Before you start

Before beginning, ensure your workspace is clean and dry. Remove your mozzarella sticks and ham from the refrigerator about ten minutes before assembly to make them easier to work with, as cold cheese can be more brittle.

Have your baking sheet lined with parchment paper ready to go so that you can transfer each roll directly from your workspace to the oven without delay.

Ingredients at a glance (3)
  • 8 sheets eggroll wrappers
  • 8 slices honey ham
  • 8 sticks mozzarella cheese

Instructions

Assembly Phase

  1. Prepare the Rolls
Lay an eggroll wrapper flat on your work surface. Place one slice of honey ham in the center, followed by a stick of mozzarella cheese. Fold the sides of the wrapper inward and roll tightly to seal the filling completely inside. Repeat this process until all eight rolls are prepared.
Look for Ensure the edges are tucked in tightly so the cheese does not leak during baking.
Tip Use a tiny bit of water on your finger to dampen the edges of the wrapper to help it stick shut.

At the end of the assembly phase, you should have eight neatly rolled cylinders. The wrappers should be tightly sealed at the seams, and the ham and cheese should be completely enclosed. Ensure all rolls are of a similar size to promote even baking during the next stage.

Baking Phase

  1. Bake the Rolls
Preheat your oven to 400°F (200°C). Arrange the prepared rolls on a baking sheet lined with parchment paper, ensuring they are not touching. Bake for approximately 12 to 15 minutes, or until the exterior is deeply golden and blistered, and the cheese is fully melted inside.
Look for The wrappers should be golden brown and crisp to the touch.
Tip Brush the tops of the rolls lightly with oil if you desire an even deeper golden color.

As the rolls bake, they will transform into a deep, appetizing golden color. You might see small, crispy bubbles forming on the surface of the wrappers.

The kitchen will fill with the savory aroma of toasted flour and warm, melted cheese, signaling they are nearing completion.

Finishing Phase

  1. Rest and Serve
Remove the baking sheet from the oven and allow the rolls to rest for 5 minutes before serving. This brief cooling period allows the cheese to set slightly, making it easier to handle while still maintaining that signature stretchy pull when broken open.
Look for The rolls should be firm enough to hold their shape but still warm enough to enjoy the melted filling.
Tip Serve these immediately on a rustic wooden board for the best presentation.

The final result should be a tray of perfectly golden, crisp rolls. When touched, the exterior should feel firm and crunchy. Allow them to sit for a few minutes; this ensures the cheese is perfectly molten but won't burn your mouth when you take the first bite.

Common mistakes

A common mistake is using too much water to seal the wrappers, which can lead to a soggy texture. Use only a tiny amount to dampen the edges.

Another error is overcrowding the baking sheet, which prevents the hot air from circulating around each roll, resulting in uneven browning and a less crisp texture. Always leave at least an inch of space between each roll.

How to tell it’s done

The rolls are finished when the eggroll wrappers are uniformly golden-brown, blistered, and crisp.

You will notice the cheese beginning to bulge slightly against the wrapper, which is a perfect indicator that it is fully melted and ready to enjoy. Let the rolls cool for at least five minutes to allow the cheese to stabilize.
