Tips for success
To achieve the ultimate crispy texture, ensure that you bake them on a middle oven rack to ensure even heat distribution above and below the baking sheet. If you want an even more golden finish, you can lightly mist the rolls with water halfway through the baking time to help them blister. Always monitor the baking process closely, as oven temperatures can vary and the thin wrappers can go from perfectly golden to overdone quickly.
Keep a damp paper towel or clean kitchen towel over the stack of egg roll wrappers while you assemble the sticks. These wrappers dry out remarkably fast when exposed to air, making them brittle and prone to cracking as you fold them.
If a wrapper does tear slightly during assembly, it is best to discard it and start fresh with a new one, as even a microscopic tear will allow the melting mozzarella to escape during the baking process.
Variations
- Spicy Jalapeño: Add a thin slice of fresh jalapeño or a pinch of red pepper flakes inside each roll before wrapping for a spicy kick.
- Garlic Parmesan: Dust the rolls with garlic powder and grated Parmesan cheese immediately after baking for an extra savory twist.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days, letting them cool first for under 2 hours.
- Freezer
- Freeze assembled, unbaked rolls on a tray, then transfer to a freezer bag for up to 2 months. Bake from frozen.
- Reheat
- Reheat in an oven or air fryer at 375°F (190°C) for 5 to 7 minutes until the wrapper is crispy and the cheese is melted.
Any leftover mozzarella sticks should be allowed to cool completely at room temperature for no more than two hours before being stored. Place the cooled rolls in a single layer inside an airtight container, using parchment paper to separate layers if stacking is necessary.
Store the container in the refrigerator for up to three days. Avoid storing them while still warm, as the trapped steam will create condensation inside the container, making the crispy wrappers soggy and unappealing.
These rolls can easily be assembled up to twenty-four hours in advance, which is perfect for stress-free entertaining. Simply roll the ham and cheese tightly in the wrappers, seal them securely, and place them on a tray lined with parchment paper.
Cover the tray tightly with plastic wrap to prevent the wrappers from drying out, and store it in the refrigerator. When ready to serve, simply sprinkle with the herb seasoning and bake as directed, adding two minutes to the baking time.
Serving ideas
Serve these crispy ham and cheese sticks hot, straight from the oven, to experience the maximum crunch and the most dramatic cheese pull. Arrange them in a rustic stack on a dark serving platter to make the golden-brown color and the oozing cheese stand out beautifully.
They make a fantastic standalone snack, but they also pair wonderfully with a variety of dipping sauces such as warm marinara, sweet honey mustard, or a creamy garlic aioli to complement the savory ham.
For a complete party spread, pair these warm appetizers with fresh, crisp elements like a green salad, vegetable crudités, or a fruit platter to balance the rich, cheesy flavors. They are best enjoyed within fifteen to twenty minutes of baking, as the cheese will begin to firm up as it cools. If serving to a crowd, keep them warm on a wire rack set inside a low-temperature oven until guests are ready to eat.
