Before you start

Before you start, set out all your ingredients. Take the ground chicken out of the fridge and let it sit at room temperature for about 15 minutes — this helps it cook more evenly. Chop the romaine lettuce, shave the parmesan, and mince the garlic.

Whisk together the Caesar dressing and set it aside. Have your tortillas and cheese slices within reach. Heat your cast-iron griddle over medium-high heat while you season the chicken and press it onto the tortillas. This way, everything is ready to go when the pan is hot.

Ingredients at a glance (14)
  • 2 lb ground chicken
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 small flour tortillas (6-inch)
  • 2 tbsp vegetable oil
  • 8 slices provolone or mozzarella cheese
  • 1 cup mayonnaise
  • 2 tsp Dijon mustard
  • 3 tbsp olive oil
  • 1 tsp Worcestershire sauce
  • 2 tsp lemon juice
  • 2 cloves garlic, minced
  • 4 cups chopped romaine lettuce
  • 1/2 cup shaved parmesan cheese

Instructions

Prep and Season

  1. Season and Smash
In a large bowl, combine the ground chicken with salt and black pepper. Mix gently with your hands until just combined. Divide the mixture into 8 equal portions, about 4 ounces each. Place a portion onto a small flour tortilla and press it out evenly to the edges, making a thin, even layer that covers the entire surface.
Look for The chicken should be pressed thin, about 1/4-inch thick, and completely cover the tortilla.
Tip Use a second piece of plastic wrap or a damp hand to press the chicken without sticking.
  2. Make the Caesar Dressing
In a small bowl, whisk together the mayonnaise, Dijon mustard, olive oil, Worcestershire sauce, lemon juice, and minced garlic until smooth and creamy. Season with a pinch of black pepper if desired. Set aside.
Look for The dressing should be thick, pale, and emulsified, with no streaks of oil.
Tip For a more intense garlic flavor, let the dressing sit for 10 minutes before using.

At this stage, the seasoned ground chicken is pressed onto each tortilla, and the Caesar dressing is whisked until smooth and creamy. The chicken should be evenly distributed, about 1/4-inch thick, covering the entire tortilla.

The dressing should be pale, thick, and emulsified, with a bright garlicky aroma. Have all your toppings ready and the pan heating up.

Sear and Melt

  1. Sear the Chicken-Side Down
Heat a large cast-iron griddle or skillet over medium-high heat and add the vegetable oil. Once the oil shimmers, carefully place the tortillas chicken-side down in the hot pan, working in batches if needed. Press gently with a spatula to ensure full contact. Cook for 4 minutes without moving, until the chicken is deeply golden and cooked through.
Look for The chicken should be browned and crisp at the edges; the internal temperature should reach 160°F (71°C).
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not overcrowd the pan; cook in batches to keep the heat high and get a good sear.
  2. Flip and Melt Cheese
Flip the tacos so the tortilla side is down. Place a slice of provolone or mozzarella on top of the chicken. Cover with a melting dome or a large metal bowl to trap heat. Cook for 1 minute, until the cheese is melted and the tortilla is crisp and golden on the bottom.
Look for The cheese should be fully melted and bubbly, and the tortilla should be golden and crisp.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip If using a bowl, make sure it doesn't touch the cheese; it just needs to trap the steam.

The chicken-side down tacos are sizzling in the hot pan, turning deeply golden and crisp. After flipping, the cheese melts into a gooey blanket over the chicken, and the tortillas crisp up to a golden brown. The kitchen smells of toasting tortillas and savory chicken. The chicken should reach 160°F (71°C) before you move on.

Top and Serve

  1. Assemble the Tacos
Transfer the hot tacos to a serving platter. Pile each taco generously with chopped romaine lettuce, shaved parmesan cheese, and a generous drizzle of the Caesar dressing. Fold each taco in half and serve immediately.
Look for The tacos should be crisp, with cool lettuce and creamy dressing contrasting the warm chicken.
Tip Dress the lettuce lightly with a little Caesar dressing before piling for extra flavor.

The hot tacos are piled with crisp romaine, shaved parmesan, and a generous drizzle of Caesar dressing. The contrast of warm, crispy chicken and cool, crunchy lettuce is the star. Fold each taco in half and serve immediately, while the cheese is still stretchy and the tortillas are at their crispiest.

Common mistakes

One common mistake is pressing the chicken too thick — it won't cook through in the same time and the tortilla may burn. Aim for a thin, even layer. Another is overcrowding the pan. If the tacos are too close together, they'll steam instead of sear, and you'll lose that crispy crust.

Cook in batches if needed. Also, don't flip too early; let the chicken cook undisturbed for the full 4 minutes to develop a good sear. Finally, resist the urge to skip the melting dome — it's what makes the cheese perfectly gooey.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 160°F (71°C) on an instant-read thermometer. The meat should be deeply golden brown on the surface and no longer pink in the center. The tortilla should be crisp and golden on the bottom, and the cheese should be fully melted and bubbly.

Because the chicken is so thin, it cooks quickly — about 4 minutes on the first side and 1 minute after flipping. If you don't have a thermometer, cut into a taco to check that the chicken is cooked through and opaque.

  • Ground meat: 160°F (71°C) in the thickest part
  • Poultry: 165°F (74°C) in the thickest part
