Before you start

Before beginning the assembly process, ensure that all ingredients are organized and ready on your workspace. Take the mozzarella sticks and egg roll wrappers out of the refrigerator about ten minutes prior to assembly to make them more pliable and easier to handle.

Have a small bowl of water nearby for sealing the edges of the wrappers. Ensure your oven rack is positioned in the center to allow for even heat circulation. Having a clean, flat surface, such as a large cutting board, will make the rolling process much more efficient and help achieve uniform results for every piece.

Ingredients at a glance (3)
  • 8 pieces egg roll wrappers
  • 8 slices deli ham
  • 8 sticks mozzarella cheese

Instructions

Assembly

  1. Assemble the rolls
Lay out the egg roll wrappers on a clean surface. Place one slice of ham in the center of each wrapper, followed by a mozzarella cheese stick. Fold the bottom corner of the wrapper over the filling, fold the sides inward, and roll tightly to seal the edge with a dab of water.
Look for The wrappers are tight and fully sealed.
Tip Ensure the edges are well moistened with water to prevent them from opening during the baking process.

The egg rolls should look neat and uniform, with all edges securely sealed to prevent leakage. The wrappers should feel taut around the filling. Check that no cheese is protruding from the seams, as this could cause it to melt out prematurely during the baking phase. If any rolls look loose, apply a tiny amount of extra water to the edge and press firmly to ensure a tight bond.

Baking

  1. Bake the rolls
Preheat your oven to 400°F (200°C). Arrange the prepared egg rolls on a parchment-lined baking sheet, leaving space between each. Bake the rolls until the exterior is golden brown and crispy.
Look for The rolls have a light golden color.
Tip Ensure the oven is fully preheated to achieve the best crispness on the wrapper.

As the rolls bake, they will begin to turn a light golden color and emit a savory aroma. The cheese inside will start to melt, creating a slight expansion. Check that the rolls are spaced evenly to ensure consistent browning.

If you notice any uneven browning, rotate the baking sheet halfway through the cooking time to ensure that every side of the roll achieves a uniform, crispy texture.

Finishing

  1. Finish and serve
Remove from the oven and let them rest for 5 minutes before serving to allow the cheese to set slightly, preventing it from running out immediately upon the first bite.
Look for The exterior is golden brown and sounds crispy when tapped.
Tip Watch the oven closely during the last few minutes to avoid burning the delicate wrappers.

The final product should be a deep, golden brown and sound hollow or crisp when lightly tapped. The cheese should be completely melted and gooey, visible if you carefully pull one of the rolls apart. Let the rolls sit on a cooling rack or the tray for five minutes; this rest period is critical for the internal temperature to stabilize and for the cheese to become manageable for eating.

Common mistakes

A common mistake is using too much water to seal the edges, which can lead to soggy spots that do not crisp properly in the oven. Use only a light dab of water to ensure the seal is secure without oversaturating the dough.

Another error is overcrowding the baking sheet; if the rolls are too close together, they will steam rather than crisp. Ensure there is at least one inch of space between each roll to allow hot air to circulate freely. Finally, ensure the oven is fully preheated to avoid a pale, dry exterior.

How to tell it’s done

The egg rolls are ready when the wrappers have achieved a deep, golden-brown color and feel firm and crispy to the touch. When gently pressed, the center should feel soft and yielding, indicating that the mozzarella has reached a fully melted, gooey state.

Because the ingredients are pre-cooked or do not require significant cooking, the primary indicator of doneness is the state of the wrapper and the temperature of the cheese inside. Allow them to rest for five minutes to prevent the molten cheese from burning your mouth.
