Before you start

Before beginning, ensure all ingredients are ready and measured. Preheat the oven to 375°F (190°C) so it is ready for the tortilla shells. Have a sharp knife and a cutting board prepared to cut the tortillas into rounds.

If using a large muffin tin, ensure it is clean and ready for the tortillas to be placed inside. Having the chili powder measured and the cheese shredded beforehand will streamline the cooking process significantly.

Ingredients at a glance (6)
  • 6 count flour tortillas, cut into rounds
  • 1 lb ground beef
  • 2 tbsp chili powder
  • 1 1/2 cups shredded cheddar cheese
  • fresh chives, for serving
  • red chili slices, for serving

Instructions

Crisping the tortilla shells

  1. Prepare the tortilla shells
Preheat the oven to 375°F (190°C). Use a circular cutter to create smaller rounds from the flour tortillas. Press these rounds into the wells of a muffin tin to create cup shapes. Bake for about 8 minutes until the edges are golden and crisp.
Look for The edges turn golden brown and the cups hold their shape.
Tip Ensure the tortilla rounds are pressed firmly against the sides of the muffin tin to maintain a clean cup shape during baking.

The tortilla shells should be firm to the touch and hold their shape once removed from the oven. The edges should appear light golden brown, indicating they have reached the right level of crispness. If they appear soft or pale, bake for an additional minute, but monitor closely to prevent burning.

Preparing the seasoned beef

  1. Cook the beef filling
While the shells bake, heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned. Stir in the chili powder and cook until the beef reaches an internal temperature of 160°F (71°C).
Look for The beef is fully browned and aromatic with the spices.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Drain any excess grease from the skillet after the beef is cooked to prevent the tortilla cups from becoming soggy.

The ground beef should be deeply browned and fragrant with the chili powder. There should be no visible pink meat remaining in the skillet. After draining any excessive fat, the mixture should have a thick, spoonable consistency that is ready to be portioned into the cups.

Final assembly and melting

  1. Assemble and melt
Spoon the cooked beef chili into each prepared tortilla cup. Top each cup generously with shredded cheddar cheese. Place the muffin tin back into the oven for 3 to 5 minutes, or until the cheese is completely melted and bubbly. Remove from the oven and garnish with fresh chopped chives and red chili slices before serving.
Look for The cheese is melted and bubbling nicely on top of the cups.
Tip Keep a close eye on the cups during the final melt phase to ensure the cheese does not brown too much or burn.

The cheese should be completely melted, with a gooey, stretchy texture that pulls away easily. The cups should be warm throughout, and the garnish of chives and red chili should look fresh and vibrant.

The entire tray should look golden and appetizing, ready to be served while the cheese is still warm and soft.

Common mistakes

A common mistake is failing to drain the excess fat from the beef after browning, which can lead to greasy or soggy tortilla shells. Another error is overfilling the cups, which may cause the chili to spill over during the final melt.

Ensure the tortilla rounds are pressed deep into the muffin wells to create adequate space for the filling. Finally, avoid using too much cheese, as it can cause the cups to lose their shape if it spills over the edges.

How to tell it’s done

The dish is considered done when the tortilla edges are golden brown and crisp, and the cheese topping is completely melted and bubbling. The ground beef must reach an internal temperature of at least 160°F (71°C) to ensure it is thoroughly cooked.

Use a meat thermometer to verify the temperature of the beef in the skillet before transferring it to the shells. Once the cheese has melted, the cups are ready to be removed from the oven and served immediately.

  • Ground meat: 160°F (71°C) in the thickest part
