Tips for success
For the crispiest results, make sure the oil is at the correct temperature before adding the eggplant. Use a thermometer to avoid guesswork.
If you don't have one, drop a small cube of bread into the oil; it should sizzle and turn golden in about 30 seconds. Also, avoid moving the eggplant too much during frying—let it develop a crust before turning.
The garlic yogurt can be made ahead and stored in the refrigerator for up to two days. If you want a thinner sauce, add a tablespoon of water or milk.
For extra flavor, you can stir in chopped fresh herbs like dill or mint. If you're serving this as a main course, pair it with a simple salad or rice to balance the richness.
Variations
- Spicy Harissa Yogurt: Stir 1-2 tablespoons of harissa paste into the garlic yogurt for a spicy, smoky kick. Adjust the amount to your heat preference. This pairs well with the mild eggplant.
- Herbed Yogurt: Add 2 tablespoons of chopped fresh dill, mint, or parsley to the yogurt sauce. The herbs add a fresh, bright note that complements the fried eggplant beautifully.
- Za'atar Seasoning: Sprinkle the fried eggplant with za'atar spice blend immediately after frying. The earthy, tangy flavors of za'atar enhance the dish and add a Middle Eastern touch.
- Lemon-Tahini Drizzle: Instead of yogurt, serve the eggplant with a lemon-tahini sauce: whisk together 1/4 cup tahini, 2 tablespoons lemon juice, 1 minced garlic clove, and enough water to thin to a drizzling consistency.

Leftover fried eggplant can be stored in an airtight container in the refrigerator for up to 2 days. To reheat, place in a 400°F oven for 5-7 minutes until hot and crisp. Avoid microwaving, as it will make the eggplant soggy.
The garlic yogurt can be prepared up to 2 days ahead and stored in the fridge. The eggplants can be sliced and soaked in salted water up to 4 hours in advance; keep them submerged in the water in the refrigerator, then dry thoroughly before frying.
Serving ideas
Serve the crispy eggplant immediately after frying, while still hot and crackling. The garlic yogurt should be cold and thick, spooned into a small bowl for dipping.
Garnish with a sprinkle of fresh herbs, like parsley or cilantro, if desired. This dish is best enjoyed as a shared appetizer, with everyone tearing off a crispy tentacle and dunking it into the cool yogurt.
For a more substantial meal, serve the eggplant alongside a simple green salad or over a bed of rice. The creamy yogurt sauce can also be drizzled over the top for a more elegant presentation.
If you have extra yogurt, it's delicious with grilled vegetables or as a dip for pita bread. The contrast of temperatures and textures is what makes this dish memorable.

Crispy Blooming Octopus Eggplant with Garlic Yogurt

Ingredients
- 3 large whole eggplants
- 1 tbsp kosher salt
- 4 cups water
- 4 cups vegetable oil, for frying
- 1 cup plain Greek yogurt
- 2 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1/4 tsp kosher salt
Instructions
- Peel the whole eggplants with a vegetable peeler, leaving the stems intact. Slice each eggplant lengthwise into thin strips, about 1/2-inch thick, keeping the strips attached at the stem end so they fan out like octopus tentacles. Dissolve the kosher salt in the water in a large bowl. Submerge the sliced eggplants in the salted water for 10 minutes. Remove and pat completely dry with paper towels.
- In a small bowl, combine the plain Greek yogurt, minced garlic, fresh lemon juice, and kosher salt. Stir until smooth and refrigerate until ready to serve.
- Pour the vegetable oil into a large pot or Dutch oven, making sure it is at least 2 inches deep. Heat over medium-high heat until a deep-fry thermometer registers 360°F (182°C).
- Using tongs, carefully lower one eggplant into the hot oil, holding the stem. The tentacles will fan out and bloom as they fry. Fry for 5 minutes, turning occasionally, until deep golden brown and blistered. Remove with tongs and drain on paper towels. Repeat with the remaining eggplants.
- Arrange the fried eggplants on a serving platter. Serve immediately with the garlic yogurt on the side for dipping.
