Tips for success
To get the crispiest crust, make sure your skillet is well-buttered and the heat is not too high. Medium-low is the sweet spot—it gives the tortillas time to toast without burning.
If you're using a nonstick skillet, you may need less butter, but don't skip it entirely.
When flipping the pie, use a large plate that fits over the skillet. Slide the pie onto the plate, then invert it back into the skillet.
This method is much easier than trying to flip with a spatula and keeps the filling intact. If any filling escapes, just tuck it back in.
Variations
- Spicy Chorizo: Swap the chicken for cooked chorizo sausage and add a pinch of cayenne to the spice mix for a smoky, spicy kick. Omit the chicken for a meaty, rich filling.
- Veggie Fiesta: Skip the chicken and double the peppers and onions, adding black beans and corn for a hearty vegetarian version. Use a dairy-free cheese alternative if needed.
- Breakfast Style: Fill with scrambled eggs, crispy bacon, and cheddar cheese for a brunch-worthy pie. Cook the eggs until just set, then assemble and cook as directed.
- BBQ Chicken: Toss the cooked chicken with your favorite barbecue sauce before assembling. Use a smoky cheddar or pepper jack cheese to complement the tangy flavor.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the fridge for up to 3 days. The pie will soften slightly but can be re-crisped in a skillet.
- Freezer
- The cooked pie can be frozen for up to 2 months. Wrap tightly in plastic wrap and foil. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat in a skillet over medium-low heat for 5-7 minutes per side until hot and crispy, or in a 350°F (175°C) oven for about 10 minutes.
Leftover pie can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place it in a skillet over medium-low heat until warmed through and crispy, or microwave for a softer texture.
You can prepare the chicken filling up to 2 days ahead and keep it refrigerated. When ready to assemble, just reheat the filling slightly before filling the tortillas.
The assembled pie can also be refrigerated before cooking, but add a few extra minutes to the cooking time.
Serving ideas
Serve the pie hot, straight from the skillet, cut into wedges. It's a complete meal on its own, but you can pair it with a simple green salad, sour cream, or a dollop of guacamole for extra freshness.
The crispy tortilla and gooey cheese are satisfying enough to be the star of the show.
This pie is perfect for casual gatherings, game nights, or a fun family dinner. It's also great for meal prep—slice it into portions and pack for lunch. The flavors hold up well, and it's just as delicious reheated the next day.

Crispy Chicken & Cheese Wrap Pie

Ingredients
- 400 g diced chicken breast
- 1 diced onion
- 1 red bell pepper, diced
- 1 green pepper, diced
- 1 tsp paprika
- 1 tsp ground cumin
- black pepper to taste
- salt to taste
- 3 large round yufka pastry or flour tortillas (10-inch)
- 1 tbsp butter, softened
- 2 cups shredded mozzarella cheese
Instructions
- Heat a large nonstick skillet over medium-high heat. Add the diced chicken breast and cook, stirring occasionally, until no longer pink, about 5 minutes. Add the diced onion, red bell pepper, and green pepper, and cook for another 3-4 minutes until the vegetables are softened and the chicken is cooked through. Stir in paprika, cumin, black pepper, and salt to taste. Remove the chicken mixture from the skillet and set aside.
- Wipe the skillet clean and place it over low heat. Add the butter and let it melt, tilting the pan to coat the bottom evenly. Lay the three tortillas in the skillet, overlapping them in a flower pattern so that the edges hang over the sides of the pan. Press them together in the center to form a solid base.
- Spread the cooked chicken and vegetable mixture evenly over the tortilla base. Sprinkle 1 1/2 cups of the shredded mozzarella over the filling. Fold the overhanging tortilla edges inward, overlapping them to enclose the filling completely. Sprinkle the remaining 1/2 cup of mozzarella over the top of the pie.
- Cover the skillet and cook over medium-low heat for 5 minutes, until the bottom is golden and crispy. Carefully flip the pie using a large plate or a second skillet. Cook uncovered for another 5 minutes, until the second side is golden brown and the cheese on top is melted and bubbly.
- Remove the skillet from the heat and let the pie rest for 2-3 minutes. Slice into wedges and serve warm, showing off the cheese pull.
