Before you start

Before you start, preheat your oven to 400°F (200°C) to ensure it reaches temperature before the boat goes in. Have all your ingredients measured and ready, especially the meatballs and marinara, as the assembly process is quite fast once you begin.

Ensure your baking sheet is lined with parchment paper for easy cleanup, as the cheese will inevitably melt over the sides of the bread during the broiling phase.

Ingredients at a glance (8)
  • 1 loaf Italian bread, hollowed out
  • 4 tbsp roasted garlic herb butter
  • 6 slices sharp provolone cheese
  • 8 ground meat meatballs, juicy and cooked
  • 1 cup rich marinara sauce
  • 1 1/2 cups shredded low-moisture mozzarella
  • 2 tbsp grated Pecorino Romano
  • fresh basil ribbons for serving

Instructions

Preparing the bread

  1. Prepare the bread
Slice the top off the Italian loaf and scoop out the soft center to create a long hollow boat. Brush the inside of the bread thoroughly with the roasted garlic herb butter, ensuring every corner is covered for maximum flavor.
Look for The interior of the bread should be well-coated and fragrant with garlic.
Tip Save the removed bread pieces for making homemade breadcrumbs or croutons later.

The bread should be neatly hollowed, leaving enough of the outer crust to act as a container. The garlic butter should be evenly applied, coating the interior surface of the loaf thoroughly to ensure a rich, aromatic flavor profile throughout the finished dish.

Assembling the boat

  1. Assemble the boat
Line the bottom of the buttered loaf with the slices of sharp provolone cheese. Arrange the meatballs evenly inside the boat, then pour the marinara sauce over the meatballs to cover them completely.
Look for The meatballs should be snug within the loaf, nestled against the provolone.
Tip Ensure the marinara sauce is thick so it does not make the bread soggy.

The provolone slices should line the base completely, creating a barrier.

The meatballs should be arranged in a single, even row, and the marinara should be distributed evenly to ensure every meatball is coated, creating a beautiful and uniform look before it enters the oven.

Baking to perfection

  1. Bake and finish
Blanket the top of the meatballs with the shredded low-moisture mozzarella and Pecorino Romano. Bake at 400°F (200°C) for 12 minutes. Finish under the broiler for 2 minutes until the cheese is blistered and golden. Ensure the internal temperature of the meatballs reaches 160°F (71°C) before serving. Garnish with fresh basil ribbons.
Look for The cheese should be melted, bubbly, and have brown blistered spots.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Watch the broiler closely to prevent the bread edges from burning too quickly.

The cheese should be completely melted and show signs of browning. The bread crust should be golden and crispy. When you lift a slice, the cheese should stretch, and the meatballs should be steaming hot, indicating the dish is ready for serving and immediate enjoyment.

Common mistakes

A common mistake is using too much sauce, which can make the bread soggy and difficult to lift. Stick to the recommended amount to maintain the structural integrity of the boat.

Another error is neglecting to preheat the oven properly; if the oven is too cool, the bread will dry out before the cheese has a chance to properly melt and blister, ruining the texture.

How to tell it’s done

The dish is considered done when the cheese is fully melted and exhibits dark brown, blistered spots on the surface.

The internal temperature of the meatballs must reach at least 160°F (71°C) to ensure they are heated through safely. The bread should be golden brown and crisp to the touch, providing a solid base for the filling.

  • Ground meat: 160°F (71°C) in the thickest part
