show off the beautiful layers. They're perfect for a quick weeknight dinner, but also impressive enough for casual entertaining. Serve with extra toum on the side for dipping, and maybe a simple salad of cucumbers and tomatoes with a squeeze of lemon.
For a complete meal, pair the wraps with a bowl of lentil soup or a fresh tabbouleh salad. The tangy flavors of the sumac onions and pickles complement the smoky chicken beautifully. If you're serving a crowd, set up a build-your-own wrap bar with all the toppings and let everyone assemble their own. It's interactive, fun, and ensures everyone gets exactly what they want.

Crispy Chicken Kebab Wraps with Squeezed Onion

Ingredients
- 2 lb minced chicken thighs
- 1 finely chopped squeezed onion
- 1 finely diced squeezed red pepper
- 2 tbsp chopped fresh parsley
- 1 tbsp minced garlic
- 1 tbsp smoked paprika
- 1 tsp ground cumin
- salt to taste
- 2 tbsp olive oil
- 2 tbsp creamy toum garlic dip
- 4 warm pita flatbreads
- 1/2 cup sumac tossed red onions
- 1/2 cup sliced dill pickles
Instructions
- In a large bowl, combine the minced chicken thighs, finely chopped squeezed onion, finely diced squeezed red pepper, chopped fresh parsley, minced garlic, smoked paprika, ground cumin, and salt to taste. Use your hands or a spoon to mix until everything is evenly distributed and the mixture holds together when pressed.
- Line a baking sheet with parchment paper. Shape the chicken mixture into long, flat kebab fingers, about 1 inch thick and 4 to 5 inches long. Place them on the prepared baking sheet, leaving a little space between each kebab.
- Brush the shaped kebabs lightly with olive oil on all sides. This helps them brown and char beautifully in the oven.
- Heat the oven to 425°F (220°C). Roast the kebabs for 15 minutes, or until they are charred at the edges and cooked through. The internal temperature should reach 165°F (74°C).
- While the kebabs roast, warm the pita flatbreads in a dry skillet over medium heat for about 30 seconds per side, or until pliable and lightly toasted. Keep them covered with a clean kitchen towel to stay warm.
- Lay a warm pita flatbread on a clean work surface. Spread 1/2 tablespoon of creamy toum garlic dip evenly across the center of the pita, leaving a border around the edges.
- Scatter a few sumac tossed red onions and sliced dill pickles over the toum. The tangy pickles and bright onions will balance the rich chicken.
- Place two roasted chicken kebabs end-to-end in the center of the pita, over the toppings. The kebabs should be slightly overlapping to fit neatly.
- Fold the bottom of the pita over the filling, then fold in the sides and roll tightly into a compact wrap. The goal is a snug, secure roll that holds everything inside.
- Heat a dry skillet over medium-high heat. Place the wrap seam-side down and toast for 1-2 minutes, until golden and crispy. Turn and toast the other side for another 1-2 minutes.
- Transfer the toasted wrap to a cutting board and let it rest for 1 minute. Slice diagonally with a sharp knife to expose the juicy filling. Serve hot.
