Before you start

Before you begin assembling, organize your workspace to make the rolling process seamless. Clear a large, dry cutting board or clean countertop space. Set up your ingredients in an assembly line: the package of egg roll wrappers, the sliced ham, and the mozzarella cheese sticks. Preheating the oven fully is crucial, so turn it on before you start rolling.

Ingredients at a glance (3)
  • 8 egg roll wrappers
  • 8 slices deli sliced ham
  • 8 low-moisture mozzarella cheese sticks

Instructions

Oven Prep and Ham Wrapping

  1. Prepare the Oven and Baking Sheet
Preheat the oven to 400°F (204°C). Line a large baking sheet with parchment paper to prevent the cheese rolls from sticking during baking.
Look for The oven should be fully preheated before baking.
Tip Parchment paper makes cleanup incredibly easy and prevents any escaped cheese from burning.
  2. Wrap the Cheese in Ham
Lay a slice of deli ham flat on a clean cutting board. Place one low-moisture mozzarella cheese stick at one end of the ham slice. Roll the ham tightly around the cheese stick so that the cheese is fully encased, ensuring the ends are tucked or covered as much as possible.
Look for The ham should wrap snugly around the cheese stick.
Tip Wrapping the cheese in ham first helps prevent the cheese from leaking out too quickly.

At the end of this initial preparation phase, the oven is fully preheated to 400°F (204°C) and the baking sheet is lined and ready. Each mozzarella cheese stick is snugly wrapped in a slice of deli ham, with no cheese directly exposed.

The wrapped sticks should feel firm and compact, ready to be encased in the outer pastry wrappers. Keeping everything organized at this stage prevents the pastry wrappers from drying out later.

Assembly and Arrangement

  1. Assemble the Rolls
Place one egg roll wrapper on the work surface with one corner pointing toward you, forming a diamond shape. Position the ham-wrapped cheese stick horizontally in the center. Fold the bottom corner up over the filling, then fold in the left and right side corners tightly. Roll up tightly to seal the top corner.
Look for The wrapper should seal tightly with no open gaps.
Tip Keep a damp paper towel over the remaining wrappers to keep them from drying out.
  2. Arrange on the Baking Sheet
Place the assembled rolls seam-side down on the prepared baking sheet, leaving at least one inch of space between each roll to ensure even heat circulation.
Look for The rolls should be spaced evenly on the parchment paper.
Tip Placing them seam-side down prevents the wrappers from unrolling as they bake.

By the end of the assembly phase, all eight rolls are neatly shaped and sealed. The wrappers should be wrapped tightly around the ham and cheese with the sealed seams facing downward on the parchment paper. There should be no loose edges, ensuring they bake evenly.

Baking and Cooling

  1. Bake Until Blistered
Bake in the preheated oven at 400°F (204°C) for 10 to 12 minutes, turning them over halfway through the cooking time. Bake until the wrappers are beautifully golden brown, crispy, and starting to blister, and the cheese inside is hot and melted.
Look for The wrappers should be deeply golden and blistered.
Tip Watch closely during the last two minutes to prevent excessive cheese blowouts.
  2. Rest and Serve
Remove the baking sheet from the oven and let the hot rolls rest on the pan for 3 minutes. This brief rest allows the melted mozzarella cheese to set slightly so it does not completely run out when bitten into. Serve immediately while warm and crispy.
Look for The rolls will cool slightly and the wrappers will feel rigid.
Tip Serve these warm to enjoy the ultimate gooey stretch of the melted mozzarella.

Upon completing the baking phase, the rolls have turned a beautiful, deep golden brown with visible blistered bubbles across the surface. You may hear a gentle sizzling sound, and a tiny amount of melted cheese might start to peek out of the edges.

The wrappers will feel rigid and crispy to the touch, and letting them rest on the warm baking sheet for three minutes allows the cheese to set.

Common mistakes

One common mistake is rolling the wrappers too loosely, which allows air pockets to form inside. These air pockets expand during baking, causing the wrappers to burst and the cheese to leak out completely onto the pan.

Another error is neglecting to seal the edges tightly; loose edges will unravel in the oven. Finally, avoid crowding the baking sheet. If the rolls are placed too close together, steam will get trapped between them, resulting in soft, soggy sides instead of a uniform, blistered crunch.

How to tell it’s done

Determining doneness is visual and tactile. The rolls are done when the entire surface of the wrapper is golden brown and covered in small, crispy blisters. There should be no pale or soft spots remaining on the pastry.

The rolls will feel firm and rigid when lifted with tongs. While ham is already pre-cooked and mozzarella melts easily, the interior cheese should be completely melted and hot. A brief three-minute rest after baking is essential to let the cheese stabilize before serving.

Coming up in Part 3: common questions

  • Why did the cheese leak out of the wrappers during baking?
  • Can these be made in an air fryer instead of the oven?
  • Can spring roll wrappers be used instead of egg roll wrappers?
