Before you start

Before starting, ensure the pastry dough is thawed if frozen. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Have all ingredients measured and ready.

Cook the beef filling first, then let it cool slightly while preparing the dough. This prevents the hot filling from melting the dough too quickly, making it easier to handle.

Ingredients at a glance (15)
  • 1 lb 80/20 ground beef
  • 1 diced onion
  • 1 tbsp minced garlic
  • 1 cup chopped bell peppers
  • 1 diced Serrano pepper
  • 3 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • Chili flakes to taste
  • Black pepper to taste
  • Salt to taste
  • 1 lb store-bought pastry dough, thawed if frozen
  • 1/2 cup shredded mozzarella cheese
  • 1 egg, beaten (for egg wash)

Instructions

Cook the Filling

  1. Brown the Beef
Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned, about 4 minutes. Add the diced onion, minced garlic, chopped bell peppers, and diced Serrano pepper. Cook for 2 more minutes until the vegetables soften.
Look for Beef is browned and vegetables are tender.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Use a spatula to break the beef into small crumbles for even cooking.
  2. Season the Filling
Stir in the tomato paste, smoked paprika, garlic powder, chili powder, chili flakes, black pepper, and salt. Cook for 1-2 minutes until the mixture is thick and glossy. Remove from heat and let cool slightly.
Look for Filling is thick, glossy, and fragrant.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Taste and adjust seasoning—add more chili flakes for extra heat.

The beef should be fully browned and the vegetables softened. The mixture will be thick and glossy after adding the tomato paste and spices. The aroma will be rich and savory with a hint of smokiness. Taste and adjust seasoning now, as the flavors will not change much during baking.

Assemble the Pockets

  1. Preheat and Prep Dough
Preheat the oven to 400°F (200°C). On a lightly floured surface, roll out the pastry dough into a large rectangle about 1/8-inch thick. Cut into 4 equal rectangles.
Look for Dough is thin and even.
Tip Keep the dough cold for easier handling.
  2. Fill and Fold
Spoon generous heaps of the beef mixture onto the center of each dough rectangle. Top with shredded mozzarella. Fold the dough over to form a pocket, pressing edges to seal. Crimp the edges with a fork.
Look for Pockets are sealed tightly.
Tip Don't overfill—leave room to seal.
  3. Brush with Egg Wash
Brush the tops of the pockets with the beaten egg. Place the pockets on a baking sheet lined with parchment paper.
Look for Pockets are evenly coated with egg wash.
Tip Egg wash gives a golden, shiny finish.

The dough should be rolled thin but sturdy enough to hold the filling. The pockets should be neatly sealed with no gaps. The egg wash will give a shiny coating. The filled pockets are ready for the oven, and the kitchen will smell of fresh pastry and seasoned beef.

Bake to Golden Perfection

  1. Bake the Pockets
Bake in the preheated oven for 15 minutes, until the pastry is golden and puffed. The internal temperature of the beef filling should reach 160°F (71°C).
Look for Pastry is golden brown and puffed.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip If edges brown too fast, cover loosely with foil.
  2. Cool and Serve
Remove from the oven and let cool for 5 minutes before serving. Break open to reveal the gooey cheese pull.
Look for Cheese is melted and stretchy.
Tip Serve warm for the best cheese pull.

The pastry should be deep golden brown and puffed. The cheese inside should be fully melted and stretchy when a pocket is broken open.

The internal temperature of the beef must reach 160°F (71°C). Letting the pockets rest for a few minutes allows the filling to set slightly, making them easier to handle.

Common mistakes

One common mistake is overfilling the pockets, which can cause them to burst open during baking. Leave at least a 1-inch border around the filling to ensure a good seal.

Another pitfall is not crimping the edges firmly enough—use a fork to press down securely. Also, avoid skipping the egg wash; it is what gives the pastry its beautiful shine and golden color.

How to tell it’s done

The pockets are done when the pastry is golden brown and puffed, and the filling is bubbling. To ensure the beef is safe to eat, insert an instant-read thermometer into the center of a pocket; it should read at least 160°F (71°C).

If the pastry browns too quickly but the filling hasn't reached temperature, cover loosely with foil and continue baking.

  • Ground meat: 160°F (71°C) in the thickest part
  • Egg dishes: 160°F (71°C) in the thickest part
