Before you start

Start by setting up your workspace with a clean cutting board and a meat mallet. Ensure your chicken breasts are thoroughly patted dry with paper towels. Having everything ready before you begin the actual cooking process will make the workflow much smoother and less stressful.

Make sure you have a plate ready for the finished chicken and a set of tongs nearby for safe handling in the hot skillet. Keep your workspace clean and organized to ensure the best results for this classic dish.

Ingredients at a glance (4)
  • 4 pieces boneless skinless chicken breasts
  • 4 slices deli ham
  • 4 slices Swiss cheese
  • fresh parsley for serving

Instructions

Pounding and Rolling

  1. Prepare the chicken
Place each chicken breast between two sheets of plastic wrap. Using a meat mallet, gently pound the chicken until it is an even thickness of about 1/4 inch. Remove the plastic wrap and place one slice of ham and one slice of Swiss cheese on each piece of chicken, then roll it up tightly.
Look for The chicken should be thin enough to roll easily without tearing.
Tip Keep the chicken cold in the refrigerator until ready to roll to make the process easier.

The chicken should be thin and even, with the ham and cheese tucked securely inside. The rolls should feel firm, and there should be no significant gaps where the filling might escape.

If the chicken seems too loose, ensure the edges are tucked well to keep the roll tight and uniform during the cooking stage.

Cooking

  1. Cook the chicken
Heat a large skillet over medium heat. Place the chicken rolls in the skillet and cook, turning occasionally, until the exterior is golden brown and the internal temperature reaches 165°F (74°C).
Look for The chicken should be deep golden brown and crispy on all sides.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Ensure the pan is hot before adding the chicken to help develop a good crust.

The chicken should be cooking steadily in the skillet. The exterior should transition from pale to a deep, even golden brown. Ensure the heat is not too high, which would burn the surface before the chicken is cooked through. The cheese should start to soften and melt as the internal temperature rises.

Resting and Serving

  1. Rest and serve
Remove the chicken from the skillet and place it on a clean plate. Allow the chicken to rest for at least 5 minutes before slicing. Garnish with fresh chopped parsley before serving hot.
Look for The juices should appear clear when the chicken is sliced.
Tip Use a sharp knife to avoid crushing the crispy exterior while slicing.

The chicken should look crispy and golden on the outside. After resting, the exterior should remain firm, and the interior should be juicy and hot. When sliced, the cheese should be melted and creamy, holding the ham in place against the tender chicken breast. The parsley garnish should be bright and fresh.

Common mistakes

A common mistake is overcrowding the skillet, which lowers the temperature and prevents the chicken from developing a proper crust. Work in batches if necessary to keep the skillet from becoming too crowded.

Another error is not securing the chicken rolls properly; if they are not rolled tightly, the cheese will leak out during cooking. Ensure the rolls are firm and tight before placing them into the hot skillet to cook.

How to tell it’s done

The chicken is done when the internal temperature reaches 165°F (74°C) as measured by a meat thermometer inserted into the thickest part of the roll. The exterior should be a deep, uniform golden brown color, and the cheese inside should be visibly melted.

Always allow the chicken to rest for at least 5 minutes after cooking to ensure the juices settle and the cheese does not spill out immediately when you cut into it.
