Tips for success
For the crispiest tacos, don't skip dipping the tortillas in the beef fat—it adds flavor and helps the tortillas brown evenly. If you don't have enough rendered fat, supplement with a neutral oil.
Use a thin, flexible spatula to flip the tacos without breaking them. Let the tacos rest for a minute after cooking so the cheese sets slightly, but serve them while they're still hot and crunchy.
The lime crema can be made thinner by adding a little water or more lime juice. If you prefer a spicier crema, add more chipotle.
For a smoother consistency, blend the crema in a small food processor. The crema can be made up to two days ahead and stored in the refrigerator. Stir well before using.
Variations
- Chicken Tacos: Substitute ground chicken or shredded cooked chicken for the beef. If using ground chicken, season the same way and cook until it reaches 165°F. The taco assembly and grilling method remain the same.
- Spicy Black Bean Tacos: For a vegetarian version, use cooked black beans mixed with the same spice blend and chipotle. Omit the beef and use the bean mixture as the filling. The cheese and crema are still delicious.
- Breakfast Tacos: Swap the beef for scrambled eggs and add the same spices. Fold the tortillas with cheese and eggs, grill until crisp, and top with crema, red onion, and cilantro. Perfect for brunch.
- Crispy Fish Tacos: Use grilled or breaded fish fillets instead of beef. Flake the fish and toss with the spice blend. Assemble the tacos with cheese and grill as directed. The crema and toppings work beautifully.
Storage and make-ahead
- Fridge
- Store leftover tacos in an airtight container in the refrigerator for up to 3 days. The crema can be kept separately for up to 2 days.
- Freezer
- Freeze cooked tacos in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months. Reheat in a 375°F oven until hot and crisp.
- Reheat
- Reheat frozen tacos in a 375°F oven for 10-12 minutes, or until heated through and crisp. Avoid microwaving to preserve texture.
Leftover tacos can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place them on a baking sheet in a 375°F oven for 5-7 minutes, or until crisp again. Avoid microwaving, as it will make the tortillas soggy.
The beef and crema can be made up to two days ahead. Store the beef in the refrigerator and reheat it gently before assembling the tacos. The crema can be whisked and kept chilled. Assemble and grill the tacos just before serving for the best texture.
Serving ideas
Serve these tacos hot off the griddle, drizzled with lime crema and topped with red onion and cilantro.
They pair well with Mexican rice, refried beans, or a simple avocado salad. For a crowd, set up a taco bar with extra toppings like salsa, hot sauce, and lime wedges.
These tacos are best enjoyed immediately, but they can be kept warm in a low oven for up to 20 minutes.
If making them for a party, consider grilling them in batches and keeping them warm on a baking sheet. The crispy texture will soften over time, so serve them as soon as possible.

Crispy Cheesy Chipotle Beef Tacos with Lime Crema

Ingredients
- 2 lb ground beef
- 2 tbsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp salt
- 2 tbsp chipotle peppers in adobo, chopped
- 8 corn tortillas
- 2 cups shredded Mexican cheese blend
- 1/2 cup sour cream
- 1 tbsp chipotle pepper in adobo
- 2 tbsp fresh lime juice
- 1/4 cup diced red onion
- 1/4 cup fresh cilantro leaves
Instructions
- In a small bowl, combine the chili powder, garlic powder, onion powder, smoked paprika, cumin, oregano, and salt. Heat a large skillet or flat-top griddle over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and crumbly, about 8 minutes. Sprinkle the seasoning mixture and the chopped chipotle peppers in adobo over the beef. Stir to coat and cook for 2 more minutes, until fragrant and sizzling. Remove the beef from the skillet and set aside.
- In a small bowl, whisk together the sour cream, 1 tablespoon chipotle pepper in adobo, and the fresh lime juice until smooth and creamy. Set aside. The crema can be made ahead and refrigerated for up to 2 days.
- Wipe the skillet clean and return it to medium-high heat. Dip each corn tortilla into the rendered beef fat left in the skillet (or add a little oil if needed) so both sides are lightly coated. Place the tortillas on the hot griddle in a single layer. Cook for about 30 seconds per side until they start to soften and puff slightly.
- While the tortillas are still soft, sprinkle a generous amount of shredded cheese over one half of each tortilla. Top the cheese with a portion of the cooked chipotle beef. Fold the other half over to create a taco shape, pressing down gently with the spatula.
- Place the folded tacos back on the griddle. Cook for 3 minutes per side, pressing down occasionally with the spatula, until the tortilla is golden and glass-crisp and the cheese has melted and formed a crispy brown skirt around the edges. Flip carefully and cook the other side for 3 minutes.
- Transfer the crispy tacos to a serving platter. Drizzle generously with the lime crema. Scatter the diced red onion and fresh cilantro leaves over the top. Serve immediately while the tacos are still crisp.
