Before you start

Before cooking, dice the chicken breast into small, even pieces and measure out all the spices. Shred the cheese if not already shredded. Have the corn tortillas, oil, and toppings ready.

Heat a large skillet for the chicken and another for frying. Set up a paper towel-lined plate for draining the fried tacos. This mise en place ensures smooth, quick cooking.

Ingredients at a glance (11)
  • 2 lb boneless skinless chicken breast, diced
  • 2 tbsp taco seasoning
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 2 tbsp fresh lime juice
  • 8 corn tortillas (6-inch)
  • 2 cups shredded cheddar cheese
  • 1/2 cup vegetable oil, for frying
  • 1 cup fresh pico de gallo
  • 1/2 cup spicy taco sauce

Instructions

Cook and Season the Chicken

  1. Season and Cook the Chicken
Heat a large skillet over medium-high heat. Add the diced chicken breast and cook, stirring occasionally, until no longer pink. Sprinkle with taco seasoning, smoked paprika, ground cumin, garlic powder, and lime juice. Continue cooking until the chicken is browned and cooked through, reaching an internal temperature of 165°F (74°C).
Look for Chicken is browned and fragrant, with no pink remaining.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Cut chicken into even 1/2-inch pieces for quick, even cooking.
  2. Warm the Tortillas
Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds per side, or until pliable. Stack them on a plate and cover with a clean kitchen towel to keep warm.
Look for Tortillas are soft and flexible, not brittle.
Tip Warming prevents cracking when folding.

The chicken should be browned in spots, fragrant with spices, and cooked through with no pink remaining.

The lime juice will have mostly evaporated, leaving a glossy coating on the meat. Taste a piece to check seasoning—it should be savory with a hint of smoke and citrus.

Fill and Fry the Tacos

  1. Fill the Tortillas
Lay a warmed tortilla flat. Sprinkle a generous layer of shredded cheddar cheese over half of the tortilla. Top with a portion of the cooked chicken. Fold the other half over to create a half-moon shape, pressing gently.
Look for Tortilla is filled but not overstuffed.
Tip Keep filling about 1/4 cup to ensure easy folding.
  2. Fry Until Crispy
In a large skillet, heat the vegetable oil over medium-high heat until shimmering. Carefully place the filled tacos in the hot oil, working in batches if needed. Fry for 2 minutes per side, until golden brown and glass-crispy. Use tongs to flip gently.
Look for Tacos are deep golden and crisp, with cheese melted and bubbly at the edges.
Tip Don't overcrowd the pan; fry in batches to keep oil temperature steady.

The tacos should be golden brown and crisp on both sides, with cheese melted and oozing at the edges. The oil should be hot enough that the tortilla sizzles immediately upon contact. The shells should feel firm and shatter when tapped.

Top and Serve

  1. Drain and Top
Transfer the fried tacos to a paper towel-lined plate to drain briefly. While still warm, spoon fresh pico de gallo over the top and drizzle with spicy taco sauce. Serve immediately.
Look for Tacos are crisp, topped with fresh salsa and sauce.
Tip Add toppings just before serving to keep the shell crunchy.

The tacos are topped with cool, chunky pico de gallo and a drizzle of spicy taco sauce. The contrast of hot crispy shell and fresh salsa is immediate. Serve right away to enjoy the crunch at its peak.

Common mistakes

Avoid overfilling the tacos—too much filling makes them hard to fold and can cause the tortilla to tear. Keep the oil at a steady medium-high heat; if it's too cool, the tacos absorb oil and become greasy; if too hot, they burn before the cheese melts.

Fry in batches to maintain temperature. Also, drain on paper towels to remove excess oil, and add toppings just before serving to keep the shells crisp.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) and is no longer pink in the center.

The tacos are done when the tortillas are deeply golden brown and crisp on both sides, and the cheese is fully melted and bubbling. The shell should shatter when bitten, not bend. If you tap the shell, it should sound hollow and crisp.

  • Poultry: 165°F (74°C) in the thickest part
