Tips for success

For extra crispy wings, let the breaded florets rest for 10 minutes before baking—this helps the coating set. If you have time, chill them in the fridge for 30 minutes.

When tossing with the sauce, do it in batches to avoid clumping. Serve the wings immediately after glazing to preserve the crunch, as the sauce can soften the crust over time.

To make the sriracha ranch dip, simply combine ranch dressing with a squeeze of sriracha to taste. Adjust the heat level to your preference.

For a lighter version, use Greek yogurt instead of mayonnaise in the bang bang sauce. The wings are also delicious with blue cheese dip or a simple squeeze of lime.

Variations

  • Buffalo Cauliflower: Replace the bang bang sauce with a classic buffalo sauce (hot sauce + melted butter). Toss the baked wings in the sauce and serve with celery sticks and blue cheese dip.
  • Honey Garlic: Swap the sweet chili sauce for honey and add a minced garlic clove to the sauce mixture. The result is a sweeter, savory glaze that's equally addictive.
  • BBQ Cauliflower: Use your favorite barbecue sauce in place of the sweet chili sauce. Add a pinch of smoked paprika to the batter for a smoky flavor. Serve with a creamy coleslaw.
  • Coconut Sriracha: Add 1/4 cup toasted coconut flakes to the panko breadcrumbs for a tropical twist. In the sauce, replace the honey with coconut sugar and add a splash of lime juice.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Freezer
Freeze unglazed baked wings in a single layer, then transfer to a freeze-safe bag for up to 2 months. Reheat in the oven.
Reheat
Reheat frozen wings in a 400°F (200°C) oven for 10–12 minutes until hot and crispy. Toss with sauce after reheating.

Store leftover cauliflower wings in an airtight container in the refrigerator for up to 3 days. To reheat, place them on a baking sheet in a 400°F (200°C) oven for 5–7 minutes until hot and crispy. Avoid microwaving, as it will make the coating soggy.

You can prepare the breaded cauliflower florets up to a day in advance and keep them covered in the fridge. Bake them just before serving.

The bang bang sauce can also be made ahead and stored in the fridge for up to a week. When ready to serve, reheat the sauce slightly if it has thickened.

Serving ideas

Serve these bang bang cauliflower wings as an appetizer at parties, game-day gatherings, or as a vegetarian main with rice and steamed greens.

The sriracha ranch dip is a perfect cooling counterpart to the spicy glaze. For a fun presentation, arrange the wings on a platter with extra scallions and sesame seeds scattered on top.

These wings are also great for meal prep—make a batch and pack them for lunch with a side of ranch dip. They can be served hot or at room temperature, making them versatile for picnics and potlucks. Pair them with a crisp beer or a citrusy soda to balance the heat.

Frequently asked questions

Can these cauliflower wings be made ahead of time?
Yes, you can bread the cauliflower florets up to a day in advance and keep them covered in the refrigerator. Bake them just before serving for the crispiest results. The bang bang sauce can also be made ahead and stored in the fridge for up to a week.
Why does the coating fall off the cauliflower?
The coating may fall off if the cauliflower is too wet or if the batter is too thin. Pat the florets dry thoroughly before dipping. Ensure the batter is thick enough to cling, and press the panko firmly onto each piece. Letting the breaded florets rest for 10 minutes before baking also helps the coating adhere.
Can the cauliflower wings be air-fried instead of baked?
Absolutely. Preheat the air fryer to 400°F (200°C) and arrange the breaded florets in a single layer in the basket. Air-fry for 15–18 minutes, shaking the basket halfway through, until golden and crispy. You may need to work in batches to avoid overcrowding.
How can the recipe be made gluten-free?
To make gluten-free cauliflower wings, use gluten-free all-purpose flour and gluten-free panko breadcrumbs. Check that your sweet chili sauce is gluten-free as well. The rest of the ingredients are naturally gluten-free.
What is the best way to reheat leftover wings?
Reheat leftover wings in a 400°F (200°C) oven for 5–7 minutes until hot and crispy. Avoid microwaving, as it will make the coating soggy. If the wings are frozen, reheat them in the oven for 10–12 minutes.

Crispy Bang Bang Cauliflower Wings with Sriracha Ranch

Prep 20 minCook 22 minTotal 42 minServes 4
Golden crispy cauliflower wings glazed with sweet chili sauce, garnished with scallions and sesame seeds.

Ingredients

  • 1 medium head cauliflower, cut into bite-sized florets
  • 100 g all-purpose flour
  • 40 g cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 150 ml milk
  • 100 g panko breadcrumbs
  • 80 g sweet chili sauce
  • 2 tbsp sriracha
  • 2 tbsp mayonnaise
  • 1 tbsp honey
  • Sliced scallions, for garnish, to taste
  • Toasted sesame seeds, for garnish, to taste

Instructions

  1. Cut the cauliflower into bite-sized florets. In a large bowl, whisk together the flour, cornstarch, garlic powder, onion powder, and milk until smooth. Place the panko breadcrumbs in a separate shallow dish. Dip each cauliflower floret into the batter, letting any excess drip off, then roll it in the panko, pressing gently to coat thoroughly. Set the breaded florets on a plate while you finish the rest.
  2. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper. Arrange the breaded cauliflower florets in a single layer on the prepared sheet. Bake for 22 minutes, turning halfway through, until the florets are golden brown and crispy. Alternatively, air-fry at 400°F (200°C) for 15–18 minutes, shaking the basket halfway.
  3. In a small bowl, whisk together the sweet chili sauce, sriracha, mayonnaise, and honey until smooth. Set aside. This sauce will be used to coat the hot cauliflower.
  4. Transfer the hot, crispy cauliflower florets to a large bowl. Pour the bang bang sauce over them and toss gently with tongs until every floret is evenly coated. The residual heat from the cauliflower will help the sauce cling and create a sticky glaze.
  5. Pile the glazed cauliflower wings onto a serving platter. Sprinkle generously with sliced scallions and toasted sesame seeds. Serve immediately with sriracha ranch dip on the side.
