Before you start

Before beginning, ensure your ingredients are prepped and ready for the skillet. Cut the chicken breast into even, bite-sized cubes and slice your mushrooms into uniform pieces to ensure they cook at the same rate.

Prepare the bread bowls by cutting off the tops and scooping out the soft interior bread, setting the bowls aside on a baking sheet. Having your cheese shredded and parsley chopped in advance will make the final assembly seamless once the filling is ready.

Ingredients at a glance (6)
  • 2 round sourdough bread rolls
  • 1 lb boneless skinless chicken breast, cubed
  • 2 tbsp unsalted butter
  • 8 oz cremini mushrooms, sliced
  • 1 cup shredded mozzarella cheese
  • 1 tbsp fresh parsley, chopped

Instructions

Hollowing the Bread

  1. Prepare the Bread Bowls
Preheat your oven to 350°F (175°C). Use a sharp knife to carefully cut the tops off the round sourdough rolls. Hollow out the centers to create a bowl, leaving about a half-inch thick wall of bread to ensure the structure holds the filling without leaking.
Look for The bread bowls should be hollowed out while maintaining structural integrity for the filling.
Tip Save the removed bread pieces to toast for dipping or to use for breadcrumbs in another recipe.

The bread bowls should be sturdy enough to stand upright on the baking sheet. Ensure you have carved out enough space to hold the filling while keeping the walls thick enough to prevent leakage. The interior of the bread should be slightly rough to help the filling stay in place once added.

Sautéing the Filling

  1. Cook the Chicken and Mushrooms
Melt the butter in a large skillet over medium-high heat. Add the cubed chicken breast and sauté until browned. Add the sliced mushrooms and cook until they have softened and released their liquid. Continue cooking until the chicken reaches an internal temperature of 165°F (74°C).
Look for The chicken is cooked through and the mushrooms are golden and tender.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not overcrowd the pan, as this causes the mushrooms to steam rather than brown properly.

The chicken should be golden-brown on the outside and fully cooked through. The mushrooms should be soft, tender, and reduced in volume, having absorbed the butter and juices from the chicken. The mixture should smell savory and aromatic, with no excess liquid left in the bottom of the skillet.

Broiling the Bowls

  1. Assemble and Broil
Spoon the chicken and mushroom mixture into the prepared bread bowls. Top each bowl generously with shredded mozzarella cheese. Place the bowls on a baking sheet and set them under the broiler for 2 to 3 minutes, or until the cheese is melted and bubbling. Sprinkle with fresh parsley before serving.
Look for The cheese is melted, bubbling, and beginning to brown in spots.
Tip Watch the broiler closely, as the cheese can burn very quickly once it starts to brown.

The cheese should be completely melted and bubbling across the entire surface of the filling. The edges of the bread bowls should appear toasted and crisp, providing a nice contrast to the melted cheese. The parsley should look vibrant and fresh as a final garnish before you serve the dish immediately.

Common mistakes

A common mistake is using bread that is too soft or thin-walled, which can lead to the bread bowl collapsing under the weight of the filling.

Another error is overcrowding the skillet while cooking the chicken and mushrooms, which leads to steaming rather than browning and can result in a watery filling.

Finally, do not leave the bread bowls unattended while they are under the broiler, as the cheese can go from perfectly melted to burnt in a matter of seconds.

How to tell it’s done

The chicken is considered done when it has reached a safe internal temperature of 165°F (74°C). You can check this by inserting a meat thermometer into the largest piece of chicken in the skillet.

Visually, the chicken should be opaque and no longer pink in the center, and the juices should run clear. Once the bread bowls are under the broiler, the cheese should be completely melted, bubbling, and showing slight golden-brown spots on the surface.
