Before you start

Before starting, ensure all ingredients are ready and within reach. Shred the cheese using a box grater and ensure your cooked beef is at room temperature or slightly warmed. Keep your cutting board and pizza wheel nearby.

Having the skillet preheated to medium heat ensures that the cooking process begins immediately, preventing the tortilla from becoming greasy while waiting for the pan to reach the correct temperature.

Ingredients at a glance (5)
  • 4 large flour tortillas
  • 1 lb shredded beef, cooked
  • 2 cups shredded cheese, such as cheddar or monterey jack
  • 2 tbsp unsalted butter
  • salsa for serving

Instructions

Assembly of the fillings

  1. Prepare the filling
Place a flour tortilla on a flat surface. Distribute a generous portion of the shredded beef and shredded cheese onto one half of the tortilla, ensuring the filling is evenly spread but not overflowing. Fold the empty half over the filling to create a half-moon shape, pressing down gently to seal the edges.
Look for The tortilla should lie flat and the filling should be contained within the edges.
Tip Do not overfill the quesadilla, as this can make it difficult to flip without the filling spilling into the pan.

The assembly phase is complete when the tortilla is neatly folded into a half-moon shape with the beef and cheese securely tucked inside. The filling should be distributed evenly to ensure that every bite contains both the savory beef and the melted cheese. Check that the edges are aligned so the filling does not escape during the cooking process.

Crisping in the skillet

  1. Crisp in the skillet
Heat a large skillet over medium heat and add a portion of the butter. Once the butter is melted and sizzling, place the prepared quesadilla into the pan. Cook until the bottom side is golden brown and crispy, then carefully flip the quesadilla. Continue cooking until the second side is equally golden and the cheese has reached an internal temperature of 145°F (63°C) to ensure it is fully melted and hot, then let the quesadilla rest for at least 3 minutes.
Look for The exterior must be deeply golden brown and the cheese completely melted throughout.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Use a heavy spatula to press down on the quesadilla to ensure even contact with the pan surface for maximum crispiness.

At this stage, the quesadilla should be a vibrant golden brown on both sides. The butter should have created a beautiful, toasted aroma throughout the kitchen. You should be able to hear a slight sizzle as the tortilla makes contact with the pan. Ensure that the cheese is fully melted and that the tortilla has achieved a firm, crispy texture.

Slicing and presentation

  1. Slice and serve
Remove the quesadilla from the skillet and place it on a cutting board. Use a pizza wheel or a sharp knife to slice the quesadilla into wedges. Arrange the crispy wedges on a serving platter and serve immediately with a side of fresh salsa for dipping.
Look for The crust should sound crunchy when sliced with the wheel.
Tip Wipe the pan clean between batches if any cheese leaks out and starts to burn.

The final phase is complete when the quesadilla is sliced into clean, uniform wedges. The crust should offer a satisfying crunch when the pizza wheel passes through it.

The interior should look vibrant and cohesive, with the cheese holding the beef in place. Arrange the wedges on the platter so they are ready for immediate serving with your favorite salsa.

Common mistakes

A common mistake is using heat that is too high, which causes the outside of the tortilla to burn before the cheese has a chance to melt. Another frequent error is overstuffing the quesadilla; too much filling makes it difficult to maintain the structural integrity during the flip, often leading to a messy pan.

Avoid using too much butter, as this can make the tortillas greasy rather than crispy. Finally, do not rush the cooling time before slicing, as the cheese needs a moment to stabilize.

How to tell it’s done

The quesadilla is done when both sides are a deep, uniform golden brown and the cheese is fully melted. You can check the internal temperature of the filling to ensure it is at least 145°F (63°C).

The exterior should feel firm and provide a distinct crunch when sliced with a wheel or knife. If the cheese is not melted, reduce the heat slightly and continue to cook for another minute.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
