Tips for success
For an extra layer of flavor, consider adding a pinch of freshly cracked black pepper or a few fresh chives over the top of the cheese before baking. These additions provide a subtle freshness that cuts through the richness of the cream and the Gruyère. If you prefer a sharper taste, a tiny pinch of smoked paprika can enhance the smokiness of the bacon without overpowering the other ingredients.
When serving, present the brioche boat on a warmed plate to help maintain the temperature of the dish. Because the brioche is quite rich, it pairs excellently with a simple side salad of bitter greens, like arugula, tossed in a light lemon vinaigrette.
The acidity of the dressing provides a perfect contrast to the creamy, savory nature of the egg boat, making for a well-rounded and sophisticated breakfast experience.
Variations
- Spinach and Feta Boat: Replace the bacon and Gruyère with fresh baby spinach and crumbled feta cheese. Add the spinach to the well before cracking the eggs to allow it to wilt slightly during the baking process.
- Mushroom and Herb Boat: Sauté sliced mushrooms with thyme and garlic before layering them into the brioche. This variation adds an earthy, savory depth that pairs perfectly with the creamy eggs and Gruyère.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 24 hours.
- Reheat
- Reheat in a preheated oven at 350°F (175°C) for 5 to 8 minutes until warm and crisp. Avoid the microwave, as it will make the bread soggy.
If you have leftovers, allow them to cool completely at room temperature for no more than two hours. Once cooled, place the brioche boat in an airtight container to maintain its texture as much as possible.
It is best enjoyed fresh, but it can be kept in the refrigerator for up to one day. Note that the texture of the bread will change over time, becoming softer as it absorbs moisture from the egg and cream.
While this dish is best enjoyed immediately after baking, you can prepare the brioche by hollowing it out and brushing it with garlic butter up to a few hours in advance. Keep the prepared bread in a cool, dry place covered with a clean cloth. You can also pre-cook the bacon. However, for the best results, assemble the eggs and cream just before baking to ensure the bread does not become soggy.
Serving ideas
Serve the brioche boat immediately while it is hot and the cheese is still molten. This dish is designed to be a standout centerpiece for a brunch or a quiet weekend breakfast.
Place it on a small, elegant plate, perhaps accompanied by a thin slice of fresh fruit or a simple green salad to balance the richness. Using a sharp knife to cut into the center will reveal the layers and allow the golden yolk to flow out nicely.
The beauty of this breakfast is in its presentation. Ensure the crust is crispy and the cheese is nicely browned before bringing it to the table. If serving for guests, you can prepare multiple boats simultaneously, provided your oven can accommodate them without overcrowding.
This allows for a synchronized serving time, ensuring that everyone receives their breakfast at the peak of its flavor and texture, warm and fresh from the oven.

Crispy Brioche Egg Boats with Bacon and Gruyère

Ingredients
- 1 mini brioche loaf
- 15 g garlic butter
- 60 g Gruyère cheese, divided
- 40 g bacon, cooked and crispy
- 2 large eggs
- 30 ml heavy cream
Instructions
- Using a serrated knife, carefully cut a rectangular well into the top of the mini brioche loaf, being mindful not to pierce through the bottom or the sides. Brush the interior of the hollowed-out bread thoroughly with the garlic butter to ensure even flavor and a crisp texture during the baking process.
- Place 40 grams of the Gruyère cheese into the base of the hollowed brioche. Follow this with a layer of the crispy bacon. This creates a solid foundation for the remaining ingredients and ensures every bite contains a mix of cheese and bacon.
- Carefully crack the two eggs into the brioche well. Pour the heavy cream over the eggs and top with the remaining 20 grams of Gruyère cheese. Place in an oven preheated to 375°F (190°C) and bake for 14 minutes. For food safety, ensure the egg whites are fully set and reach an internal temperature of 160°F (71°C).
