Before you start

Before starting, gather all ingredients and equipment. Chop the onion, bell pepper, and carrot into small, even dice. Mince the garlic cloves and chop the fresh parsley. Measure out the spices and tomato sauce. Shred the mozzarella if not already shredded.

Melt the salted butter in a small saucepan or in the microwave. Preheat the oven to 350°F (175°C) when you begin assembling the pockets. Have a large skillet, a cutting board, a chef's knife, a wooden spoon, a pastry brush, and a ceramic baking dish ready.

Ingredients at a glance (15)
  • 2 tbsp olive oil
  • 1 yellow onion, chopped
  • 1 red bell pepper, chopped
  • 1 carrot, chopped
  • 500 g lean ground beef
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp cracked black pepper
  • 4 tbsp tomato sauce
  • 4 large flour tortillas
  • 2 cups shredded mozzarella cheese
  • 3 tbsp salted butter, melted
  • 2 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped

Instructions

Sauté and Brown the Filling

  1. Sauté the Vegetables
Heat the olive oil in a large skillet over medium-high heat. Add the chopped onion, red bell pepper, and carrot. Cook, stirring occasionally, until the vegetables are softened and the onion is translucent, about 4 minutes.
Look for The onion turns translucent and the pepper softens, releasing a sweet aroma.
Tip Cut the vegetables into small, even dice so they cook quickly and fit neatly inside the tortillas.
  2. Brown the Beef
Add the lean ground beef to the skillet with the vegetables. Break it up with a wooden spoon and cook until browned, about 5 minutes. Stir in the garlic powder, smoked paprika, salt, and cracked black pepper. Add the tomato sauce and stir to coat everything. Cook for another 2 minutes until the mixture is glossy and deeply browned.
Look for The beef is fully browned, and the sauce has reduced to a thick, shiny coating.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Use a spatula to break the beef into small crumbles for even distribution.

At the end of this phase, the vegetables are softened and the beef is fully browned, with a glossy, seasoned coating. The mixture smells savory and slightly smoky. The internal temperature of the beef should be at least 160°F (71°C). The filling should be cohesive and not watery. If there is excess liquid, cook for another minute to reduce it. This filling can be made ahead and kept in the refrigerator for up to 2 days.

Fold and Fill the Tortillas

  1. Assemble the Pockets
Preheat the oven to 350°F (175°C). Place the flour tortillas on a cutting board. Slice each tortilla in half. Spoon a generous mound of the beef mixture and a handful of shredded mozzarella onto each half. Fold each half into a tight triangular turnover, pressing the edges to seal.
Look for The tortillas are filled and folded into neat triangles, with cheese visible at the edges.
Tip Do not overfill; leave a small border to seal the edges securely.
  2. Arrange in Baking Dish
Line the folded tortilla pockets in a single layer in a ceramic baking dish. They can touch slightly but should not overlap.
Look for The pockets sit snugly in the dish, ready for the butter brush.
Tip If the pockets are too crowded, use two smaller dishes.

The tortillas are neatly folded into tight triangles, with the filling and cheese securely enclosed. The edges should be pressed firmly to seal. The pockets are arranged in a single layer in the baking dish, with no overlap.

The tops are brushed with garlic herb butter and sprinkled with mozzarella. At this point, the pockets are ready for the oven. The butter should be evenly distributed, and the cheese should cover the tops generously.

Bake to Golden Perfection

  1. Make Garlic Herb Butter
In a small bowl, combine the melted salted butter, minced garlic, and chopped parsley. Stir to blend.
Look for The butter is fragrant with garlic and flecked with green parsley.
Tip Melt the butter gently so it does not brown.
  2. Brush and Top with Cheese
Using a pastry brush, slather the garlic herb butter over the tops of the tortilla pockets. Sprinkle the remaining shredded mozzarella over the pockets, covering the surface generously.
Look for The tops are glossy with butter and coated with cheese.
Tip Brush the butter evenly so every pocket gets a golden crust.
  3. Bake Until Golden and Bubbling
Place the baking dish in the preheated oven and bake until the cheese is melted and bubbling, and the tortillas are golden brown and crispy, about 10 minutes. The edges should be blistered in spots.
Look for The cheese is bubbling and the tortillas are deeply golden with a few darker spots.
Tip For extra crispiness, broil for the last minute, watching closely.
  4. Rest and Serve
Remove the baking dish from the oven and let the pockets rest for 2 minutes. Serve warm, with the cheese pull stretching as you break them open.
Look for The pockets are set but still molten inside.
Tip Letting them rest helps the cheese set slightly so it does not all spill out.

The pockets emerge from the oven with deep golden-brown tops, blistered in spots, and bubbling cheese. The aroma is buttery, garlicky, and toasty. The tortillas are crisp to the touch, and the cheese is molten. Let them rest for 2 minutes before serving. When you break one open, the cheese pulls in long strands, and the beef filling is hot and savory. This is the moment to enjoy the crunch and the cheese pull.

Common mistakes

A common mistake is overfilling the tortillas, which makes them difficult to seal and can cause them to burst open during baking. Keep the filling to a generous but manageable mound. Another issue is not browning the beef enough; make sure it is deeply browned for maximum flavor.

Skipping the butter brush will result in pale, dry tortillas instead of golden, crispy ones. Also, do not overcrowd the baking dish; if the pockets overlap, they will steam rather than crisp. Finally, resist the urge to skip the resting time; it helps the cheese set.

How to tell it’s done

The beef filling is done when it is fully browned and the internal temperature reaches 160°F (71°C) on an instant-read thermometer. The tortilla pockets are done when the tops are golden brown and the cheese is melted and bubbling, with a few blistered spots on the tortillas.

The edges should be crisp to the touch. If you tap the top with a fingernail, you should hear a distinct crunch. Let them rest for 2 minutes before serving so the cheese sets slightly and does not all spill out when you break them open.

  • Ground meat: 160°F (71°C) in the thickest part
