Before you start

Before beginning, ensure that your chicken breasts are patted dry with paper towels; moisture on the surface of the meat can prevent the bacon from adhering properly and hinder the crisping process. Preheat your oven to 400°F (200°C) well in advance to ensure an even cooking environment from the moment the tray enters.

Have your metal tongs ready for easy handling and ensure your baking sheet is clean and ready for use. If using cold chicken directly from the refrigerator, allow it to sit on the counter for about 15 minutes before wrapping to promote more uniform cooking throughout the breast.

Ingredients at a glance (4)
  • 4 pieces boneless skinless chicken breasts
  • 8 slices bacon
  • 1 tbsp garlic powder
  • 1/2 cup grated parmesan cheese

Instructions

Preparation

  1. Season and Wrap the Chicken
Preheat the oven to 400°F (200°C). Season the chicken breasts evenly on all sides with the garlic powder. Wrap two slices of bacon around each chicken breast, ensuring they are tightly secured. Place the wrapped chicken onto a baking sheet, arranging them so they do not overlap to ensure even cooking.
Look for The bacon should be wrapped snugly around the chicken to prevent it from unraveling during the baking process.
Tip If the bacon is not staying in place, tuck the ends underneath the chicken breast on the bottom of the pan.

At this stage, the chicken breasts are seasoned and securely wrapped in bacon. They should be arranged neatly on the baking sheet with enough space between each piece to allow for heat circulation. The oven should be fully preheated, and the workspace should be clean and ready for the baking phase. Ensure the bacon ends are tucked securely underneath the chicken to prevent them from curling upwards during the cooking process.

Oven Roasting

  1. Bake to Perfection
Place the baking sheet into the preheated oven. Bake for approximately 25 to 30 minutes. Halfway through the cooking process, sprinkle the grated parmesan cheese over the top of the chicken breasts. Continue baking until the bacon is crispy and the chicken reaches an internal temperature of 165°F (74°C).
Look for The cheese will melt and brown slightly, while the bacon turns golden brown and crispy.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use a meat thermometer to ensure accuracy, inserting it into the thickest part of the chicken breast.

During this phase, the aroma of sizzling bacon and toasted garlic should fill the kitchen. The bacon will begin to render its fat, creating a golden appearance. Halfway through, the addition of the parmesan cheese will introduce a nutty scent.

Check that the cheese is melting evenly across the surface of the chicken. The chicken should be firm to the touch, and the bacon should look well-browned and crisp by the end of this duration.

Resting and Plating

  1. Rest and Serve
Remove the baking sheet from the oven once the chicken is fully cooked. Allow the chicken to rest on the pan for at least 5 minutes before serving. This resting period allows the juices to redistribute throughout the meat, ensuring each bite is moist and tender. Serve warm on dinner plates.
Look for The chicken should look firm and the juices should run clear when pierced with a fork.
Tip Transfer the chicken carefully using metal tongs to keep the bacon coating intact during plating.

Once removed from the oven, the chicken will be steaming and the bacon should be perfectly set. The resting period is crucial; the meat will firm up slightly as it absorbs the juices. Visually, the dish should look vibrant with a contrast between the crispy bacon and the melted parmesan. Check that the juices are clear and the chicken is fully cooked before moving to the plates for serving.

Common mistakes

A common mistake is using chicken breasts of significantly different sizes, which leads to some pieces being overcooked while others remain under-done. Try to select breasts of uniform thickness, or pound them to an even thickness using a meat mallet if necessary.

Another error is neglecting the resting phase; cutting into the chicken immediately upon removing it from the oven causes the juices to spill out, resulting in dry meat. Always resist the urge to skip this step. Finally, avoid overcrowding the pan, as this causes the chicken to steam rather than roast, preventing the bacon from achieving that desired crispy texture.

How to tell it’s done

To determine if the chicken is done, use a digital meat thermometer. Insert the probe into the thickest part of the chicken breast, away from any bones or the bacon wrapping. The internal temperature must reach at least 165°F (74°C).

The bacon should appear dark golden brown and crispy, not pale or flabby. The parmesan topping should be melted and show light brown spots. If the chicken is not quite at temperature, continue baking for a few more minutes, monitoring the bacon closely to ensure it does not burn.
