Before you start

Before beginning, ensure all ingredients are measured and ready. If you are preparing the chicken cutlets from scratch, fry them until golden and set them aside. If using store-bought cutlets, warm them slightly if they have been refrigerated.

Grate your mozzarella cheese freshly, as pre-shredded cheese often contains additives that prevent it from melting as smoothly. Preheat your oven to 425°F (218°C) well in advance so it is at the correct temperature when you are ready to broil.

Ingredients at a glance (6)
  • 1 cup rigatoni pasta, cooked al dente
  • 1/2 cup spicy Calabrian vodka sauce
  • 1 tbsp pecorino romano, grated
  • 1 large panko-breaded chicken cutlet, fried
  • 1 Italian hero roll, hollowed and garlic-buttered
  • 1 cup mozzarella cheese, shredded

Instructions

Pasta Preparation

  1. Prepare the Pasta
In a large mixing bowl, combine the cooked al dente rigatoni with the spicy Calabrian vodka sauce and the grated pecorino romano cheese. Toss the mixture thoroughly until every piece of pasta is evenly coated in the creamy, spicy sauce. Ensure the pasta is warm before proceeding to the assembly stage.
Look for The pasta should be fully coated and appear glossy and vibrant orange from the sauce.
Tip If the pasta is cold, reheat it briefly in a skillet or microwave so it doesn't cool down the sandwich assembly.

The rigatoni should be thoroughly coated in the spicy vodka sauce, appearing glossy and uniform in color. The pasta should be warm and fragrant with the scent of the sauce and pecorino cheese. Check that the sauce is not too runny; it should be thick enough to cling to the rigatoni so it does not leak out of the sandwich during assembly.

Hero Assembly

  1. Assemble the Hero
Hollow out the center of the garlic-buttered Italian hero roll to create a sturdy vessel for the ingredients. Place the crispy panko-breaded chicken cutlet inside the roll. Carefully pile the prepared vodka rigatoni on top of the chicken. Finally, top the pasta generously with the shredded mozzarella cheese, ensuring it covers the entire surface for even melting.
Look for The bread should be packed tightly enough to hold the pasta without collapsing.
Tip Use a serrated knife to remove the soft inner bread of the roll to create more room for the filling.

The roll should be hollowed out to create a deep, U-shaped cradle. The chicken cutlet should sit flat at the bottom, providing a solid base. The pasta is then piled neatly into the center, topped with a generous layer of shredded mozzarella. Ensure that the cheese covers the pasta completely to prevent it from drying out in the intense heat of the broiler.

Broiling and Finishing

  1. Broil and Serve
Place the assembled sandwich on a baking sheet and broil in an oven preheated to 425°F (218°C) for approximately 3 minutes, or until the mozzarella is bubbling and golden brown. Ensure the chicken reaches an internal temperature of at least 165°F (74°C) throughout. Carefully remove from the oven, slice the sandwich in half, and serve while the cheese is still hot and stretchy.
Look for Watch the cheese closely to prevent burning; it should be bubbly and melted with slight golden spots.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the bread starts to brown too quickly, move the baking sheet to a lower rack in the oven.

The sandwich is ready when the mozzarella is transformed into a bubbling, golden-brown crust. The bread should be toasted and crisp, and the entire assembly should be hot throughout.

Once pulled from the oven, allow it to sit for just a moment before slicing in half with a serrated knife to reveal the layered cross-section of pasta, chicken, and gooey cheese.

Common mistakes

A common mistake is overfilling the roll, which makes it difficult to slice and eat. Use the hollowed space effectively but do not force too much pasta into the bread. Another mistake is using too much sauce, which can make the bread soggy.

A thin, even coating on the pasta is sufficient. Finally, do not walk away from the oven during the broiling phase, as the high heat can turn the cheese from perfectly melted to burnt in seconds.

How to tell it’s done

The dish is done when the mozzarella cheese is melted, bubbling, and shows light golden-brown spots on the surface. The internal temperature of the chicken must reach at least 165°F (74°C).

Because the pasta and chicken are pre-cooked, the broiling step is primarily for melting the cheese and heating the components through, so keep a close eye on the oven to avoid burning the bread or the cheese.

  • Poultry: 165°F (74°C) in the thickest part
