Tips for success

To prevent the cheese from leaking out during baking, try freezing the assembled rolls for about 10 to 15 minutes before putting them in the oven. This brief chilling period firms up the mozzarella, allowing the outer bread crust to toast and seal completely before the cheese has a chance to melt entirely and escape.

Additionally, always make sure the seams of the rolled bread are placed face-down on the baking sheet to keep them secure and prevent them from opening up.

If you want to elevate the flavor profile, feel free to experiment with different seasonings inside the rolls. Adding a pinch of garlic powder, onion powder, or smoked paprika alongside the Italian seasoning provides a wonderful savory boost.

You can also brush the outside of the rolls with a tiny amount of melted butter or olive oil before baking to achieve an even richer flavor and a more golden, glossy appearance that mimics deep-fried snacks.

Variations

  • Spicy Jalapeno: Add a thin slice of fresh jalapeno inside each roll alongside the ham and cheese for a spicy kick.
  • Pesto Ham and Cheese: Spread a thin layer of basil pesto onto the flattened bread before adding the ham and mozzarella.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days. Let cool completely before storing.
Freezer
Freeze assembled rolls on a tray, then transfer to a freezer bag for up to 2 months. Bake from frozen.
Reheat
Reheat in a 375°F (190°C) oven for 8 minutes or in an air fryer at 370°F (188°C) for 3-5 minutes until crispy.

Keep any leftover ham and cheese sticks in an airtight container in the refrigerator for up to 3 days. To maintain their signature crispy texture, avoid stacking them directly on top of each other while warm, as the steam will make the crust lose its crunch. Let them cool completely on a wire rack for no more than 2 hours before storing. Reheating them in an oven or air fryer is highly recommended over a microwave.

These sticks are incredibly freezer-friendly and make an excellent make-ahead snack. Assemble and roll the sticks as directed, then place them in a single layer on a parchment-lined baking sheet and freeze until solid, about 1 hour.

Once frozen, transfer them to a freezer-safe zip-top bag for up to 2 months. You can bake them directly from frozen at 400°F (204°C), adding about 3 to 5 extra minutes to the baking time.

Serving ideas

Serve these crispy sticks hot and fresh out of the oven while the cheese stretch is at its peak. They make a fantastic standalone appetizer, but pairing them with a variety of dipping sauces elevates the experience.

Classic honey mustard, marinara sauce, ranch dressing, or a simple garlic aioli complement the savory ham and melted mozzarella beautifully. Arrange them in a neat stack on a dark serving platter to make the golden crust and oozing cheese pop.

These sticks are perfect for game day gatherings, after-school snacks, or casual party platters. Because they are easy to hold and eat with one hand, they are a mess-free finger food that guests of all ages will enjoy. For a complete meal, serve them alongside a crisp green salad with a light vinaigrette or a warm bowl of tomato soup, which provides a wonderful acidic contrast to the rich, cheesy rolls.

Frequently asked questions

Can these cheese sticks be made in an air fryer?
Yes, cook them in a preheated air fryer at 375°F (190°C) for 8 to 10 minutes until golden and crispy.
Why did the cheese leak out during baking?
This usually happens if the bread is not rolled tightly enough, the seams are not sealed, or the rolls are placed seam-side up.
Can whole wheat bread be used instead of white bread?
Yes, but ensure the whole wheat bread is fresh and pliable so it rolls flat without cracking or tearing.

Ingredients

  • 8 slices white bread, crusts removed
  • 8 slices deli ham
  • 8 sticks mozzarella cheese sticks
  • 1 tsp Italian seasoning

Instructions

  1. Remove the crusts from the fresh white bread slices. Place each slice on a clean cutting board and use a rolling pin to roll them out completely flat and thin.
  2. Place a slice of deli ham on top of each flattened bread slice. Sprinkle a pinch of Italian seasoning over the ham, then place a mozzarella cheese stick at one end. Roll the bread up tightly around the filling, pressing the seam firmly to seal.
  3. Preheat the oven to 400°F (204°C). Line a large baking sheet with parchment paper. Place the assembled ham and cheese rolls seam-side down on the prepared baking sheet, leaving space between each roll.
  4. Bake the rolls in the preheated oven for 12 to 15 minutes. Watch for the bread to turn a beautiful golden brown and the cheese to become hot and melted. Remove from the oven and let rest for 2 minutes before serving.
