Tips for success
To get the best sear on the chicken, make sure the skillet is hot before adding the oil. Pat the chicken dry with paper towels to remove excess moisture, which helps browning.
Don't move the chicken too soon—let it cook undisturbed for 4-5 minutes to develop a golden crust.
For the smoothest Alfredo sauce, add the Parmesan gradually while whisking constantly. If the sauce seems too thick, add a splash of milk to loosen it.
If it's too thin, let it simmer a few minutes longer. Taste and adjust seasoning at the end, as the cheeses add saltiness.
Variations
- Spicy Cajun: Increase the cajun seasoning to 1 1/2 teaspoons and add a pinch of cayenne to the chicken rub. For extra heat, stir a few dashes of hot sauce into the Alfredo sauce before combining with the pasta.
- Bacon Lover's: Cook 4 slices of bacon until crispy, crumble, and stir half into the mac and cheese before baking. Sprinkle the remaining bacon over the top along with the extra mozzarella for a smoky, savory crunch.
- Vegetable Medley: Add 1 cup of steamed broccoli florets or sautéed mushrooms to the pasta mixture before baking. This adds color and a nutritious boost without compromising the creamy texture.
- Smoky Gouda: Replace the sharp cheddar with smoked Gouda for a deeper, smokier flavor. The Gouda melts beautifully and pairs perfectly with the paprika and seared chicken.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of milk to restore creaminess. The dish can also be frozen for up to 2 months; thaw overnight in the fridge before reheating.
The mac and cheese can be assembled up to a day ahead, but broil just before serving to keep the top crispy. Cook the pasta and sauce, combine, and refrigerate.
When ready, top with chicken and cheese, then broil. You may need to add a few extra minutes to the broiling time if starting cold.
Serving ideas
Serve this chicken Alfredo mac and cheese hot, straight from the broiler, with a big spoon to capture the cheese pull.
It's a complete meal on its own, but a simple green salad with a tangy vinaigrette would balance the richness beautifully. Garlic bread or a crusty baguette also make great sides for soaking up any extra sauce.
This dish is perfect for family dinners, potlucks, or any time you need a comforting, crowd-pleasing meal. Portion generously—people will want seconds. Leftovers are just as delicious the next day, if there are any.

Crispy Chicken Alfredo Mac and Cheese

Ingredients
- 1 lb boneless skinless chicken breast
- 1 tbsp garlic powder
- 1 tsp smoked paprika
- 1 tsp cajun seasoning
- black pepper to taste
- salt to taste
- 2 tbsp vegetable oil
- 2 tbsp butter
- 1 tbsp minced garlic
- 1 cup heavy cream
- 1 cup whole milk
- 1 tsp dried oregano
- 1 cup freshly grated Parmesan cheese
- 250 g cooked elbow macaroni
- 1 cup sharp yellow cheddar, shredded
- 1 cup mozzarella, shredded
- 1/2 cup mozzarella, shredded (for topping)
- 1 tsp smoked paprika (for sprinkling)
Instructions
- In a bowl, toss the chicken breast with garlic powder, smoked paprika, cajun seasoning, black pepper, and salt until evenly coated. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and sear for 4-5 minutes per side, until golden brown and cooked through. Transfer to a cutting board and let rest for 5 minutes before slicing into thin strips.
- Once the chicken has rested, slice it against the grain into 1/2-inch thick strips. Keep the slices warm while you prepare the sauce.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant. Pour in the heavy cream and milk, then whisk in the dried oregano. Bring the mixture to a gentle simmer, stirring often.
- Gradually whisk in the grated Parmesan cheese, a handful at a time, until the sauce is smooth and velvety. Continue to cook for 2-3 minutes, stirring constantly, until the cheese is fully melted and the sauce has thickened slightly.
- Add the cooked elbow macaroni to the skillet and fold it into the Alfredo sauce. Add the shredded sharp cheddar and 1 cup of mozzarella, stirring until all the cheese is melted and the pasta is evenly coated.
- Preheat the broiler. Transfer the mac and cheese to a broiler-safe baking dish and spread it into an even layer. Arrange the sliced chicken cutlets over the top.
- Sprinkle the remaining 1/2 cup mozzarella and 1 teaspoon smoked paprika over the chicken. Place the dish under the broiler for 5 minutes, until the cheese is bubbly and browned in spots.
- Remove the dish from the broiler and let it rest for 5 minutes before serving. Spoon onto plates and enjoy the cheesy pull.
