Before you start

Before starting, gather all the ingredients and measure out the spices. Chop the tomato, red onion, jalapeño, and cilantro for the pico de gallo. Shred the cheddar cheese if not using pre-shredded.

In a small bowl, mix the sour cream, milk, and lime juice for the sauce. Preheat the oven to warm the taco shells if using the oven method. Have a large skillet ready for browning the beef.

Ingredients at a glance (18)
  • 2 lb ground beef
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • 2 tbsp tomato paste
  • 8 crispy taco shells
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup diced tomato
  • 1/2 cup diced red onion
  • 1 jalapeño, minced
  • 1/4 cup chopped cilantro
  • 1/2 cup sour cream
  • 2 tbsp milk
  • 1 tsp lime juice

Instructions

Brown and Season the Beef

  1. Season and Brown the Beef
Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until it is no longer pink, about 5 minutes. Drain off any excess fat. Add the chili powder, garlic powder, onion powder, smoked paprika, ground cumin, dried oregano, salt, and tomato paste. Stir well to coat the meat evenly. Continue cooking for 3 to 4 minutes, until the spices are fragrant and the tomato paste has darkened slightly. The mixture should be sizzling and rich.
Look for The beef is browned and the spices smell toasted and aromatic.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Draining the fat helps the taco shells stay crisp.
  2. Keep the Beef Warm
Reduce the heat to low and keep the seasoned beef warm while preparing the toppings. Stir occasionally so it does not dry out.
Look for The beef is moist and fragrant.
Tip If the beef looks dry, add a splash of water or broth.

The beef should be browned and fragrant, with the spices fully incorporated. The tomato paste should be well blended, giving the meat a rich, dark color. The mixture should be sizzling and aromatic, with no raw pink remaining. The kitchen will smell of chili, cumin, and smoked paprika.

Prepare the Toppings

  1. Make the Pico de Gallo
In a medium bowl, combine the diced tomato, diced red onion, minced jalapeño, and chopped cilantro. Stir gently to mix. Set aside.
Look for The pico is colorful and juicy.
Tip For a milder pico, remove the seeds from the jalapeño.
  2. Prepare the Taco Sauce
In a small bowl, whisk together the sour cream, milk, and lime juice until smooth. The sauce should be pourable but still creamy.
Look for The sauce is smooth and slightly tangy.
Tip Add more milk if a thinner sauce is preferred.
  3. Warm the Taco Shells
Heat the crispy taco shells according to the package instructions, usually in a 350°F (175°C) oven for 5 minutes, or until warm and fragrant.
Look for The shells are warm and crisp.
Tip Keep them warm in a low oven while assembling.

The pico de gallo should be colorful and juicy, with the tomato, onion, jalapeño, and cilantro well combined. The sauce should be smooth and pourable, with a balanced tang from the lime juice. The taco shells should be warm and crisp, ready for filling.

Assemble and Serve

  1. Assemble the Tacos
Spoon a generous amount of the seasoned beef into each warm taco shell. Top with a sprinkle of shredded cheddar cheese, allowing it to melt slightly from the heat of the beef. Add a spoonful of the fresh pico de gallo on top of the cheese.
Look for The tacos are loaded with beef, cheese, and pico.
Tip For extra melt, place the assembled tacos under the broiler for 30 seconds.
  2. Drizzle with Sauce and Serve
Drizzle the sour cream taco sauce over the filled tacos. Serve immediately while the shells are still crisp and the cheese is melted.
Look for The sauce cascades over the filling.
Tip Serve with extra sauce on the side for dipping.

Each taco should be filled with a generous portion of beef, topped with cheese that is slightly melted, and crowned with fresh pico and a drizzle of sauce.

The shells should remain crisp, and the filling should be evenly distributed. The tacos should look vibrant and appetizing, with a mix of colors and textures.

Common mistakes

One common mistake is overcooking the beef, which can make it dry and crumbly. Keep the heat at medium and stir frequently to break up the meat evenly. Another mistake is adding the pico de gallo too early, which can make the tacos soggy.

Add it right before serving. Also, be careful not to overfill the shells, as this can cause them to crack. Fill them generously but leave a little room for the toppings.

How to tell it’s done

The ground beef is done when it is browned and cooked through, with no pink remaining. The internal temperature should reach at least 160°F (71°C) for ground beef.

The taco shells should be golden and crisp, and the cheese should be melted and bubbly. The pico de gallo should be vibrant and juicy. The tacos are best served immediately after assembly to maintain crispness.

  • Ground meat: 160°F (71°C) in the thickest part
